Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. The result is sticky, sweet, tangy and oh so flavorful!

2 salmon fillets (about 8 to 10 ounces each)
Kosher salt and freshly ground black pepper
1/3 cup orange marmalade
1-inch piece fresh ginger, grated (see Cook's Note)
3 tablespoons soy sauce
2 tablespoons olive oil
Juice of 1 orange (about 1/3 cup)

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet or baking pan with foil. Sprinkle the salmon generously with salt and pepper and place on the foil.
  • Whisk the marmalade, ginger, soy sauce, oil and orange juice together in a small bowl. Pour over the salmon. Drop the peel form the orange onto the baking sheet along with the salmon. Bake until the salmon is cooked through, 10 to 15 minutes. If you like, turn the oven to broil for the last 3 or so minutes of cooking to brown the top of the fillets.
  • Serve the salmon immediately or cool and refrigerate to use in salads or sandwiches.

1 pound salmon (cut into 4 steaks, 4 ounces each)
salt
black pepper
¼ cup orange marmalade
½ teaspoon orange zest
¼ cup orange juice
2 Tablespoons white vinegar
½ Tablespoon chipotle peppers in adobo ((finely diced if using whole peppers))
¼ teaspoon salt
2 ½ Tablespoons sugar
2 ½ Tablespoons water

Steps:

  • Whisk the orange marmalade, orange zest, orange juice vinegar, diced chipotles in adobo, and salt together in a small bowl. Set aside.
  • Put the water and sugar in a medium pot over medium high heat. Cook, without stirring, until the sugar is dissolved and the mixture is a light straw color. Approximately 5 minutes.
  • Reduce heat to low and continue cooking the syrup until it is an amber color, approximately 1-2 minutes more. Swirl the pot occasionally. (If you have a thermometer, the sugar will read between 360 and 370°F).
  • Remove the pot from the heat and whisk in the orange mixture. It will bubble and steam, and the sugar will harden.
  • Put the pot back on the heat, change the heat to medium, and cook, whisking constantly, until the hard sugar has dissolved and the sauce is thicker, approximately 2-4 minutes.
  • Remove the glaze from the heat and set aside.
  • Heat a skillet over medium high heat.
  • Pat the salmon dry with paper towels and season with salt and pepper.
  • When the skillet is hot, add the oil. Swirl and warm the oil. Place the salmon steaks in the skillet, skin side up (flesh side down) and cook until well browned, 4 to 6 minutes.
  • Flip the salmon and reduce heat to medium. Cook until the fish is translucent in the middle (check with a knife) and registers 125°F for medium rare, approximately 4-5 minutes.
  • Remove the skillet from the heat. Spoon some of the glaze over the salmon. Serve immediately with the rest of the glaze and other sides.

1/4 cup orange marmalade
1 Tbsp. chopped canned chipotle peppers in adobo sauce
1/4 cup KRAFT Zesty Italian Dressing, divided
4 skinless salmon fillets (1 lb.)
1 red pepper, cut into strips
4 slices OSCAR MAYER Bacon, cooked, drained and crumbled

Steps:

  • Combine marmalade, chipotle peppers and 1 Tbsp. dressing; reserve for later use. Pour remaining dressing over fish in shallow dish; turn to evenly coat both sides of each fillet. Refrigerate 30 min. to marinate.
  • Remove fish from marinade; discard marinade. Cook fish in medium skillet on medium heat 5 min. on each side or until fish flakes easily with fork, brushing occasionally with 1 Tbsp. of the reserved marmalade mixture. Transfer fish to serving plate; cover to keep warm.
  • Add red peppers to skillet; cook and stir 3 min. or until crisp-tender. Stir in remaining reserved marmalade mixture along with the bacon. Spoon over fish.

1 1/2 pounds 16/20 shrimp, peeled and deveined (30 shrimp in total)
3 tablespoons adobo sauce from canned chipotles
3 tablespoons honey
1 tablespoon olive oil
2 scallions, sliced thin
2 limes, zested and then cut into wedges

Steps:

  • Preheat a grill or grill pan over medium-high heat.
  • Skewer the shrimp onto 6 soaked wooden skewers, about 5 shrimp per skewer.
  • Whisk together the adobo sauce, honey, olive oil, half of the scallions and the zest of the limes in a small bowl until well combined. Brush the shrimp with some of the glaze and place on the grill.
  • Grill the shrimp for 2 minutes per side, brushing them with the glaze until they are slightly charred and just cooked through.
  • Transfer to a platter and garnish with the remaining scallions and the lime wedges.

2 -3 tablespoons pureed chipotle chiles in adobo
1 1/2 lbs salmon
heavy duty aluminum foil
nonstick cooking spray, kosher
salt and pepper
1 lime (to garnish)

Steps:

  • Remove salmon from the refrigerator 15 minute before cooking. Heat grill to 375°F
  • Stir honey and chipotle puree in a small bowl until well combined.
  • Cut 2 pieces of wide, heavy-duty aluminum foil about 6-in. longer than the salmon side. Stack the foil pieces (shiny side down) on a baking sheet and spray generously with cooking spray.
  • Place the salmon, skin side down, in the middle of the foil. Fold the foil sides and ends up (1 to 2-in.) to make a shallow pan around the salmon, leaving at least a 1-in. margin around the fish. Season salmon with salt and pepper.
  • Carefully transfer the foil pan to the center of the preheated grill. Do not cover the salmon or close the foil over the salmon. Close grill cover and cook for 5 minute Spread the glaze on the salmon (1 tablespoons per salmon portion or 1/3 Celsius per salmon side).
  • Close grill and continue to cook about 5 to 7 minute more. Cook just until fish is lightly translucent in the center. It will finish cooking from retained heat. Remove from the grill and let rest a few minutes before serving.
  • Garnish with lime zest and serve with lime wedges.
  • Alternate Cooking Method: Salmon can also be roasted in an oven preheated to 375°F or pan-seared and finished in the oven. Cook just until lightly translucent in the center; be sure to let the salmon rest a few minutes before serving.

1/4 cup lightly packed brown sugar
1 small garlic clove, minced

almost 1/2 cup of orange juice
1/4 to 1/3 cup light brown sugar
1-2 cloves garlic, chopped
1/4 tsp ground cumin
dash of salt
1/2 to 1 tsp fresh lemon juice
1 to 2 tsp chipotle sauce (I used a brand called Unique Destiny)
1 1/2 pounds organic salmon

  • Bring first three ingredients to a low boil. Cook for 4-5 minutes, then add cumin and salt (adjust taste as needed). Cook until mixture has thickened and reduced somewhat. Remove from heat and let stand a few minutes before adding lemon juice and chipotle sauce. Taste and adjust per your own "spiciness" settings. Salt and pepper the salmon and place it skin side down on lightly greased foil. Liberally coat salmon with glaze and stick under the broiler for about 10 mins, glazing at least one more time. Serve salmon with black beans, guacamole and a nice crisp white wine. Yummmmmm.

  • At least 4 hours prior to grilling, place a cedar plank inside a large rimmed pan. Pour in the beer, plus two beer cans of water to cover the plank. Add more water if needed. Place a couple heavy mugs on top of the plank to push the plank into the liquid. Let soak until ready to grill. If you don't want to use beer, just use all water. When possible, soak plank overnight.
  • When preparing to grill, take salmon out of the refrigerator. In a small bowl, whisk together orange zest and juice, olive oil, brown sugar, chipotle powder, and cumin. Set aside.
  • Drain liquid from pan with cedar plank, leaving the plank inside. Add salmon fillet, skin side down, to plank. Rub chipotle-orange mixture all over the top and sides of the salmon. Sprinkle with a bit of kosher salt and freshly ground black pepper. Top with fresh orange slices.
  • Heat grill to medium-high, about 415° F. Place plank with salmon on grill grates and cook for about 25 to 30 minutes for a thicker piece of salmon. Salmon thickness will vary, so thinner fillets will take less time to cook. The salmon is done when the thickest part of the fillet is beautifully pink but no longer has a translucent appearance. It should flake a bit when prodded with a fork. Have a spray bottle of water handy for any flare-ups on the wood plank. The wood will smoke and smolder, and slowly start to char and burn, becoming more fragile and brittle at the end of the cooking process. Your goal is to keep the wood smoking, and not burning up. Just use the spray bottle to keep adding moisture to the exposed wood (don't directly spray the salmon). To remove the grill plank, use a large grill turner to get under the plank to lift it onto a rimmed pan. Serve the salmon right from the plank inside the pan for a fun and fuss-free presentation.
