SPINACH SALAD WITH WARM BACON DRESSING
To make his Spinach Salad with Warm Bacon Dressing recipe from Good Eats on Food Network even better, Alton Brown tops it with sliced eggs and mushrooms.

Steps:
- Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
- Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
- While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
- Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
- Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.
SPINACH AND STRAWBERRY SALAD WITH WARM BACON VINAIGRETTE

- Put the spinach, strawberries and shallots in a large bowl.
- Toast the almonds in a small skillet over medium heat, stirring until golden brown, about 2 minutes. Transfer to a bowl or plate and set aside to cool.
- Put the bacon in a cold medium skillet; cook over medium heat, stirring occasionally, until browned and crisp, about 10 minutes. With a slotted spoon, transfer to a paper-towel-lined plate; leave the bacon fat in the pan.
- Take the skillet off the heat and stir in the mustard and sugar until the sugar is dissolved. Add the vinegar and then whisk in the olive oil. Season with 1/4 teaspoon salt and pepper to taste.
- Add the bacon and almonds to the salad, pour over the bacon vinaigrette, and toss to coat. Serve immediately.
WILTED SPINACH SALAD AND BACON VINAIGRETTE

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving about 1 tablespoon bacon drippings in the skillet. Crumble bacon.
- Heat reserved bacon drippings over medium heat; cook and stir onion in hot bacon drippings until slightly tender, 5 to 10 minutes.
- Combine vegetable oil, sugar, vinegar, ketchup, Worcestershire sauce, and salt together in a saucepan; bring to a boil. Reduce heat and simmer until sugar and salt are dissolved, about 5 minutes. Add bacon and onion and simmer over low heat until dressing is blended, 3 minutes.
- Mix spinach, mushrooms, and eggs together in a large bowl. Pour dressing over spinach mixture; toss to coat.

- Place spinach in large bowl or serving platter and set aside.
- Hard boil eggs. To do this, either cover with water in small pot, bring to a bowl, remove from heat, and let eggs sit in water for 15 minutes, then place in ice bath. Similarly, cook in an electric pressure cooker on low for 6 minutes, allow to sit at pressure for 6 minutes, then transfer to ice bath. Peel and slice eggs. Set aside.
- Fry the bacon in a skillet or Dutch oven. Start with medium high heat and gradually reduce the heat while stirring regularly as the bacon cooks to prevent burning. Continue cooking until all fat is rendered and bacon is crisp. Remove bacon with a slotted spoon and transfer to a paper towel lined plate. Reserve grease.
- If more than 3 Tablespoons of bacon grease remain, discard excess. Heat skillet with 3 Tablespoons of bacon grease over medium high heat and add mushrooms and shallots. Stir immediately to coat and then allow them to sear. Stir only once after they have begun to brown to prevent from burning and allow other side to brown. Remove sautéed mushrooms and shallot with a slotted spoon and transfer to a plate.
- Using same pan with residual bacon grease, reduce heat to the lowest setting. Whisk in vinegar, sugar, and dijon mustard. Slowly drizzle in olive oil while whisking continuously. Whisk in salt and pepper and add additional salt, if desired.
- To serve salad, toss spinach with a small amount of dressing in large bowl. Continue to add dressing until you've reached the desired amount (you may not use all of the dressing). Add sliced hard boiled eggs, cooked bacon pieces, and sauteed mushrooms and shallots. Toss to combine and serve warm.

- Cook bacon until crisp. Remove from pan and set aside.
- Drain most of the bacon fat from the pan leaving only two tablespoons.
- Cook the shallot in the bacon fat for one minute.
- Add the vinegar, sugar, mustard, oil, salt, pepper, and bring to a boil.
- Pour over spinach and toss to combine.

WARM SPINACH POTATO SALAD WITH BACON VINAIGRETTE
Steps:
- Steam the potatoes for about 10 minutes (until tender when pricked with a fork).
- While the potatoes are steaming, cook the bacon in a large skillet until crispy (about 8 - 10 minutes).
- When the potatoes are tender transfer to a medium bowl and cover with foil to keep warm.
- Remove the bacon and place on a paper towel to drain. Use a slotted spoon and leave the bacon grease in the pan.
- Add the shallot and garlic to the pan and cook in the bacon grease until softened (about 1 minute).
- Whisk in vinegar, mustard, sugar and salt. Cook until mixture is thickened and reduced by half, about 5 minutes.
- Remove the skillet from the heat. Taste and adjust seasonings with salt and pepper.
- Cut each fingerling potato crosswise at a forty-five degree angle into 1/2 inch thick slices.
- Add the potatoes to the skillet and toss to coat with dressing.
- Add the spinach, herbs, and cooked bacon and gently toss to coat with dressing.
- Taste and adjust seasonings once more with salt and pepper.
- Serve immediately.

- 1. Before you start your dressing have 4 ounces of salad ready in each bowl of salad that you intend to serve to your guests. Also have the hard boiled egg & Red Onion sliced and read to top your salad as soon as the dressing is done.
- 2. Diced and fry bacon very crispy in a large tall frying pan. Reserve render fat. let cool. Set Bacon aside.
- 3. In the same pan heat 1/4 cup bacon fat, 1/4 c EVOO and shallots. Saute' on medium heat until translucent. Add garlic and saute' for 1 minute.
- 4. Add Vinegar, Water, Brown Sugar, Black Pepper, Mustard, and Honey. Reduce until thick. use cornstarch slurry if needed. ( Saute' until no longer cloudy if slurry is needed.)
- 5. Right before Serving add the fried bacon pieces to the dressing. Quickly fold them in and serve.
- 6. Pour hot dressing of top of each of the salads. This recipe is enough to make about 6 small salads. Top with egg and onion then enjoy!

- For the dressing; in a bowl whisk together garlic, salt, Dijon, honey and balsamic vinegar; add in olive oil in a slow steady stream until emulsified.

- In a medium to large sauce pan, fill ¾ full with water and add the one tablespoon of white vinegar.
