1 orange pound cake, recipe follows
1 cup good raspberry jam
2 half-pints fresh raspberries
Orange cream, recipe follows
1 cup (1/2 pint) cold heavy cream
2 tablespoons sugar
1/2 teaspoon pure vanilla extract
1/2 pound (2 sticks) unsalted butter at room temperature
2 1/2 cups sugar, divided
4 extra-large eggs, at room temperature
1/3 cup grated orange zest (6 oranges)
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup freshly squeezed orange juice, divided
3/4 cup buttermilk at room temperature
1 teaspoon pure vanilla extract
1 1/2 cups milk
1 teaspoon grated orange zest (1 orange)
5 extra-large egg yolks, at room temperature
1/2 cup sugar
2 tablespoons sifted cornstarch
1/2 teaspoon pure vanilla extract
1/2 teaspoon Grand Marnier liqueur
1 tablespoon unsalted butter
1 tablespoon heavy cream

Steps:

  • Cut the pound cake into 9 (3/4-inch) slices and spread each slice on 1 side with raspberry jam, using all the jam. Set aside.
  • Place a layer of cake, jam side up, in the bottom of a 2 1/2 to 3-quart glass serving bowl, cutting the pieces to fit. Top with a layer of raspberries and orange cream. Repeat the layers of cake, raspberries, and orange cream, ending with a third layer of cake, jam side down, and raspberries.
  • Whip the cream in the bowl of an electric mixer fitted with the whisk attachment. When it starts to thicken, add the sugar and vanilla and continue to whip until it forms stiff peaks. Decorate the trifle with whipped cream. The trifle can sit for awhile at room temperature.
  • Heat the oven to 350 degrees F. Grease and flour 2 (8 1/2 by 4 1/2 by 2 1/2-inch loaf pans. Line the bottoms with parchment paper.
  • Cream the butter and 2 cups of the granulated sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. With the mixer on medium speed, beat in the eggs, 1 at a time, and the orange zest.
  • In a large bowl, sift together the flour, baking powder, baking soda, and salt. In another bowl, combine 1/4 cup of the orange juice, the buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.
  • While the cakes bake, cook the remaining 1/2 cup of granulated sugar with remaining 1/2 cup orange juice in a small saucepan over low heat until the sugar dissolves. When the cakes are done, let them cool for 10 minutes. Take them out of the pans and place them on a baking rack set over a tray. Spoon the orange syrup over the cakes and allow the cakes to cool completely.
  • Combine the milk and orange zest in a medium stainless steel saucepan over medium heat and bring almost to a boil. Remove from the heat.
  • Beat the egg yolks and sugar on medium-high speed in the bowl of an electric mixer fitted with the paddle attachment until pale and thick, about 5 minutes. With the mixer on low speed, sprinkle on the cornstarch. Beat on medium-low speed until combined, scraping down the bowl with a rubber spatula.
  • With the mixer on low speed, slowly pour the hot milk mixture into the egg mixture. Pour the mixture back into the pan. Cook over low heat, stirring constantly, until the mixture thickens, about 5 to 7 minutes. (Pay attention because it will thicken and then quickly become orange scrambled eggs!)
  • Immediately, pour the mixture through a fine sieve into a large bowl. Stir in the vanilla, Grand Marnier, butter, and heavy cream. Place plastic wrap directly on the custard and refrigerate until cold.

ZABAGLIONE AND BERRY TRIFLE

1 teaspoon vanilla
1 cup (198 grams) granulated sugar
1 cup (120 grams) all-purpose flour
1/4 teaspoon fine sea salt
1/2 cup (56 grams) confectioners' sugar, to finish
1/2 cup (99 grams) granulated sugar
1 tablespoon cornstarch
7 large egg yolks
1/3 cup (78 milliliters) sweet Marsala wine
Pinch of fine sea salt
1 cup (236 milliliters) very cold heavy cream
Coffee Simple Syrup, recipe follows
1 quart strawberries, hulled
1/2 cup Dutch-process cocoa powder
1 pint raspberries
1/2 cup brewed coffee
1/2 cup sugar

Steps:

  • For the sponge: Preheat the oven to 350 degrees F. Trace two 8-inch circles on 2 baking sheet-sized pieces of parchment with a marker. Flip them upside down onto 2 baking sheets. Set aside.
  • Into the bowl of a stand mixer fitted with the whisk attachment, add the egg yolks and whisk on high until lightened in color. Slowly add the vanilla and 1/4 cup of the granulated sugar and continue whisking until the mixture triples in volume and ribbons when the whisk is lifted from the batter, leaving a trail that takes a few seconds to dissolve back into the mixture, about 5 minutes. Sift the flour over the mixture and fold in to incorporate until there are no pockets of flour left.
  • Transfer the egg yolk mixture to a small bowl and clean the mixing bowl and whisk very well. Add the egg whites to the bowl and mix on high until just foamy. Add the salt and then slowly add the remaining 3/4 cup granulated sugar, whisking on high until the meringue holds stiff, glossy peaks, 3 to 5 minutes.
  • Transfer a scant cup of the meringue to the egg yolk mixture and fold to combine and lighten. Add the remaining whites to the egg yolk mixture and gently fold into the batter until no white streaks remain. Transfer the batter to a large pastry bag fitted with a medium open tip (Ateco 806) and pipe 4 circles onto the parchment using the traced circles as guides, starting from the middle and spiraling out. Sift an even layer of confectioners' sugar over the batter.
  • Bake until the layers are gold brown and springy, 20 to 25 minutes. Let cool completely, then trim the layers using an 8-inch cake pan as a guide and a sharp knife to make the layers perfectly round.
  • For the filling: Whisk together the granulated sugar and cornstarch in a small bowl to combine. In a heatsafe bowl, whisk together the yolks, Marsala, salt and sugar-cornstarch mixture to combine. Place the bowl over a saucepan of simmering water, making sure the water does not touch the bottom of the bowl (otherwise you could scorch the eggs). Heat, whisking constantly, until the sugar is completely dissolved, the mixture thickens to the point that it coats the back of a wooden spoon and a candy thermometer inserted in the center reads 170 degrees F, 5 to 10 minutes. Remove from the heat and allow to cool to room temperature.
  • Whip the cream in a bowl with a mixer to stiff peaks. Fold together the whipped cream and cooled egg yolk mixture (zabaglione). Transfer the cream filling to a pastry bag with a large open tip.
  • For the trifle: Place a sponge round in the bottom of a trifle dish. Using a pastry brush, brush a generous layer of the Coffee Simple Syrup onto the sponge layer. Slice half of the strawberries in half and place them cut-side out around the sides of the trifle dish. Then place a few whole strawberries in the center. Pipe an even layer of the cream filling over the layer and sift an even layer of cocoa powder on top of that. Top with another sponge round, brush with the coffee syrup and then top evenly with the raspberries. Pipe the cream filling on top of the raspberries and dust with cocoa powder. Top with another sponge, brush with coffee syrup and spread with a thin even layer of the cream filling. Dust with cocoa powder and decorate the top with more cream filling and the remaining berries. (Reserve the remaining sponge for another use.)
  • Put the coffee and sugar in a saucepan and heat, stirring, until the sugar is dissolved. Remove from the heat and let cool.

RASPBERRY CAKE WITH MARSALA, CRèME FRAîCHE, AND RASPBERRIES

1/4 cup fresh orange juice
14 tablespoons (1 3/4 sticks) unsalted butter, room temperature
1 cup plus 4 tablespoons sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon grated lemon peel
4 cups fresh raspberries
2 cups crème fraîche or sour cream

Steps:

  • Position rack in center of oven and preheat to 400°F. Butter 10-inch-diameter springform pan. Whisk first 5 ingredients in medium bowl to blend. Combine Marsala and orange juice in small bowl. Beat 12 tablespoons butter and 1 cup sugar in large bowl until well blended. Beat in eggs, vanilla, and lemon peel. Beat in Marsala mixture in 2 additions alternately with flour mixture in 3 additions. Transfer batter to prepared pan. Sprinkle with 1 1/2 cups raspberries.
  • Bake cake until top is gently set, about 20 minutes. Reduce oven temperature to 375°F. Dot top of cake with 2 tablespoons butter and sprinkle with 2 tablespoons sugar. Continue baking until tester inserted into center of cake comes out clean, about 15 minutes. Cool in pan on rack. Release pan sides; transfer cake to platter. Cool to room temperature.
  • Mix crème fraîche and 2 tablespoons sugar in small bowl. (Cake and crème fraîche mixture can be made 8 hours ahead. Let cake stand at room temperature. Cover and chill crème fraîche mixture.) Cut cake into wedges. Top each with dollop of crème fraîche and fresh raspberries and serve.

VANILLA RASPBERRY TRIFLE

My mom used to make this traditional dessert every year at Christmas time. Its very simple to make and yummy. I have made a few changes to it due in large to a lack of birds custard mix.

1 orange, zested

Steps:

  • Line the bottom of a deep glass dish with 1/2 the ladyfingers. Pour 1/2 the rum over ladyfingers; top with 1/2 the raspberries.
  • Beat cold milk, pudding mix, and orange zest together in a bowl using an electric mixer until smooth, about 2 minutes. Spoon 1/2 the pudding over raspberry layer. Arrange the remaining lady fingers atop pudding layer and around sides of bowl. Pour remaining rum over ladyfingers; top with remaining raspberries and pudding. Refrigerate trifle for flavors to set, about 1 hour.
  • Beat heavy cream in a bowl using an electric mixer on medium-low speed until fluffy. Spoon whipped cream over trifle and sprinkle with almonds.

For mocha pastry cream
2 cups whole milk
1 tablespoon instant espresso powder
1 vanilla bean, split lengthwise
6 large egg yolks
3/4 cup sugar
1/4 cup cornstarch
3 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1 3/4 cups chilled whipping cream
For assembly
2 purchased 8-inch-diameter, 1- to 1 1/4-inch-thick round sponge cakes, each cut horizontally in half
3/4 cup raspberry preserves (about 10 ounces)
2 cups fresh or frozen raspberries (unthawed)
2 cups fresh raspberries
2 tablespoons red currant jelly, melted with 1 tablespoon water
1 1/2 teaspoons sugar
Red currant bunches or red grape clusters (optional)

Steps:

  • Make syrup:
  • Combine 3 tablespoons water and sugar in small saucepan. Bring to boil over medium-high heat, stirring until sugar dissolves. Remove from heat. Mix in Cognac. Cool.
  • Make mocha pastry cream:
  • Combine milk and espresso powder in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to simmer. Remove from heat. Discard bean. Using electric mixer, beat yolks and sugar in large bowl until very thick, about 3 minutes. Sift in cornstarch; beat to blend well. Gradually beat hot milk mixture into egg mixture. Return mixture to saucepan. Whisk over medium heat until mixture comes to boil, about 3 minutes. Remove from heat. Add chocolate. Whisk until chocolate melts and mixture is smooth. Transfer to medium bowl. Place plastic wrap directly onto surface of pastry cream. Refrigerate until cold, about 3 hours. (Can be made 2 days ahead. Cover syrup and store at room temperature. Keep pastry cream refrigerated.)
  • Whisk cold pastry cream until smooth. Using electric mixer, beat whipping cream in large bowl until medium-stiff peaks form. Transfer 1 1/2 cups whipped cream to another medium bowl; set aside to use as topping. Stir 1/3 of remaining whipped cream from large bowl into pastry cream to lighten. Fold remaining whipped cream from large bowl into pastry cream in 2 additions.
  • Assemble:
  • Place 1 cake layer in bottom of 8-inch-diameter, 3-quart trifle bowl. Brush 1/4 of syrup over cake. Spread 3 tablespoons raspberry preserves over cake. Spread 1 cup pastry cream over. Arrange 1/2 cup fresh or frozen raspberries atop pastry cream. Repeat layering 3 times with remaining cake layers, syrup, preserves, pastry cream and 1 1/2 cups fresh or frozen raspberries.
  • Spread reserved 1 1/2 cups whipped cream over trifle. Top whipped cream with 2 cups fresh raspberries. Lightly brush red currant jelly mixture over raspberries. Sprinkle with 1 1/2 teaspoons sugar. Garnish with red currant bunches or grape clusters, if desired. Cover and refrigerate at least 3 hours. (Can be prepared 8 hours ahead. Keep refrigerated.)

1/2 cup plus 2 tablespoons sugar
1/4 cup fresh lemon juice
1 cup seedless raspberry jam
4 cups raspberries
2 cups heavy cream
1 1/2 pounds favorite pound cake

Steps:

  • In a small saucepan, bring 1/2 cup sugar, 1/4 cup water, and lemon juice to a boil, stirring to dissolve sugar, 1 to 2 minutes. Let cool.
  • In a small bowl, combine jam with 3 cups raspberries, mashing slightly. In a large bowl, whip cream and 2 tablespoons sugar to stiff peaks.
  • Slice pound cake 3/4 inch thick; brush both sides of slices with lemon syrup.
  • Fit 1/3 of slices snugly in the bottom of a 4-quart trifle dish or other glass bowl, trimming edges if necessary. Gently spread top of layer with 1/3 of raspberry mixture, and then 1/3 of whipped cream. Repeat to make two more layers; garnish with remaining cup raspberries. 2/3 cup dry Marsala

3 12-ounce packages frozen unsweetened raspberries, thawed, drained
3 tablespoons plus 3/4 cup sugar
9 large egg yolks
1 cup dry Marsala
1 1/2 cups chilled whipping cream
1 1/2-pint basket fresh raspberries

Steps:

  • For Cake:
  • Butter and flour 13x9x2-inch baking pan. Prepare cake according to package instructions, substituting 2/3 cup Marsala for water. Bake cake and cool completely. Cut cake crosswise into thirds. Cut cake lengthwise into 1-inch-wide slices. Set aside.
  • For filling:
  • Mix thawed frozen raspberries and 3 tablespoons sugar in large bowl. Set aside.
  • Using handheld mixer, beat egg yolks and remaining 3/4 cup sugar in large metal bowl until well blended. Beat in 1 cup dry Marsala. Place bowl over saucepan of simmering water (do not let bottom of bowl touch water). Beat until mixture triples in volume and registers 160°F on thermometer, about 6 minutes. Remove bowl from over water. Cool yolk mixture to room temperature, whisking occasionally.
  • Using electric mixer with clean dry beaters, beat 3/4 cup cream in large bowl until stiff peaks form. Fold whipped cream into yolk mixture.
  • Arrange enough cake slices in 12-cup trifle dish to cover bottom. Spoon 1 cup of raspberry mixture over cake, allowing some to show at sides of bowl. Pour 1 1/2 cups filling over; smooth top. Arrange enough cakes slices over filling to cover completely. Spread 1 cup raspberry mixture over, allowing some to show at sides. Pour 1 1/2 cups filling over. Arrange enough cake slices over filling to cover completely. Spread remaining raspberry mixture over. Pour remaining filling over; smooth top. Cover and refrigerate trifle at least 4 hours or overnight.

3/4 cup confectioners' sugar
3/4 teaspoon imitation rum extract
3 tablespoons water
1/2 cup raspberry jam
1 frozen pound cake (12-ounce), thawed and cut into quarter-size cubes
3 containers (4 ounces each) refrigerated prepared vanilla pudding
Fresh raspberries, for garnish

Steps:

  • Heat butter in a large glass bowl in microwave on high until melted, about 30 seconds. Whisk in confectioners' sugar, rum extract, and water, stirring to form a smooth sauce. Heat jam in a small glass bowl in microwave on high until just melted, about 30 seconds. In six small bowls or wineglasses, evenly distribute pound cake cubes. Pack cubes down slightly. Drizzle rum sauce and jam evenly over each. Spoon 3 tablespoons of pudding evenly over each. Refrigerate for 45 minutes. Garnish with raspberries and serve.

A mix of classic Middle Eastern flavours that come together very simply in this pretty trifle

2 cubes Turkish delight , optional
500g pot good-quality vanilla custard
½ a 350g/12oz bought madeira loaf
300g pack raspberry
juice 1 orange
200ml tub crème fraîche (use reduced-fat if you like)
handful pistachios , roughly chopped

Steps:

  • If you don't want to add the Turkish delight, move on to step 2. Snip the Turkish delight into pieces with kitchen scissors into a large bowl and add a few tablespoons of water. Microwave on High for 1 min, stirring after 30 secs, or until dissolved and smooth. Tip in the custard and stir together.
  • Break the cake into rough chunks and divide between 6 sundae dishes or serving glasses. Mix half of the raspberries with the orange juice in a bowl and crush gently with a fork to break the fruit up slightly. Spoon over the cake layer. Cover with the custard, then leave to cool in the fridge for at least 30 mins. Can be made up to 1 day ahead. To serve, top the trifles with a dollop of crème fraîche, the remaining raspberries and a sprinkling of pistachios.

A Donna Hay recipe I found in our Sunday Herald. I love simple berry desserts like this so am saving it to try soon.

1 cup limoncello
1 cup water
2 tablespoons caster sugar
250 g mascarpone
600 g sour cream
1/2 cup icing sugar, sifted, plus extra
2 tablespoons lemon zest, finely grated
34 lady fingers
500 g raspberries

Steps:

  • Place the limoncello, water and caster sugar in a small saucepan over low heat and stir untilt he sugar has dissolved. Set aside to cool.
  • Place the mascarpone in a bowl and stir until smooth; add the sour cream, icing sugar and lemon rind and whisk until smooth.
  • Dip the fingers into the liqueur mixture and use to line the base and sides of a 3-litre capacity glass bowl.
  • Top the fingers with half the raspberries, spoon over the mascarpone mixture then top with the remaining raspberries.
  • Dust with extra icing sugar to serve.

1 18 1/2 oz package Duncan Hines Moist Deluxe Butter Recipe Golden cake mix
2/3 c dry Marsala
Filling:
3 12 oz packages frozen unsweetened raspberries, thawed, drained
3 T plus 3/4 c sugar
9 large egg yolks
1 c dry Marsala
1 1/2 c chilled whipping cream
1 1/2 pint basket fresh raspberries

Steps:

  • Cake: Butter and flour 13x9x2 in baking pan. Prepare cake according to package instructions, substituting 2/3 c Marsala for water. Bake cake and cool completely. Cut cake crosswise into thirds. Cut cake lengthwise into 1 in wide slices. Set aside. Filling: Mix thawed frozen raspberries and 3 T sugar in large bowl. Set aside. Using handheld mixer, beat egg yolks and remaining 3/4 c sugar in large metal bowl until well blended. Beat in 1 c dry Marsala. Place bowl over saucepan of simmering water (do not let bottom of bowl touch water). Beat until mixture triples in volume and registers 160 on thermometer, about 6 min. Remove bowl from over water. Cool yolk mixture to room temperature, whisking occasionally. Using electric mixer with clean dry beaters, beat 3/4 c cream in large bowl until stiff peaks form. Fold whipped cream into yolk mixture. Arrange enough cake slices in 12 c trifle dish to cover bottom. spoon 1 c of raspberry mixture over cake, allowing some to show at sides of bowl. Pour 1 1/2 c filling over; smooth top. 8 large egg yolks
6 tablespoons granulated sugar
1 pinch salt
1/4 cup Grand Marnier
1/2 cup fresh squeezed orange juice
1 cup heavy whipping cream
frozen raspberries, preferably unsweetened, 1 package
6 tablespoons granulated sugar
1 pinch salt
1 1/2 pints fresh raspberries
1 vanilla genoise layer cake (see my Vanilla Genoise Cake)

Steps:

  • Make the sabayon sauce: fill a large bowl 1/3 full of ice water; set aside.
  • Fill a medium saucepan 1/3 full of water and bring it to a boil.
  • In a medium stainless steel mixing bowl, whisk the yolks, 1/2 cup sugar and salt together.
  • Whisk in the Gran Marnier and orange juice.
  • Set the bowl on the saucepan of boiling water, making sure that the water doesn't touch the bottom of the bowl.
  • Whisk the mixture constantly until thick, 2-3 minutes.
  • Place the bowl in the bowl of ice water and continue to whisk until cool.
  • (2-3 minutes).
  • Whip the cream in your mixer on high speed until thick and forms soft peaks.
  • Fold gently into the Gran Marnier mixture.
  • Place a piece of plastic wrap directly on the surface and refrigerate.
  • Make the raspberry sauce: Put the frozen raspberries, the salt and sugar in a blender and puree on high until pureed.
  • Press through a fine mesh strainer.
  • Set aside.
  • (If you can't find unsweetened frozen raspberries, use the sweetened ones but don't add any sugar until after you puree them, then taste, then add sugar to taste).
  • Using a serrated knife, cut the cake into 4 even rectangles.
  • Slice each piece in half horizontally, making 8 pieces total.
  • ASSEMBLY: Reserve 1/2 cup of the rasberry puree, and 1/2 pint of the fresh raspberries for garnish.
  • Place one-quarter of the remaining raspberry sauce in the bottom of the baking pan.
  • Top with a little more than a cup of the Grand Marnier Sabayon.
  • Cover the sabayon with a layer of cake (the cake doesn't have to be in one piece, it can be pieced together, as long as it covers the bottom of the pan).
  • On the next layer, spread the cake with sauce, then another layer of sabayon, then sprinkle on 1/2 pint of the raspberries, then another layer of cake.
  • Do a third layer the same as the second; sauce, sabayon, fresh raspberries, then cake.
  • On top spread the last of the sauce, then the last of the sabayon.
  • There will be 3 layers of cake total.
  • Cover with plastic directly on top of the surface of the sabayon, and refrigerate for at least 6 hours before serving.
  • To serve, cut into squares with a sharp knife.
  • Garnish with the reserved sauce and raspberries.
  • NOTE: This dessert freezes particularly well so it can be made a week or so ahead of time, take out of freezer a couple of hours before dinner, and it'll be fine in time for dessert.
  • NOTE 2: I have also baked the genoise in a square cake pan, and sliced it into layers.
  • Whatever works.
  • The cake part isn't really going to show, so it doesn't matter, as long as you have enough cake to cover the pan for 3 thinnish layers.
  • NOTE 3: You can sub in blueberries, strawberries, cherries, or whatever kind of berry suit your fancy.
  • And it may seem rich, but it is very light tasting.

3/4 cup raspberry preserves
2 10-ounce packages frozen raspberries in syrup, thawed, drained, 1/4 cup syrup reserved
1 16-ounce frozen pound cake, thawed, crust trimmed, cut into 1/2-inch-thick slices
3/4 cup cream Sherry
1 1/4 cups chilled whipping cream

Steps:

  • Prepare custard mix according to package instructions. Place in freezer until cold, stirring often, about 15 minutes.
  • Mix preserves and 1/4 cup reserved raspberry syrup in small bowl. Line bottom of 8-inch-diameter glass bowl that is 4 to 5 inches deep (about 15-cup capacity) with layer of cake, trimming to fit. Brush 1/4 cup Sherry over. Spread 1/4 cup preserve mixture over. Reserve 12 raspberries. Sprinkle 1/3 cup raspberries over preserves, then pour 1 cup custard over. Repeat layering 2 more times. 1 cup white sugar
¼ cup lemon juice
1 large lemon, zested
3 (6 ounce) containers fresh raspberries
1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed
4 tablespoons lemon curd
4 cups prepared vanilla pudding
1 (16 ounce) prepared pound cake, cut into cubes

Steps:

  • Stir sugar and water for simple syrup together in a saucepan over medium heat until sugar is dissolved. Let cool, about 20 minutes, then stir in lemon juice and lemon zest.
  • Toss raspberries in a bowl with 2 tablespoons simple syrup. Set aside about 3 ounces berries for top of trifle.
  • Gently fold together whipped topping and lemon curd. Add to the vanilla pudding and fold until incorporated.
  • In a large trifle bowl, layer 1/3 of the pound cake cubes. Spoon a couple teaspoons simple syrup over the cake layer, then add 1/3 of the berries and 1/3 of the pudding mixture. Repeat layers twice more, then scatter reserved berries on top.

  • Cut cake crosswise into 8 pieces. Cut each piece into 3 strips. Line bottom of 3-quart trifle bowl with 8 cake strips, trimming to fit. I found this recipe in a magazine in a dr's office years ago, & have made it for every special occasion since. I often vary the recipe & use fruit cocktail, raspberries & canned peaches, etc. It is my dh's favorite dessert & is always gone quickly at family gatherings.

2 cans mandarin orange segments (reserve juice)

3 tablespoons cornstarch
1/4 cup sugar
3 cups milk
4 egg yolks, beaten
2 teaspoons vanilla extract
1 loaf (1 pound) frozen pound cake, thawed
3/4 cup raspberry jam
3 cups fresh or frozen unsweetened raspberries, thawed and drained
1 cup heavy whipping cream
2 tablespoons confectioners' sugar
2 tablespoons sliced almonds, toasted
Fresh raspberries, optional

Steps:

  • In a large saucepan, combine the sugar and cornstarch. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. , Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly.
