3/4 cup packed brown sugar
1/2 cup water
1/2 cup butter
1 cup semisweet chocolate chips
2 large eggs
1/2 cup whole milk
1/2 cup orange juice
1-1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts
ORANGE GLAZE:
3 cups confectioners' sugar
1/4 cup butter, softened
1 teaspoon grated orange zest
1/3 cup whole milk

Steps:

  • In a saucepan, combine the dates, sugar, water and butter. Simmer for 5 minutes, stirring occasionally, or until dates are softened. Remove from heat; stir in chocolate chips. , Beat eggs, milk and orange juice. Combine flour, baking soda and salt; add to date mixture alternately with orange juice mixture, mixing well after each addition. Stir in walnuts. Pour into a greased 15x10x1-in. baking pan. , Bake at 350° for 25-30 minutes or until a toothpick comes out clean. Cool. Combine confectioners' sugar, butter and orange zest; stir in milk until glaze reaches desired consistency. Spread over bars.

2 1/2 cups (1 pound) pitted and chopped dates
1 cup water
Scant 1 cup sugar
1/3 cup lemon juice
3 cups rolled oats
2 1/2 cups all-purpose flour
1 3/4 cups brown sugar
3/4 teaspoon ground cinnamon
3/4 teaspoon baking soda
3/4 teaspoon salt
1 3/4 cups unsalted butter, melted

Steps:

  • In a medium saucepan, combine the chopped dates and water. Over medium low heat, bring to a simmer and cook for 5 minutes. Add the sugar and lemon juice and stir until the sugar has dissolved. Bring back up to a boil and cook for 1 minute. Remove from the heat and allow to cool to room temperature.
  • Thoroughly butter a 9 x 13 inch baking pan with 2 inch sides and line the base of it with parchment paper.
  • Preheat the oven to 350 degrees. In a large mixing bowl, combine the oats, flour, brown sugar, cinnamon, baking soda, and salt. Mix together well with a wooden spoon, then drizzle in the melted butter and stir to moisten evenly. Spread 1/2 of this crumb mixture in the base of the pan, then cover with an even layer of the cooled date mixture. Top the date layer with another layer of the crumb mixture and bake for 30 to 35 minutes, or until the top is golden and bubbly, and the edges have begun to caramelize. Cool on a rack, to room temperature. Run a knife around the inside edge of the pan to release, and cut into 12 squares.

2 cups all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon kosher salt
3/4 cup granulated sugar
1/4 cup all-purpose flour
4 large eggs
Zest and juice of 4 oranges (making about 1 cup of juice)
Powdered sugar, for sifting

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch pan with butter.
  • Stir together the flour, granulated sugar and salt in a bowl. Add the butter to the bowl and use a pastry cutter to cut it all together until the mixture resembles fine crumbs. Press into the prepared pan and bake until golden around the edges, about 20 minutes.
  • For the filling: Stir together the granulated sugar and flour in a bowl. Crack in the eggs and whisk to combine. Add the orange zest and juice and mix until combined. Pour over the crust and bake until the filling is set, about 20 minutes.

  • Combine filling ingredients in a saucepan, bring to a boil, reduce heat and simmer a few minutes till thickened. Set aside and let cool.
  • For the base, sift together dry ingredients.
  • Cream sugar and butter. Add eggs, and dry ingredients and walnuts. Add lemon juice and zest to moisten.
  • Spread on a cookie sheet and up the sides.
  • Spread cooled filling over crust.
  • Combine filling ingredients with a fork until crumbly. Sprinkle on top and bake at 375 F for 35-40 minute.
  • Original recipe calls for the bars to be baked on a cookie sheet pan. We like them thicker, so I put them in a 9 X 13 cake pan.
  • Cool and cut unto bars.
  • To serve sprinkle liberally with 10X sugar.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch square pan. Cook over medium-high heat, stirring constantly, until dates are soft and the mixture becomes a thick paste, about 10 minutes. Remove from heat and set aside to cool.
  • To make the crust and topping, stir together the oats, 1/2 cup brown sugar, flour, baking powder, baking soda, 1/2 teaspoon cinnamon and salt in a medium bowl. Cut in butter using a pastry cutter or your fingers. Mixture should be coarse and crumbly. Stir in 2 tablespoons water until evenly distributed.   • Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking dish.
  • In a medium bowl, cream together the shortening and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve the baking soda in hot water, then stir into the creamed mixture. Combine 1 3/4 cups of flour and salt; stir into the batter just until blended.
