1/2 cup pistachios
1/3 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2/3 cup confectioners' sugar, plus more for dusting
2 large eggs
6 tablespoons unsalted butter, melted
12 to 24 medium cherries with stems

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with paper liners.
  • Pulse the pistachios, flour, baking powder and salt in a food processor until finely ground.
  • Whisk the confectioners' sugar and eggs in a large bowl, then whisk in the pistachio mixture until just combined. Stir in the melted butter until just incorporated.
  • Spoon 2 tablespoons batter into each muffin cup. Bake until slightly puffed and just beginning to set, about 8 minutes. Place 1 or 2 cherries in the center of each cake and continue baking until the cakes feel springy and the edges are lightly browned, 10 to 12 more minutes. Transfer to a rack and let cool 10 minutes in the pan, then remove from the pan to cool completely. Dust with confectioners' sugar.

3 1/4 cups Indian Maida or All purpose flour (/400 gms)
1/2 teaspoon Baking soda
2 1/2 teaspoons Baking Powder
1/2 teaspoon Salt
2 tablespoons Softened Unsalted Butter (/30 gms / 1/4 stick unsalted butter)
1 cup plus 2 teaspoons Honey (1 cup + 2 teaspoons/250 ml)
1 egg (room temperature, lightly beaten)
1 1/2 tablespoons orange zest (or finely grated orange rind)
3/4 cup orange juice (/ 180 ml/ freshly squeezed and no added sugar)
1 cup unsalted, shelled pistachio nuts (/125 gm/ chopped)

Steps:

  • Preheat the Oven to 170 C or 325 F. My oven heats up quite fast, so I light it up after I prepare the ingredients as below, and before I begin to mix the batter for the cake.

Greek Orange and Honey Syrup Cake with Yoghurt and Pistachios image

The sharp acidity of the orange in this cake combines beautifully with the sweetness of the Greek mountain honey. Because the cake is soaked in syrup, you can make it well ahead and just whip it out when you're ready to serve.

2 small oranges (weighing about 9 oz/250 g)
4½ oz (125 g) ground almonds
6 oz (175 g) well-softened butter, plus a little extra for greasing
6 oz (175 g) golden caster sugar
3 large eggs, beaten
9 oz (250 g) semolina
4½ level teaspoons baking powder
8 fl oz (225 ml) Greek mountain honey
5 tablespoons orange juice
1½ tablespoons lemon juice
1½ inch (4 cm) cinnamon stick
7 oz (200 g) Greek yoghurt
1½ oz (40 g) unsalted, shelled pistachio nuts
2 tablespoons Greek mountain honey

Steps:

  • First, cut the oranges into chunks, removing the pips. Then tip the whole lot - flesh, pith and zest - into a food processor and whiz it to a thick purée. Now all you do is simply put all the other cake ingredients into a large bowl and, provided the butter is really soft, just go in with an electric hand whisk and whisk everything together until you have a smooth, well-combined mixture. After that, fold in the orange purée, spoon the mixture into the prepared tin and smooth the top with the back of the spoon. Now place the cake on the centre shelf of the oven and bake it for an initial 10 minutes. Then lower the temperature to gas mark 4, 350°F (180°C) and bake for a further 40-45 minutes, or until it is golden brown, springy in the centre and has shrunk slightly from the sides of the tin. Meanwhile, make the syrup. To do this, simply combine the honey and 5 tablespoons water with the cinnamon stick in a small saucepan, place it over a gentle heat, bring it up to simmering point and let it simmer gently for about 5 minutes. After that, take the pan off the heat, remove the cinnamon stick and stir in the orange and lemon juices. Leave the cake aside to cool for 5 minutes, then remove it from the tin to a wire rack to cool, with a large plate underneath. Make a few holes all over it with a skewer before pouring the syrup over it. (It will look like there is far too much, but don't worry, the cake will absorb more than you think, and any that is not absorbed can be poured from the plate back over the cake.) Then, when the cake is absolutely cold, place it on a serving plate, cover it and leave it in a cool place overnight. Just before serving, spread the top of the cake with the Greek yoghurt, sprinkle over the pistachios, drizzle with the honey and serve cut into chunky slices. Note: This cake can also be made to serve 8-10, in an 8 inch (20 cm) tin, using 1 orange, 3 oz (75 g) ground almonds, 4 oz (110 g) each softened butter and sugar, 2 large eggs, 6 oz (175 g) semolina and 3 level teaspoons baking powder. For the syrup, use 5 fl oz (150 ml) honey, 3 tablespoons each water and orange juice, 1 tablespoon lemon juice and 1 inch (2.5 cm) cinnamon stick. For the topping, use 7 oz (200g) Greek yoghurt, 1 oz (25 g) pistachios and 1½ tablespoons honey. Bake the cake for 10 minutes at the higher temperature and 25-30 minutes at the lower temperature.

Mooncakes are pastries timed to the Mid-Autumn Festival, a holiday that celebrates the commencement of the harvest season. Traditionally, they showcased the best ingredients of a region, like sweet lotus seed paste in Guangdong, China, melon seeds in Hainan or pork in Yunnan, but you can stuff mooncakes with whatever you'd like, as long as the fillings are encased in dough and the exterior is aesthetically pleasing. In her forthcoming cookbook, "Mooncakes and Milkbread," the Chinese-American baker Kristina Cho has channeled that spirit by stuffing her mooncakes with blitzed pistachios and honey, a combination commonly found in baklava. The blend is enveloped in a classic Cantonese crust that uses lye water to bump up the pH of the dough, giving it a gentle amber hue, and golden syrup, which lends the cake a chewy, soft bite.

2 1/2 cups/300 grams all-purpose flour, plus more for dusting
1/2 cup/110 grams canola oil
1/2 cup/160 grams golden syrup (such as Lyle's Golden Syrup)
1 teaspoon lye water, sometimes known as kansui (see Tip)
1 large egg
1 1/2 cups/200 grams roasted unsalted shelled pistachios
1/4 cup/80 grams honey
2 tablespoons coconut oil
1 tablespoon cornstarch
1 teaspoon kosher salt (Diamond Crystal)

Steps:

  • Make the dough: In a large mixing bowl, combine the flour, oil, syrup and lye water. Using a flexible spatula, mix to form a shaggy dough, then knead with your hands to form a smooth, cohesive dough. Form the dough into a thick disk, wrap in plastic and let rest at room temperature for 45 minutes.
  • Heat oven to 350 degrees and line a large rimmed baking sheet with parchment paper.
  • Make the filling: In a food processor, pulse the pistachios until coarsely ground. Add the honey, coconut oil, cornstarch and salt, and pulse a few more times until the filling is a little crumbly but sticks together when pressed. Avoid overprocessing: You don't want to end up with pistachio butter. Divide the filling into 12 equal portions (each about 1 rounded tablespoon) and roll each piece into a ball.
  • Divide the disk of dough into 12 equal pieces. Roll each piece into a smooth ball. Working with one ball at a time and keeping the rest covered with plastic wrap, flatten a dough ball with your palm. Using a lightly floured rolling pin, roll into a 4-inch round (about 3/16-inch/ 1/2-centimeter thick), lightly dusting with flour if sticking. Gently lift the dough with a bench scraper or spatula, and center a ball of filling on the round. Bring the edges of the dough up around the filling. If the dough doesn't initially cover all filling, just pinch it together until it completely encases the filling. If there is excess, pinch it off. Pinch together any cracks that form and roll each round into a smooth ball.
  • As you form the balls, arrange them on the prepared baking sheet, spacing at least 2 inches apart. Lightly dust a 1.7-ounce/50-gram mooncake mold with flour. Place a ball in the mold and press the plunger down to apply pressure, but take care not to press too hard. Gently release from the mold and return to the baking sheet. Repeat with remaining dough and filling to form all 12 mooncakes. If you don't have a mooncake mold, skip this step and bake the mooncakes as balls.
  • Bake until the edges are light golden brown, 9 to 11 minutes. Remove the sheet from the oven and allow the cakes to cool on the sheet for 10 minutes. In a small bowl, mix together the egg and 2 tablespoons water. With a pastry brush, lightly coat the mooncakes with egg wash. Return to the oven and bake until darker golden brown, about 10 minutes. Transfer the baking sheet to a wire rack and allow the mooncakes to cool completely on the sheet. Before serving, store mooncakes in an airtight container or a resealable bag at room temperature for 1 to 2 days. This step is optional, but the extra time allows the crust to soften and become a little chewier. Mooncakes can be stored in an airtight container at room temperature or in the refrigerator for up to 5 days.
