CILANTRO AND CORIANDER CHICKEN

2 tablespoons grapeseed oil
1 tablespoon minced garlic
1 tablespoon minced ginger
1 tablespoon coriander seeds
1 tablespoon garam masala
A pinch of salt and pepper
2 tablespoons tomato paste
4 chicken legs
3 cups chicken broth
1 cup chopped fresh cilantro
1/2 cup crushed tomatoes

Steps:

  • Place a large skillet over medium heat and add the oil. When it is hot, add the garlic and ginger and cook for 1 minute. Add the coriander, garam masala and salt and pepper, and cook for 30 seconds. Stir in the tomato paste, and then add the chicken legs. Sprinkle with salt and let them cook for 5 minutes. Add the chicken broth, cilantro and crushed tomatoes, and let it simmer until the chicken is fully cooked, about 30 minutes. Serve with plenty of sauce.

Moroccan Chicken Smothered in Olives image

Chicken, that old weeknight standby, can get pretty boring day after day. This dish, adapted from "Mediterranean Cooking" by Paula Wolfert, is almost as easy as a few pan-fried chicken breasts, but its flavors - ginger, turmeric, cumin, Spanish sweet paprika, briny olives - are far more exciting. If you have the time, brining the chicken thighs for a couple of hours in a salt-sugar-water solution before cooking will yield supremely tender meat, but if you're in a rush, skip it. You're still going to fall in love with this dish.

1/4 cup salt, for brining (optional)
1/2 cup sugar, for brining (optional)
8 chicken thighs with bone, skin removed and discarded
2 onions, peeled, halved and sliced
1 teaspoon ground ginger
2 teaspoons ground turmeric
2 teaspoons ground cumin
1 tablespoon Spanish sweet paprika
4 cloves garlic, peeled and chopped
3/4 cup chopped fresh cilantro leaves
2 cups low-sodium chicken broth
11 ounces pitted green olives in brine, like Goya's, drained
Juice of 1 lemon

Steps:

  • To brine chicken (optional): In a large bowl, combine salt, sugar and 1 cup hot water. Stir until sugar is dissolved. Add 3 cups cold water and chicken pieces. Cover and refrigerate for 2 hours. Drain, rinse, and drain again before using.
  • In bottom of a large flameproof casserole, arrange onions and top with chicken pieces. Sprinkle with ginger, turmeric, cumin, paprika, garlic and cilantro. Pour chicken broth over all.
  • Place over high heat to bring to a boil, then reduce heat to medium-low. Cover and simmer for 30 minutes, turning once. Meanwhile, in a small saucepan, combine olives with several cups of water and bring to a boil. Boil 2 minutes, drain well and set aside.
  • Add olives and lemon juice to chicken, and simmer uncovered for 10 minutes. If desired, simmer for additional time to reduce and thicken sauce. Serve hot.

I originally found this recipe while browsing Food Network. I had to change a few things for my family's taste. My family loves it and I make it at least once a week. The sauce makes enough to give the chicken a good glaze. I always double the sauce recipe to have extra for the rice

2 lbs boneless skinless chicken breasts, cut into 1 inch cubes
2 eggs
2 teaspoons cayenne pepper
1 cup all-purpose flour
1/4 cup cornstarch
1 orange, zested
1 1/2 cups orange juice
1/3 cup dark brown sugar
6 tablespoons butter
1/2 teaspoon red pepper flakes
2 tablespoons Worcestershire sauce
heavy bottom pot filled 1/2 way with oil (for frying)

Steps:

  • Slice chicken into 1 inch cubes, in a large bowl, whisk together eggs, cayenne and a pinch of salt and pepper to taste. In a paper bag (if you don't have one handy a large bowl will do fine as well) mix together flour and cornstarch and salt and pepper. Dip the chicken in batches, first in the egg mixture and then in the flour mixture, shake to coat. Set on a wire rack or a cookie sheet lines with parchment or wax paper and let rest while you prepare the sauce.
  • Preheat oil to 350 degrees.
  • In a large staight sided saute pan, combine orange juice, orange zest, brown sugar, butter, hot pepper flakes and Worcestershire Sauce. Bring to a fulll boil and until sauce reduces about half and then reduce heat and simmer. sauce will thicken in about 5 to 10 minutes.
  • While making sauce fry the chicken in the oil until golden and crispy.
  • once fried transfer chicken to sauce and toss to coat.
  • Serve over rice and enjoy.
