4 boneless skinless chicken breast halves (5 ounces each)
2 tablespoons butter
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
3/4 cup unsweetened pineapple juice

1/2 pound sliced fresh mushrooms
Hot cooked rice

Steps:

  • Layer sweet potatoes in a 3-qt. slow cooker. In a large bowl, combine 2/3 cup flour and seasonings; add chicken, 1 piece at a time, and shake to coat. , In a large skillet over medium heat, cook chicken in butter until lightly browned, 3 minutes on each side. Arrange chicken over sweet potatoes. , Place remaining flour in a small bowl. Stir in the soup, pineapple juice, brown sugar and orange zest until blended. Add mushrooms; pour over chicken. 1/4 cup packed brown sugar

1 large sweet potato, cut into 1-inch pieces
1 medium onion, cut into wedges

Steps:

  • Heat 1 cup stock, fruit, brown sugar, garlic powder and rosemary in a 2-quart saucepan over medium heat to a boil.
  • Place the chicken, potato and onion into a roasting pan. Pour the stock mixture over all. Cover the pan.
  • Bake at 450 degrees F for 15 minutes. Pour the remaining stock into the pan. Bake, uncovered, for 15 minutes or until the chicken is cooked through and the vegetables are tender.

  • Heat oven to 375°F. In 1-quart saucepan, cook basting sauce ingredients over low heat 3 to 4 minutes, stirring occasionally, until marmalade is melted.
  • In 15x10x1-inch pan, place chicken breasts. Brush with half of the basting sauce. In medium bowl, toss potatoes and onion with oil; place around chicken. Bake 25 minutes.
  • Meanwhile, in small bowl, soak cranberries in 1/4 cup orange juice.
  • Brush chicken again with remaining basting sauce. Stir gently to coat vegetables with pan juices. With slotted spoon, sprinkle cranberries over vegetables; drizzle with juice. 4 boneless skinless chicken breast halves
1 (16 ounce) can whole berry cranberry sauce
1/4 cup olive oil, DIVIDED, enough to coat potatoes & some for mixture
1/2 teaspoon ground ginger (*I use more)
1/2 teaspoon salt (optional)
1/4 teaspoon white pepper, adds a bit of heat
0.5 (1 ounce) envelope dry onion soup mix, low sodium version

  • Preheat oven to 350°.
  • Peel potato and slice thin. Place evenly in a 8x8 baking dish sprayed with non-stick spray.

1/2 onion, chopped

Steps:

  • Toss together all the pilaf ingredients except the chicken stock.
  • Spread the pilaf in the bottom of a 6 qt, oval crock pot.
  • Stuff the chicken cavities with 4 orange chunks and 2 onion quarters.
  • Place the chickens into the crock pot on top of the pilaf.
  • Sprinkle each chicken with a pinch of celery seed, a pinch of cumin, and 1/2tsp of curry powder.
  • Pour the chicken stock into the pot, being careful to not wash the seasoning off the chicken.
  • Since the crock pot will be very full, cook for 3-4 hours on high to get the middle heated quickly then turn down to low for another 4-5 hours.
