Steps:
- Melt sugar, syrup and margarine in a jug for 2 minutes on high, mix well.
- Add flour, baking powder and cocoa powder, mix until smooth and well mixed, use a spoon, next add milk and egg.
- olace into well greased 8" microwave proof cake dish.
- Place on microwave rack or up turned plate, cook for 5 minutes on high.
- Do not over cook, there will be a slight damp spot around the edge, this will set during standing time of 5 minutes.
- Allow to cool before talking removing from dish.

CHERRY MARSHMALLOW MAGIC CAKE
Hey I live near Door County, how can I not have a few cherry recipes here? This cake is cool. The cherries sink to the bottom and the marshmallows melt and rise to the top for a glaze on this easy, tasty cake! *Note: I used a Betty Crocker Super Moist White cake mix for this. Other types of Cake mixes with pudding in the mix may require additional baking time. EDIT: The marshmallow flavor isn't really pronounced. It's the magic in how they rise up make everything come together.

Steps:
- Prepare cake mix. Beat cake mix, water, oil, and eggs in a large bowl on LOW speed for 30 seconds, then on MEDIUM speed for 2 minutes, scraping bowl occasionally. Set aside.
- Spray a 13x9x2-inch baking pan with vegetable spray. Preheat oven to 350°F.
- Sprinkle marshmallows evenly over the bottom of the pan. Pour batter over marshmallows.
- Spoon cherry filling evenly over cake batter.
- Bake in a preheated 350°F oven 30 to 40 minutes.
- Top of cake will be bubbly and marshmallows will be sticky.
- Let cool before serving.

- Preheat oven to 350-degrees F.
- Grease and flour a 10 x 13 inch cake pan.
- In a large bowl combine the first 6 ingredients (flour - salt).
- In a small bowl beat eggs and add the next 4 ingredients (coffee - vanilla).
- Stir wet ingredients into dry ingredients.
- Pour batter into a prepared pan.
- Bake in preheated oven for 40-50 minutes or until toothpick inserted in center comes out clean.
- Let cake cool while preparing frosting.
- To make frosting: melt the chocolate and butter in a doube boiler over simmering water or melt chocolate in microwave.
- Pour melted chocolate into a mixing bowl and beat in sugar alternately with the milk, beating until fluffy and then add the salt and vanilla, beating until desired consistency is reached (you may need to add more sugar).
- Spread frosting on cooled cake.

- Preheat oven to 350 degrees.
- Prepare cake mix according to box directions.
- Spread the marshmallows evenly over the bottom of a greased 9x13 pan.
- Spread the prepared cake mix over the marshmallows.
- Sprinkle the Jell-O powder over all.
- Spoon berries here & there over the Jell-O.
- Drizzle the water over all. DO NOT STIR!

- Preheat oven to 325 degrees Fahrenheit. Grease an 8 X 8 inch glass baking dish.
- Place egg whites in a medium bowl. Whisk to stiff peaks with an electric hand mixer. Set aside.
- In a large bowl, beat egg yolks with sugar until light, about 1-2 minutes. Add butter and vanilla extract and keep beating for another minute or two . Add flour and mix until fully incorporated.
- Slowly start adding the milk and beat until everything is well mixed ( can do with a regular whisk). Add the egg whites, a third at a time and fold them in using a spatula. Repeat until all egg whites are folded inches It is ok to have a bunch of white clumps.
- Pour batter into greased baking dish and bake for 50-70 minutes or until top is light golden brown and cake is only a little jiggly.
- Dust with confectioner's sugar after it has cooled. Serve with strawberries if desired.

Steps:
- Preheat oven to 160C/320F and line the base and sides of a 20x20cm/8x8inch square tin.
- Whisk the egg whites with the cream of tartar until stiff. Scoop out and place in a clean bowl.
- Using the same mixing bowl, whisk the egg yolk and brown sugar until paler in colour.
- Add the vanilla, cinnamon, nutmeg and pumpkin and whisk for 30 seconds until combined.
- Add the melted butter and whisk for 1 minute.
- Add flour and mix on slow to incorporate.
- Then add the evaporated milk in slowly to the mixture mixing.
- Add the egg whites in three lots folding in after each addition so that there are no white streaks or clouds of white.
- Pour into the prepared tin and bake for 60-70 minutes (until the centre of the cake is no longer wobbling). Cool completely. Serve with icing sugar on top.

We like this cake because it's a dark dense cake with a different texture than most chocolate cakes. Very good served with a dip of vanilla ice cream. I cut this from a magazine and have made it many times.

Steps:
- Preheat oven to 325 degrees.
- Grease a 12 cup Bundt Pan.
- In 4qt.
- microwave safe bowl, combine butter, syrup and candy bars, heat 5 1/2 minutes on medium (50% power) whisking once.
- Whisk until smooth.
- Whisk in sugar, then buttermilk, vanilla and eggs.
- Stir in flour, cocoa, salt and soda.
- Pour batter into pan.
- Bake 1 1/2 hours or until wooden pick inserted in center comes out almost clean.
- Cool in pan on wire rack for 10 minutes.
- Loosen cake from pan, invert onto rack to cool.
- After cake has completely cooled sprinkle with powdered sugar.
- (The cake is so rich it needs no icing).
