CRISPY ORANGE BEEF



Crispy Orange Beef image

Way better than takeout - this sticky-crispy-sweet Orange Beef is ready in 25 minutes!

3 tbsp vegetable oil
500 g beef steak (I use sirloin, chopped into strips*)
2 tbsp cornflour/cornstarch (not cornmeal)
pinch of salt and pepper
Juice of 2 large oranges
Zest of half an orange
3 tbsp caster sugar
5 tbsp soy sauce (make sure it's gluten-free soy sauce if you're gluten intolerant)
2 cloves of garlic (peeled and crushed)
1 thumb sized piece of ginger (peeled and finely chopped/grated)
1 tsp rice vinegar
1 red pepper (sliced into chunks)
1 large onion peeled and sliced into chunks
Boiled rice
4 spring onions/scallions chopped on the diagonal

Steps:

  • Heat the oil in a wok or large frying. Pat the beef dry with some kitchen roll, then mix the cornflour with the salt and pepper and toss the beef in the cornflour until completely coated. When the oil is hot, tip the beef in and fry until crispy. I try not to move the meat around too much as this seems to reduce the amount of crispiness you get. It generally takes about 9 or 10 minutes to crisp up the beef, with about 3 or 4 stirs during that time. Some people would say to crisp the beef in batches, but I'm far too lazy for all that, and so long as you're using a large pan, and very hot oil you can get away with doing the lot in one go. Once the beef is crispy and cooked through, remove the beef using a slotted spoon, and place in a bowl lined with kitchen roll to soak up excess fat.
  • Whilst the beef is cooking, mix the orange juice, zest, sugar, soy sauce, garlic, ginger and rice vinegar and put to one side.
  • After the beef has been removed from the pan there should still be a little oil left. Turn the heat down a little and add the sliced red pepper and onion. Fry for a minute or two (so they're hot but still crunchy), then pour over the orange sauce. Turn up the heat and bring to the boil, then add the beef back in. Give it a stir and heat through for 1 minute. If your sauce is looking too thin, you can stir in a little bit of cornflour mixed with cold water to thicken.
  • Once bubbling and thick, serve up with boiled rice. Garnish with the spring onions/scallions.

1 1/2 pounds flank steak, cut in 1-inch strips
Salt and pepper
1/2 cup cornstarch
Vegetable oil, for frying
1 package thin rice noodles
Frisee lettuce, to serve
1 tablespoon canola oil
1 teaspoon minced garlic
1/2 cup orange marmalade
1 cup low-sodium beef broth
1 teaspoon low-sodium soy sauce
10 small dried Thai chiles
2 teaspoons cornstarch

Steps:

  • Season flank steak strips with salt and pepper, then toss with cornstarch. Shake off excess.
  • Fill a large frying pan with enough oil to cover the bottom by 1/4 to 1/2-inch. Heat the oil to 365 degrees F. First add noodles to oil and let cook for 3 to 4 minutes. Take out noodles and then, working in batches, fry the steak. Do not crowd pan. Drain on paper towels. Set aside.
  • For the sauce: Heat the oil in a medium frying pan over medium heat and cook the garlic until fragrant; do not let the garlic brown. Add orange marmalade, 1/2 cup beef broth, soy sauce, and chiles. Bring to a boil and reduce to a simmer for 5 minutes. In a small bowl, stir cornstarch into remaining 1/2 cup beef broth. Stir cornstarch mixture into simmering sauce. Return to a simmer for 3 to 4 minutes until sauce thickens.
  • Make a bed of the frisee lettuce on a platter. Put the crispy noodles on top and then the beef. Pour sauce over beef and serve.

1 ½ pounds beef top sirloin, thinly sliced
⅓ cup white sugar
⅓ cup rice wine vinegar
2 tablespoons frozen orange juice concentrate
1 teaspoon salt
1 tablespoon soy sauce
1 cup long grain rice
2 cups water
¼ cup cornstarch
2 teaspoons orange zest
3 tablespoons grated fresh ginger
1 ½ tablespoons minced garlic
8 broccoli florets, lightly steamed or blanched
2 cups oil for frying

Steps:

  • Lay beef strips out in a single layer on a baking sheet lined with paper towels. Allow to dry in the refrigerator for 30 minutes. In a small bowl, mix together the sugar, rice vinegar, orange juice concentrate, salt and soy sauce. Set aside.
  • Meanwhile, combine rice and water in a medium saucepan. Bring to a boil, then reduce heat to medium-low and simmer for 20 minutes, or until rice is tender. Add more water at the end if necessary.
  • Heat oil in a wok over medium-high heat. Toss dried beef in cornstarch to coat. Fry in the hot oil in small batches until crispy and golden brown; set aside. Drain all of the oil from the wok except about 1 tablespoon.
  • Add orange zest, ginger and garlic to the remaining oil, and cook briefly until fragrant. Add the soy sauce mixture to the wok, bring to a boil, and cook until thick and syrupy, about 5 minutes. Add beef, and heat through, stirring to coat. Serve immediately over steamed rice, and garnish with broccoli.

4 ounces rice noodles
2/3 cup orange juice

2 teaspoons sugar
1 teaspoon sesame oil
1 teaspoon cornstarch

1/2 lb flank steak, trimmed and sliced thin across the grain
6 green onions, cut into 2 inch slices
2 cloves minced garlic

Steps:

  • Cook noodles according to package directions, drain and set aside.
  • Combine orange juice, soy sauce, sugar, oil, cornstarch, and chili paste in a bowl, mix and set aside.
  • Spray a large nonstick skillet with spray and set on high heat.
  • Add steak and cook in batches until browned, about 5 minutes.
  • Add scallions, garlic, and ginger.

1 teaspoon cornstarch
2 teaspoons soy sauce
3/4 cup beef broth
1 teaspoon freshly grated orange zest
1/2 teaspoon sugar
6 ounces Asian egg noodles or thin spaghetti
1 1/2 tablespoons vegetable oil
3/4 pound boneless sirloin, cut into 1/4-inch strips
1 garlic clove, minced
1 teaspoon minced peeled fresh gingerroot
6 ounces snow peas, trimmed and cut length-wise into 1/4-inch strips

Steps:

  • In a bowl dissolve cornstarch in soy sauce and stir in broth, zest and sugar.
  • In a kettle of salted boiling water cook noodles until tender and drain well.
  • While noodles are cooking, in a heavy skillet measuring about 10 inches across top heat 1 tablespoon of oil over moderately high heat until hot but not smoking. Stir-fry beef, patted dry and seasoned with salt and pepper, until browned, about 45 seconds, and transfer to bowl. Add the remaining 1/2 tablespoon oil to skillet and stir-fry garlic, gingerroot, and snow peas 30 seconds. Stir cornstarch mixture and add to snow peas, stirring. Simmer mixture until thickened and stir in beef with any juices accumulated in bowl and salt and pepper to taste. In a large bowl toss beef mixture with noodles.

Steps:

  • Spray 12-inch skillet with cooking spray; heat over medium-high heat. Cook beef in skillet 2 to 4 minutes, stirring occasionally, until brown. Remove beef from skillet; keep warm.
