Steps:
- In a saucepan, combine milk, tapioca, sugar and egg; let stand 5 minutes. Cook and stir over medium heat until mixture comes to a full boil; remove from heat. Stir in vanilla and bananas. Cool for 20 minutes. Serve warm or cold.

BANANA & ORANGE SALAD
I just got this in my email box, it's from my cousin in Texas. I can't use it with all the sugar but it certainly sounds like it will make you go mmmmmmmmmmmmm. I couldn't just delete it so I'm passing it along the all the great Zaar folks. It can't take any more than 10 mins to put together and cook time is chill time. I'm not sure of the weight of a standard can of m. oranges so I'm guessing. If anyone tries this I'd love to know what you think and if it's no good I'll yell at Trisha for you!

- Mix tapioca, sugar and water in medium saucepan. Let stand 5 min. Bring to full boil on medium heat, stirring constantly. Remove from heat. Stir in orange zest and juice.
- Pour into medium bowl. Place plastic wrap directly on surface of tapioca.
- Refrigerate 1 hour or until cooled. (Tapioca thickens as it cools.) Gently stir in whipped topping. Spoon into 6 dessert dishes. Store leftover dessert in refrigerator.

- Finely grate enough orange zest to measure 1 teaspoon. Cut remaining peel and white pith from oranges with a sharp knife, then discard. Cut segments free from membranes, letting them drop into a bowl, then squeeze enough juice from membranes to measure 3 tablespoons, adding it to segments. Add liqueur and 2 tablespoons sugar and toss with segments. Let macerate 20 minutes.
- While orange segments macerate, cook tapioca, milk, grated zest, 1/3 cup sugar, and 1/8 teaspoon salt in a heavy medium saucepan over medium heat, stirring, until sugar has dissolved. Bring to a boil, stirring occasionally, then reduce heat to medium-low and gently simmer, stirring constantly, until thickened, about 10 minutes. Drain orange segments in a sieve over saucepan to add liquid to tapioca (reserve segments), then gently simmer, stirring constantly, until tapioca pearls are completely translucent, 20 to 30 minutes.
- Whisk together egg yolks in a metal bowl, then gradually whisk hot pudding into yolks. Quick-chill by setting bowl in an ice bath and stirring occasionally until cool (pudding will be very thick).
- Beat egg whites with a pinch of salt using an electric mixer until they just hold soft peaks. Add remaining tablespoon sugar and beat whites until they just hold stiff peaks.
- Beat cream in another bowl with cleaned beaters until it just holds stiff peaks. Fold whites, then cream, into pudding gently but thoroughly.
- Divide orange segments among 6 glasses, ramekins, or small bowls and top with pudding. Chill, covered, at least 1 hour.

- Mix juice and tapioca in medium bowl. Let stand 5 minutes. Meanwhile, melt butter in large saucepan on medium heat. Add pineapple, brown sugar, nutmeg and salt; mix well. Cook 5 minutes, stirring frequently.
- Add tapioca mixture; stir. Bring to a full boil , stirring constantly. Remove from heat. Cool 20 minutes. Transfer to serving bowl. Cover and refrigerate several hours or until chilled.
- Spread whipped topping over pudding just before serving; sprinkle with coconut.

- Mix Jello with 1 cup boiling water. Mix well. Put in refrigerator to set.
- Mix tapioca pudding with 3 cups water.
- Cook over medium until boiling. Set aside.
- When cooled, add to Jello setting in refrigerator.
- Add drained mandarin oranges, crushed pineapple, and sliced bananas.
- Put in refrigerator until set.

- Peel the bananas. Cut them in half horizontally. Cut each piece in half again, vertically. Each banana makes four long pieces. Set aside.
- Prepare the tapioca pearls. Bring 10 cups of water to a boil in a big pot. Add the tapioca pearls to the boiling water (use one hand to pour in the tapioca and the other hand to swirl the water around with a wooden spoon - this keeps the tapioca from clumping together as it cooks). Put a lid on the pot and turn the heat to low. Cook for 10 minutes. You can tell it is done when the tapioca pearls are nearly translucent and you can just see a tiny white dot in the center of each pearl. Don’t overcook, or the tapioca will completely melt.
- Strain the tapioca under cold running water. This will stop the cooking and remove excess starch (which makes the tapioca pearls stick together). Set aside and let drain.
- Prepare the tapioca sticks (bot khoai), if using. Bring 5 cups of water to a boil (rinse and reuse the pot you used to cook the tapioca pearls). Add the tapioca sticks to the boiling water and cook over medium heat for 12 minutes. They are finished they are completely translucent. Do not overcook. Strain under cold running water. Set aside and let drain.
