The classic flavors of cranberry and orange come together in this flavorful quick bread recipe. Using dried cranberries makes this a loaf you can bake and enjoy year round.

2 cups all-purpose flour
1 cup granulated sugar
1-1/2 tsps baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp table salt
1/4 tsp ground ginger
1 large egg, room temperature
1/2 cup whole milk, room temp
1 tsp pure vanilla extract
1/4 cup fresh orange juice
2 tbsps butter, melted
2 tbsps hot water
1 cup dried cranberries
1 cup walnuts, chopped
1 cup confectioners' sugar
2-3 tbsps fresh orange juice, plus more if needed
1 tsp vanilla extract
1 tbsp orange zest to sprinkle on top (optional)

Steps:

  • Preheat oven to 325 degrees F. Spray a 9 x 5 inch loaf pan with cooking spray and line with parchment paper.
  • Combine flour, sugar, baking powder, baking soda, cinnamon, cloves, salt, and ginger in a large bowl. Set aside.
  • In a smaller bowl whisk together egg, milk and vanilla extract. Mix in the butter and water a little at a time to prevent the warm ingredients from cooking the egg.
  • Stir wet ingredients into dry ingredients, just until moistened.
  • Fold dried cranberries and chopped nuts into the batter until incorporated.
  • Bake for 55 or 60 minutes, until a toothpick comes back clean when poked in the center of the bread. Cover the top with foil for the last 10 minutes if the bread is getting too brown.
  • Cool in the loaf pan for 10 minutes before removing to a cooling rack.
  • Make the icing when the cranberry loaf is completely cooled. (The icing sets up quickly).
  • Gradually stir the powdered sugar, orange juice and vanilla, adding more orange juice if needed, until it reaches the right consistency for a glaze.
  • Spread the orange glaze on the cranberry loaf. (Note: this also makes a tasty topping for each slice).
  • Sprinkle orange zest on top before the icing sets, optional.

1/4 cup (31g) all-purpose flour (spoon & leveled)
2 Tablespoons (30g) granulated sugar
1/2 teaspoon ground cinnamon
3 Tablespoons (45g) unsalted butter, cold and cubed
2 cups (250g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
1/2 teaspoon salt
1 large egg, at room temperature
1/2 cup (105g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
1 cup (240ml) buttermilk, at room temperature*
1/3 cup (80ml) vegetable oil (or melted coconut oil)
1 teaspoon pure vanilla extract
2 teaspoons orange zest
1 cup (110g) cranberries, fresh or frozen (do not thaw)*
optional: 1/2 cup (65g) chopped pecans or chopped walnuts
1 cup (120g) confectioners' sugar
1-2 Tablespoons orange juice

Steps:

  • Preheat oven to 350°F (177°C). Spray a 9×5 inch loaf pan with nonstick spray.
  • Whisk the flour, sugar, and cinnamon together in a medium bowl. Cut in the cold butter with a pastry cutter, your hands, or two forks until mixture resembles pea-size crumbs. It's important to keep the streusel cold, so place in the refrigerator (covered or uncovered) until ready to use in step 4.
  • Whisk the flour, baking soda, and salt together in a large bowl. In a medium bowl, whisk the egg, brown sugar, and granulated sugar together until combined. Whisk in the buttermilk, oil, vanilla, and orange zest. Pour the wet ingredients into the dry ingredients, then whisk to completely combine. Avoid over-mixing. Fold in the cranberries and nuts (if using).
  • Pour the batter into prepared loaf pan. Top evenly streusel, pressing the streusel down gently into the top of the bread so it sticks.
  • Bake the bread for 45 minutes to 1 hour. Cover loosely with foil about halfway through to ensure even browning. Poke the center of the bread with a toothpick. If it comes out clean, the bread is done. Oven times will vary between ovens. My bread usually takes 1 hour. Cool bread completely in the pan set on a wire rack.
  • In a small bowl, whisk the confectioners' sugar and orange juice together. Add more orange juice depending how thick you want the glaze. Drizzle over cooled bread.
  • Slice and serve. Cover and store leftover bread at room temperature for 1 day or in the refrigerator for up to 1 week.

EASY ONE-BOWL CRANBERRY ORANGE LOAF

2 cups all purpose flour
1 cup white granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/4 cup butter (cold, salted or unsalted)
Zest of 1 large orange
3/4 cup freshly squeezed orange juice (from 1 large orange, plus water, as needed *See Note 1 below)
1 large egg (well beaten before adding *See Note 2 below)
1 - 1 1/2 cup raw cranberries (whole or chopped, fresh or frozen)
1 cup icing/confectioners' sugar
1 Tablespoon freshly squeezed orange juice (or water, if you don't have any more oranges)
1/4 teaspoon orange zest (optional)

Steps:

  • Preheat oven to 350F (regular bake setting/not fan assisted), with rack in the centre of the oven. Grease a 9x5-inch loaf pan and set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt. Cut the butter into 4 pieces and add to the dry ingredients. Using your fingertips, rub the cold butter into the flour mixture, breaking it up as you go, until you have an evenly crumbly mixture resembling corn meal.
  • Remove the zest from the orange and set aside for now. In a 2-cup measuring cup, add the juice from the orange. Add enough water to the measuring cup to fill up to the 3/4 cup mark. add the orange zest and the well beaten egg to the measuring cup and stir to combine. Pour the orange juice mixture all at once into the dry ingredients. Using a wooden spoon, mix together just enough to dampen all the flour. Gently stir in the cranberries. (I like to dust frozen cranberries with a tiny bit of flour before adding to the dough).
  • Spoon the batter into a greased 9x5-inch loaf pan and bake in preheated oven for about 1 hour, or until a tester inserted in the centre comes out clean. (Starting with frozen cranberries may need a few extra minutes of baking. Also note that darker pans will bake more quickly. So watch closely near the end of baking, but don't be afraid to bake a little longer, if needed).
  • Allow the loaf to cool in the pan for 10 minutes, then run a knife around the side of the pan and turn out/remove from pan and allow to cool completely on a wire rack to cool completely.
  • Once cooled completely, prepare glaze by stirring together the glaze ingredients until smooth. Place a piece of waxed paper or paper towel under the cooling rack to catch drips, then spoon the glaze over the cooled loaf, spooning it onto the top and letting it run down the side. Allow to stand until the glaze sets (about 30 minutes) before slicing.

1 orange
2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped cranberries (fresh or frozen)
1 egg, beaten
1/4 cup butter, melted

Steps:

  • Grate rind from orange, squeeze juice into liquid measure, add enough water to make 3/4 cup.
  • Set aside.
  • In large bowl, whisk flour, sugar, baking powder, baking soda, salt and orange rind; stir in cranberries.
  • In small bowl, whisk together egg, butter and orange juice; stir into flour mixture just until blended.
  • Spread in greased 9x5 Loaf pan.
  • Bake in centre of 350F oven for 50 to 60 minutes or until cake tester inserted in centre comes out clean.
  • Let cool in pan for 10 minutes, turn out onto rack and let cool completely.
  • (Make-ahead, store at room temperature for up to 2 days or over-wrap with heavy-duty foil and freeze for up to 2 weeks.).

Plan ahead - the cherries need to soak at least three hours or overnight. NOTE: If you prefer, you can use cherry or orange juice instead of using the liqueur.

1 cup dried cherries (or dried cranberries)
1 1/2 tablespoons cherry flavored liqueur (such as Kirsch or Grand Marnier) or 1 1/2 tablespoons orange-flavored liqueur (such as Kirsch or Grand Marnier)
1 tablespoon hot water
plain breadcrumbs, for dusting pan
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3 ounces cream cheese, softened
1/2 cup light brown sugar, firmly packed
2 tablespoons granulated sugar
1 lemon, zest of, finely grated
2 large eggs

Steps:

  • Place cherries (or cranberries) in a container with a very tight fitting lid.
  • Pour liqueur and hot water over the cherries, seal the lid tightly, and shake to coat cherries well with the liquid.
  • Set aside 3 hours or overnight so cherries will absorb the liquid.
  • Preheat oven to 350 F (or 325 F for a pan with a black surface).
  • Grease a loaf pan and lightly dust with plain dry breadcrumbs, shaking out excess.
  • Sift together the flour, baking powder, and the salt.
  • In another bowl, cream the butter and the cream cheese until smooth.
  • Add the sugars, and the finely grated lemon zest and beat until well combined and pale yellow.
  • Beat in eggs, one at a time.
  • Add the flour mixture, beating on low speed, just until the flour is combined.
  • Stir in the cherries and any liquid still in the soaking container.
  • Pour batter into the pan and smooth top with a rubber spatula.
  • Bake in the center of the oven for 45-60 minutes- or until a toothpick insterted in the center tests clean, checking as early as 40 minutes into the baking time- if it is getting too brown, cover loosely with foil and continue baking until the toothpick tests done.
  • Expect the top of the loaf to crack.
  • Let cool in the pan 15 minutes, then remove from pan and set onto a wire rack to cool completely.
  • Wrap in plastic and let set overnight before slicing.
  • For extra decadence, drizzle a little more liqueur over the crack before wrapping in plastic- don't pour too much or you'll soak the bread.
