- Preheat oven to at 350°. Tie legs of each hen together; turn wing tips under backs. Place on a greased rack in a roasting pan. Brush with butter; sprinkle with salt and pepper. Bake, uncovered, for 1 hour., Meanwhile, in a saucepan, combine the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 15 minutes. Spoon over hens. Bake until a thermometer reads 170°, about 15 minutes longer.

ORANGE-CRANBERRY GLAZED CORNISH HENS

- Position racks in the upper and lower thirds of the oven and preheat to 475 degrees F. Cut the hens in half with kitchen shears, removing the backbone and cutting through the middle of the breastbone. Divide the onion, oranges and rosemary sprigs between 2 rimmed baking sheets. Arrange the hens skin-side up on the baking sheets and season all over with salt and pepper. Set aside at room temperature, 30 minutes.
- Meanwhile, combine the orange juice, cranberries, maple syrup, 1 teaspoon coriander, the chile powder and 1/4 teaspoon salt in a medium saucepan. Bring to a boil, then reduce the heat to a simmer. Cook, mashing the cranberries as they start to burst, until the mixture is thickened and reduced to about 3/4 cup, 20 to 25 minutes. Stir in the vinegar and season with salt. Set aside.
- Melt the butter in a small saucepan over medium heat. Reduce the heat to low and add the chopped rosemary, garlic and the remaining 2 teaspoons coriander. Cook 30 seconds, then remove from the heat.
- Pat the hens dry with paper towels, then brush with the flavored butter. Roast the hens until the skin is browned and a thermometer inserted into the thigh registers 165 degrees F, 25 to 30 minutes. Remove from the oven and switch to the broiler setting. Brush the hens with the orange-cranberry sauce, then broil, one baking sheet at a time, until glazed and dark brown in spots, 2 to 3 minutes.

- Preheat oven to 350°.
- Place hens, breast side up, on a rack in a shallow roasting pan. Sprinkle with salt and pepper. Bake, uncovered, for 30 minutes.
- In a small bowl, combine spreadable fruit and orange juice. Spoon some of the apricot mixture over the hens.
- Bake 30-35 minutes longer or until golden brown and juices run clear, basting several times with remaining apricot mixture.
- Let stand for 5 minutes before serving.
ORANGE-GLAZED CORNISH HENS

- Preheat oven to 375 F. Line a baking pan (large enough to hold the hens) with aluminum foil for easier cleanup.
- If using, massage the gravy enhancer over the skin of the Cornish hens. Trim off wing tips or tuck the wings behind the back of the bird.
- Place the orange marmalade, butter, and Worcestershire sauce in a microwave-safe bowl and melt in the microwave for about 1 minute. Stir until combined. You do not want it boiling hot.
- If you are using a stuffing, fill the Cornish hens; alternatively, place a wedge of orange into each cavity. Place the hens breast-side up in the prepared pan and brush with half of the orange glaze.
- Bake uncovered for 45 minutes. Remove from oven and baste with remaining glaze. Return to oven and bake an additional 15 minutes. Test with an instant-read thermometer in center of stuffing or between the thigh and breast, making sure not to touch bone; it should read 180 F.
- Let rest 10 minutes before serving.

- In a small skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels. In the drippings, saute carrot and onion until tender; transfer to a large bowl. Stir in stuffing cubes, parsley, savory, pepper and bacon., Dissolve 1/4 teaspoon bouillon in hot water; pour over stuffing mixture and gently toss to moisten. Spoon into hens. - Combine first 4 ingredients in a saucepan; bring to a boil.
- Combine water and cornstarch in a small bowl, stirring with a whisk.
- Add to juice mixture in pan, stirring with a whisk.
- Cook until thick and glossy about 2 minutes, stirring constantly.
- Place hen halves, meaty sides up, on a foil-lined pan coated with cooking spray; sprinkle hen halves with salt,pepper and ground ginger.
- Spoon glaze mixture evenly over hen halves.
- Insert a meat thermometer into meaty part of a thigh, making sure not to touch bone.
- Bake at 475° for 25 minutes or until the thermometer registers 180°.
ORANGE GLAZED LOVE (CORNISH) HEN

- Put all the sauce ingredients into a saucepan. Over medium heat bring it to a boil, and then reduce to a simmer for 1/2 hour. At the same time mix the marinade together, and rub it all the over hens. Marinate for at least 1 hour. Roast hens in a preheated 375 degree F oven for 25 minutes, and then brush with sauce. Finish the hens on a preheated grill for another 7 minutes, turning and brushing with more sauce to glaze.

- Preheat oven to 400°F. Whisk first 6 ingredients in medium bowl. Pour 2 cups sauce into medium saucepan. Reserve remaining 1 cup sauce.
- Rinse hens inside and out. Pat hens dry with paper towels. Cut and scrape off any visible fat from hens. Sprinkle inside and out with salt and pepper. Place 3 onion quarters and 3 garlic cloves in cavity of each hen. Arrange hens on rack on large rimmed baking sheet.
- Roast hens 10 minutes. Baste with reserved 1 cup sauce. Continue roasting until hens are golden and juices run clear when thickest part of thigh is pierced, basting often with pan juices and reserved 1 cup sauce, about 45 minutes longer.
- Transfer hens to cutting board; tent with foil to keep warm. Transfer pan juices to 4-cup glass measuring cup. Spoon fat off top of pan juices. Pour pan juices into 2 cups sauce in saucepan. Boil until sauce is reduced to 1 1/2 cups, about 12 minutes.
- Discard onions and garlic from hen cavities. Using poultry shears, cut hens in half lengthwise. Remove backbones. Spoon some sauce onto plates. Place hens atop sauce. Garnish with watercress. Serve with remaining sauce.
ORANGE-GLAZED GAME HENS

- Mix first 8 ingredients in large bowl. Add hens skin side down. Cover and refrigerate 24 hours, turning once.
- Using small sharp knife, cut between membranes of oranges to release segments. Set orange segments aside.
- Preheat oven to 400°F. Transfer hens to shallow baking pan. Place marinade in heavy small saucepan and boil until reduced to 3/4 cup, about 12 minutes. Brush both sides of hens with reduced marinade. Arrange skin side up in pan. Roast 5 minutes. Baste hens. Cook 10 minutes longer. Reduce oven temperature to 350°F. Baste hens and cook 10 minutes. Sprinkle hens with sesame seeds and roast until cooked through, about 10 minutes longer. Let stand 10 minutes.
- Cook snow peas in pot of boiling salted water until crisp-tender, 1 to 2 minutes. Drain. Place 1 hen half in center of each plate. Alternate snow peas and orange segments around hens and serve.
