CARAMELIZED ONIONS ON THE GRILL
These are absolutely melt in your mouth delicious! You can make them on the grill or in the oven. Even friends of ours that don't care for onions loved these! I would recommend that you use 1 large onion for every 2 people. Some people want one whole onion to themselves so you might want to make some extra! They are also good heated up the next day but we rarely have any extra!

Steps:
- Preheat an outdoor grill for medium heat.
- Place the onion wedges on a sheet of heavy duty aluminum foil. Dot with butter, then sprinkle with bouillon, garlic salt, and pepper to taste. Fold the aluminum foil into a packet, leaving only a small hole at the top to allow steam to escape.
- Place packet on preheated grill, and cook until the onions have softened, and cooked to a deep, rich brown, 45 minutes to 1 hour depending on the temperature of the grill. Stir the onions after the first 30 minutes, or as needed to keep from burning.

WHOLE GRILLED ONIONS
Steps:
- Gather the ingredients.
- Slice the stem from the onions and peel them, leaving the root intact. Slice a bit of the root off, just enough to provide a flat end so they won't wobble.
- Working from the top and using a sharp knife, a small melon baller, or apple corer, cut the cores from the onions. You should have a cavity about 1-inch across and almost through to the bottom of the onion without piercing it. Use the cored-out onion pieces for another purpose.
- Salt and pepper the onion cavities and then fill each onion with 1 tablespoon of butter. Sprinkle the onions lightly with a bit more salt and pepper.
- Wrap the onions in foil, gathering at the top and twisting to seal.
- Cook in a closed grill for about 1 to 1 1/2 hours over medium indirect coals .
- Untwist top of foil and spread open about 10 minutes before serving.
- Leave them on the grill for more smoked flavor, if you like.
- Remove the onions to a serving platter.

- Heat your cast iron skillet over medium heat.
- Add the butter, onions and kosher salt. Cook stirring every few minutes.
- As soon as the onions start to look a little dry, add in a few tablespoons of water. This will both prevent the onions from drying out and keep them juicy and cooking at an even temperature. The water will evaporate as it cooks, leaving you with perfectly juicy onions. I usually add water twice during the cooking process.
- Continue to grill the onions uncovered until they are soft and golden brown. About 30 minutes.
- Serve warm or cold.

WHOLE ONIONS FOR THE GRILL
Choose large onions for this, of coarse you may increase or reduce amounts to as many onions as desired, I have listed the garlic powder as optional we are a family of garlic-lovers so I add it in, chicken bouillon may be used in place of the beef --- the onions may be completely prepared well in advance, wrapped in foil and refrigerated until ready to grill, you can also make these in the oven :)

- Slice a small section off of one end of each of the onions, then make a small hole into the center.
- Fill the center hole with 1 bouillon cube and 2 tablespoons butter.
- Sprinkle the tops with fresh ground black pepper and a small amount of garlic powder if desired (do not add any extra salt).
- Replace the tops of the onions.
- Wrap each onion in heavy foil.
- Place the onions on a preheated grill over indirect heat.
- Close the lid.
- Cook for about 1 hour or until the onions are tender (cooking time will vary slightly depending on the size of onions that you use).

- Set outdoor grill to medium.
- Place the onion wedges on a large square of heavy-duty foil.
- Dot the top of the wedges with butter cubes, then sprinkle with bouillon powder, garlic powder, salt and ground black pepper.

- Pat the steak dry thoroughly with paper toweling. Cover with plastic wrap and rest at room temperature for 30 minutes. Liberally salt and pepper both sides of the steak right before grilling.
- Meanwhile, prepare your charcoal grill. Light the coals using a chimney starter. When the coals are thoroughly ashed over, dump them into the kettle of your grill on one side for indirect heating. Place the grate on top and clean well.
- Place the steak directly over the hot coals. Grill for 1-3 minutes, until the steak develops a nice sear. Flip and repeat on the other side.
- Move the steak to the indirect side of the grill (but still close to the coals). Grill, flipping once, until done to your liking (see Recipe Notes #3-4).
- When the steak is approximately 5 minutes away from being done, heat a cast-iron skillet over high heat on the stovetop. When the skillet is hot, reduce the heat to medium-high and add the butter. When the butter is melted, tilt the pan to spread the butter and olive oil all around the skillet. Add the onions and mushrooms. Saute, stirring frequently, until the vegetables are softening and turning a light, golden-brown color.
- Remove the steak from the grill when it reaches your desired doneness. Rest for a minimum of 10 minutes. Slice the steak against its grain and serve with the mushrooms and onions.

- Bring the beer to a simmer in a large saucepan over medium-high heat. Add in the 4 bratwurst sausages (brats) and just enough water so that the brats are just covered.
