2 ounces of butter
2 tablespoons of brown sugar

Steps:

  • Preheat the oven to 360°F/180°C.
  • First slice the pears in halves. Line a baking tray with parchment paper and place the pears on top.
  • Remove the inside with a scoop.
  • Fill with butter, brown sugar, cinnamon, honey, almonds, and walnuts.
  • Slide the tray into the oven and cook the pears for 20 minutes!

The flavor of cloves infuses these pears and their tawny syrup during their long stay in the oven. Two hours is a long time, but it's worth it: the pears are transformed, and the syrup, which is not very sweet, is caramelized. The pears will be intact, but they're so soft you can eat them with a spoon. They also make a nice breakfast with yogurt.

6 ripe but firm pears
2 tablespoons honey
1/4 cup raw brown (turbinado) sugar or regular brown sugar, preferably organic fair-trade, tightly packed
12 cloves

Steps:

  • Preheat the oven to 400 degrees. Butter a baking dish. Cut a small cone from the bottom of each pear with a paring knife, and place a teaspoon of honey inside. Peel a strip of skin away from the top of each pear, just below the stem, but leave the stems intact. Then place the pears bottom side down in the baking dish. Sprinkle the brown sugar over the pears. Pour in water until it reaches 1/3 of the way up the side of the pears, and place the cloves in the water.
  • Set the baking dish on a sheet pan, place in the oven and bake for 15 minutes. Then turn down the heat to 350 degrees and bake for two hours more, basting every 15 minutes with the liquid in the pan. From time to time, lay down the pears down in the liquid so they are thoroughly moistened and cook evenly. After two hours their skins should be shriveled and caramelized.
  • Remove the pears from the oven, transfer to a platter or bowls and allow to cool. Place the liquid in the baking dish in a saucepan, and reduce to a syrup. Pour over the pears, and serve or chill and serve cold.

1 lemon
6 Bosc pears
1 1/2 cups sugar
1 tablespoon cider vinegar
1/2 cup water
1/4 cup heavy cream
Vanilla ice cream or frozen yogurt

Steps:

  • Fill a large bowl with water and squeeze a lemon into it. Peel each pear, leaving a small crown of skin around the stem. Carefully core each, keeping pear intact. As the pears are peeled, place in the water.
  • Preheat oven to 450 degrees.
  • In large nonreactive ovenproof skillet, combine sugar, vinegar and 1/2 cup of water. Cook, without stirring, over medium heat until mixture is lightly caramelized. Remove from heat.
  • While caramel is cooking, remove pears from water, draining them well. When caramel is done, roll pears in caramel, turning them with 2 wooden spoons. Do not touch caramel. Stand pears up in the pan, place pan in oven, and roast pears about 45 minutes, basting them frequently with caramel in the pan, until they are tender and golden brown. Keep the basting spoon in a dish of warm water to prevent it from getting sticky.
  • Using wooden spoons, carefully transfer pears to a rack placed over a sheet of foil, and allow them to drain. Return skillet to top of stove, whisk in the cream and bring to a simmer. Set aside until ready to serve.
  • Serve pears with warm sauce and vanilla ice cream or frozen yogurt on the side.

1/2 cup flowery white wine, such as riesling
1/4 cup superfine sugar

Steps:

  • Squeeze juice from lemon.
  • Measure and reserve 1 tblsp of juice; add remaining juice to cold water in large bowl.
  • Pare, quarter and core one pear at a time and place in acidulated water.
  • Drain pears; pat dry with paper toweling.
  • Heat butter in large skillet over medium-high heat.
  • When foam subsides, add pears; increase heat to high.
  • Saute pears until just golden on all sides, about 10 minutes.
  • Add wine.
  • Boil and cook until wine is reduced to thick glaze, about 5 minutes.

  • Cook, stirring gently, over medium heat, until pears are lightly glazed.
  • Give a good grind (but not too much) of coarse black pepper.

340 g honey
4 large eggs
1/4 cup sour cream or 1/4 cup yogurt

800 g pears, cut into 1 . 5 cm thick wedges (4 pears)
1/4 cup honey

Steps:

  • In a medium bowl, whisk together the flours, baking soda, ground cinnamon, grated lemon peel and sea salt. Set aside.
  • Lightly grease a 23 cm round cake pan with sunflower oil. Sprinkle ¾ cup of the chopped almonds in the bottom of the pan, reserving ¼ cup for the batter.
  • In a large mixing bowl, mix together the butter, honey, and eggs. Stir in the reserved flour mixture, then the sour cream or yogurt and reserved almonds.

Steps:

  • Preheat oven to 325 degrees. Butter a 10-inch springform pan. Dust with flour; tap out excess. Whisk together the flour, baking powder and soda, salt, and cinnamon in a bowl; set aside. Mix eggs and sugars on high speed in the bowl of an electric mixer fitted with the paddle attachment until pale and thick, about 3 minutes.

8 firm but ripe Bartlett pears, peeled, halved, cored
1 cup packed golden brown sugar
3 teaspoons ground ginger
6 tablespoons honey
3 tablespoons fresh lemon juice
2 teaspoons grated lemon peel
10 tablespoons (1 1/4 sticks) unsalted butter
1 quart vanilla frozen yogurt
Fresh mint sprigs (optional)
Lemon peel strips (optional)

Steps:

  • Preheat oven to 375°F. Spray 2 large ovenproof skillets with oil spray. Arrange half of pears cut side down in each skillet. Sprinkle 1/2 cup sugar and 1 1/2 teaspoons ginger over pears in each skillet. Mix honey, lemon juice and peel in small bowl. Drizzle over pears. Dot pears in each skillet with 3 tablespoons butter.
  • Place skillets with pears in oven. Bake until juices bubble thickly and pears are tender when pierced with small sharp knife, basting occasionally, about 15 minutes. Turn pears over. Bake 5 minutes longer. Remove pears from oven. (Can be made 1 day ahead. Cool. Transfer pears and cooking syrup to large glass baking dish; cover and chill. Rewarm uncovered in 375°F. oven 15 minutes before continuing.)
  • Arrange 2 pear halves on each of 8 plates. Transfer cooking syrup to 1 large skillet. Bring syrup to simmer, whisk in 4 tablespoons butter. Spoon over pears. Place 1 scoop yogurt alongside. Garnish with mint and lemon peel, if desired.
