1/4 cup sugar
1-1/2 teaspoons cornstarch
2 tablespoons vinegar
2 tablespoons orange juice

Steps:

  • Drain beets, reserving 2 tablespoons juice; set beets and juice aside. In a saucepan, combine sugar and cornstarch. Add vinegar, orange juice and beet juice; bring to a boil. Reduce heat and simmer for 3-4 minutes or until thickened. Add beets and orange zest; heat through.

2 large beets (about 1 1/2 lbs)
1 tablespoon butter
1 tablespoon grated orange rind
3/4 cup fresh orange juice
1 teaspoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper
1 1/2 tablespoons chopped almonds, , toasted

Steps:

  • Leaving root and 1 inch of stem on beets, trim tops and scrub with a brush.
  • Place in a large saucepan, cover with water.
  • Bring to boil, cover, reduce heat, and simmer for 1 hour or until tender.
  • Drain and rinse with cold water.
  • Drain, cool.
  • Trim off beet roots, rub off skins.
  • Cut beets into cubes to measure 3 1/2 cups.
  • Melt butter in a large nonstick frypan over medium heat.
  • Add beets, rind, and next 4 ingredients, (rind through pepper.) Bring to boil, cook until liquid is the consistency of a thin syrup (about 12 minutes), stirring occasionally.
  • Sprinkle with almonds.

  • In a saucepan, place raw beets and enough water to cover. Cook until tender, 15-20 minutes. Drain, reserving 1/4 cup liquid. Stir in beets, salt and butter. Simmer for 10 minutes.

Harvard beets are especially good when you start with fresh beets and bake them. Doesn't take much longer than boiling them and they're far more flavorful.

1 1/2 lbs medium-sized fresh beets
1/3 cup sugar
2 teaspoons cornstarch
1/4 cup cider vinegar
1/4 cup water
1 tablespoon unsalted butter
salt

Steps:

  • Trim all but 1" off the stem and root ends of the beets, do not wash, do not peel; remove any dirt with a paper towel; place in a baking pan and seal tightly with aluminum foil; bake at 400° for 1 hour.
  • When beets are cool enough to handle, remove roots, stems and skins; cut into 1/4" dice, there should be about 3 cups; set aside.
  • Mix sugar, cornstarch, vinegar and water in a saucepan and bring to a boil, whisking; whisk until thickened, about 30 seconds; remove from heat and whisk in butter.
  • Add the beets and heat through; add salt to taste; serve at room temperature.

I got this recipe from an old cookbook from 1952. I love harvard beets and this is my favorite beet recipe. It is fast and easy to make. In the winter time you can use a can of diced beets, if you don't have fresh available. Also sometimes I just cook the beets whole, then dice or slice them after "slipping" them in cold water. Slipping beets is a good childhood memory that me and my little sister used to share together.

water, 3/4-inch deep in pan
2 teaspoons cornstarch
1/4 cup sugar
1/4 cup beet juice, from beets (or water)

  • Cook in covered pan until tender.
  • Mix cornstarch and sugar.

1 teaspoon salt

  • In a large saucepan, place beets, vinegar and salt cover with water. Over high heat, bring to a boil. Reduce heat to medium-low, cover and simmer for 45 to 60 minutes or until beets are fork tender. Remove from heat and discard cooking liquid cool. Peel and slice beets. Return to saucepan.In a small saucepan, mix cornstarch and brown sugar. Stir in orange juice and lemon juice.
