1 (3 pound) boneless beef eye of round roast
½ teaspoon ground black pepper
2 tablespoons vegetable oil
1 small onion, finely chopped
3 cloves garlic, minced
1 tablespoon finely chopped fresh parsley
1 (26 ounce) carton Swanson® Beef Stock or Swanson® Unsalted Beef Stock
¼ cup all-purpose flour

Steps:

  • Heat the oven to 325 degrees F. Place the beef, fat-side up, onto a rack in a shallow roasting pan. Season the beef with half the black pepper.
  • Roast for 1 1/2 hours for medium-rare or until desired doneness. Remove the beef from the pan. Let the beef stand for 15 minutes before slicing.
  • Add the oil to the roasting pan and heat over medium heat. Add the onion, garlic, parsley and remaining black pepper to the pan. Cook and stir until the onion is tender-crisp, scraping up the browned bits from the bottom of the pan.
  • Stir the stock and flour in a large bowl until smooth. Add the stock mixture to the pan. Cook and stir until the mixture boils and thickens. Serve the gravy with the beef.

4 thick generous slices beef shin, about 700g/1lb 9oz
plain flour, for dusting
2 tbsp sunflower oil
3 medium onions, halved and thinly sliced
2 tsp caster sugar
6 garlic cloves, sliced
700ml beef stock (made with 2 cubes)
3 tbsp Worcestershire sauce
4 large flat mushrooms, thickly sliced
chopped parsley, to serve

Steps:

  • Dust the beef in flour, then set aside. Heat the oil in a large pan. Add the onions and fry for 5 mins. Add the sugar and cook for 5-10 mins, stirring frequently, until the onions are caramelised. Stir in the garlic for the final few mins.
  • Pour in the stock and stir in the Worcestershire sauce. Add the beef and mushrooms, then season, adding plenty of black pepper. Cover and cook gently for 2 hrs until the meat is tender. Can be chilled for up to 3 days. To freeze, cool and store in freezer bags. Thaw and reheat in a pan. Serve scattered with parsley.

4 lbs boneless chuck roast
2 teaspoons salt
3/4 teaspoon black pepper
2 tablespoons olive oil
2 lbs onions, halved lengthwise and thinly sliced
2 large garlic cloves, chopped
1 tablespoon tomato paste
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1 1/2 cups dry white wine
1 cup water

Steps:

  • Put oven rack in middle position and preheat oven to 325°F.
  • Pat beef dry and rub all over with 1 1/2 tsp salt and 1/2 tsp black pepper.
  • Heat oil in an ovenproof 5 quart wide heavy pot over moderately high heat until hot but not smoking.
  • Brown beef on all sides, about 15 minutes total.
  • Transfer beef to a plate.
  • Add onions to pot and sauté over moderately high heat, stirring frequently until pale golden, about 10 minutes.
  • Add garlic, tomato paste, thyme, rosemary, and remaining 1/2 tsp salt, 1/4 tsp pepper and cook stirring, two minutes.
  • Add wine and water and bring to a boil.
  • Return beef to pot, then cover tightly and braise in oven, turning once after 1 hour, until beef is very tender, 2 1/2 to 3 hours total.
  • Let beef stand, uncovered, in onion gravy about 15 minutes.
  • Cut into 1/2 inch thick slice and serve with onion gravy.

3- 3 1/2 lb Beef chuck pot roast (boneless)
6 tbsp olive oil
1 tsp cumin (divide)
1 tsp paprika (divide)
2 tsp salt (divide)

1 large onion (divided)
2 garlic cloves (divide)
3/4 cup red wine
1/4 cup water

Steps:

  • Cut the beef into large chunks.
  • Heat olive oil in a skillet over high heat. Brown the beef chunks. Then remove them and set aside.
  • Cook the onions in the same skillet until they are fully cooked (or translucent).
  • In a Dutch oven pot, begin layering the ingredients in the following order; 1/2 browned beef chunks, 1/2 tsp cumin, 1/2 tsp paprika, 1 tsp salt, 1/2 tsp black pepper, then half the sautéed onion and half the garlic (pressed).
  • Repeat step 4 with the remaining beef chunks.

1 grass-fed chuck roast (about 2 pounds)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 teaspoons olive oil
2 stalks celery, chopped (about 3/4 cup)
2 cloves garlic, minced
1 1/2 medium white onions, diced (about 1 1/2 cups)
6-8 button mushrooms, stems removed, chopped (about 1 cup)
1/2 teaspoon dried rosemary (or 1 teaspoon chopped fresh)
1/2 teaspoon dried thyme (or 1 teaspoon chopped fresh)
1 24-ounce can whole tomatoes, roughly chopped
1/2 cup red wine

Steps:

  • Preheat oven to 225˚F. Pat meat dry with paper towels. Season meat on all sides with salt and pepper.
  • Heat olive oil in a large Dutch oven or some other oven-safe pot with a cover. Once hot, add seasoned roast and sear each side well, until browned, about 4-5 minutes per side. Once the meat is fully browned, transfer it from the pan to a platter.
  • Add chopped celery, onion, mushrooms, garlic, rosemary, and thyme to the pan. Place roast on top of the vegetables.
  • Pour 1/2 cup red wine and tomatoes on top. Cover and roast in the oven for 1 hour.
  • Flip roast over. Replace the lid and continue to roast for 1 hour.
  • Raise oven temperature to 325˚F. Continue to roast, for 1 hour.
  • If meat is tender and falling apart after three hours in the oven, it's done. The internal temperature should read 160˚F on a meat thermometer. Otherwise, you can reduce the oven temperature to 225˚F and give it another hour or so, checking with the thermometer for doneness every 20 minutes or so.

Silverside and topside are cheaper and leaner cuts of meat, well-suited to slow-cooking. The stock and juices make a great sauce when combined with caramelised onions

1kg silverside or topside of beef with no added fat
2 tbsp olive oil
8 young carrots, tops trimmed (but leave a little, if you like)
1 celery stick, finely chopped
200ml white wine
600ml rich beef stock
2 bay leaves
500g onion
a few thyme sprigs
1 tsp butter
1 tsp light brown or light muscovado sugar
2 tsp plain flour

Steps:

  • Heat oven to 160C/140C fan/gas 3. Rub the meat with 1 tsp of the oil and plenty of seasoning. Heat a large flameproof casserole dish and brown the meat all over for about 10 mins. Meanwhile, add 2 tsp oil to a frying pan and fry the carrots and celery for 10 mins until turning golden.
  • Lift the beef onto a plate, splash the wine into the hot casserole and boil for 2 mins. Pour in the stock, return the beef, then tuck in the carrots, celery and bay leaves, trying not to submerge the carrots too much. Cover and cook in the oven for 2 hrs. (I like to turn the beef halfway through cooking.)
  • Meanwhile, thinly slice the onions. Heat 1 tbsp oil in a pan and stir in the onions, thyme and some seasoning. Cover and cook gently for 20 mins until the onions are softened but not coloured. Remove the lid, turn up the heat, add the butter and sugar, then let the onions caramelise to a dark golden brown, stirring often. Remove the thyme sprigs, then set aside.
  • When the beef is ready, it will be tender and easy to pull apart at the edges. Remove it from the casserole and snip off the strings. Reheat the onion pan, stir in the flour and cook for 1 min. Whisk the floury onions into the beefy juices in the casserole, to make a thick onion gravy. Taste for seasoning. Add the beef and carrots back to the casserole, or slice the beef and bring to the table on a platter, with the carrots to the side and the gravy spooned over.

3 tbsp. Olive Oil
4 whole Onions, Peeled And Sliced Thick

1/2 tsp. Rosemary Leaves

Steps:

  • Preheat oven to 275 degrees.Heat oil in a large dutch oven over high heat.Season meat generously with salt and pepper. Sear meat on both sides, about 2 minutes per side. Remove meat from pan. Lower heat to medium.Throw in onions and garlic. Stir for 30 seconds. Pour in beer, and add thyme, rosemary, and salt to taste---about 1 teaspoon. (Do not undersalt!) Add meat to pot, put to submerge, and place lid on pot.Cook in oven for 2 1/2 to 3 hours, or until meat is fork tender and falling apart. Shred meat with two forks. Serve on dinner plates and spoon juice and onions over the top.Serve with very crust bread to sop up the juice.

One 3-pound trip-tip roast

2 yellow onions, sliced
1 package onion soup mix
2 sprigs fresh thyme

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the oil in a Dutch oven or heavy-bottomed pot over medium-high heat. Season the roast lightly with salt and pepper. Put the roast fat-side down in the pot. Cook until the bottom is browned, about 3 minutes, then carefully flip the roast to brown on the other side, an additional 3 minutes. Remove the meat to a plate.
  • Drain off all but 2 tablespoons of fat from the pot. Add the onions and stir periodically until they soften and start to brown, about 8 minutes. Stir in the onion soup mix, thyme, bay leaves and 2 cups water. Add the meat with all its juices back to the pot. Bring the liquid to a simmer. Cover, transfer the pot to the oven and cook until the meat is very tender but still sliceable, 2 1/2 to 3 hours.
  • Transfer the meat to a cutting board. Discard the thyme sprigs and bay leaves from the braising liquid and skim off any excess fat. Slice the meat across the grain into slices 1/2 to 1 inch thick, spoon the braising liquid over and serve hot.

COFFEE-BRAISED POT ROAST WITH CARAMELIZED ONIONS

2 tablespoons balsamic vinegar
2 tablespoons cornstarch mixed with 2 tablespoons water

Steps:

  • Preheat oven to 300 degrees F.
  • Season beef with salt and pepper. Heat 2 teaspoons oil in a Dutch oven or soup pot over medium-high heat. Add beef and cook, turning from time to time, until well browned on all sides, 5 to 7 minutes. Transfer to a plate.
  • Add the remaining 2 teaspoons oil to the pot. Add onions, reduce heat to medium and cook, stirring often, until softened and golden, 5 to 7 minutes.   • Meanwhile, skim fat from the braising liquid; bring to a boil over medium-high heat. Add the cornstarch mixture and cook, whisking, until the gravy thickens slightly, about 1 minute. Season with pepper. Carve the beef and serve with gravy.
  • Slow-Cooker Variation:
  • In Step 2, transfer the browned beef to a slow cooker. In Step 3, use just 1/2 cup coffee. Add the onion mixture to the slow cooker. In Step 4, cover and cook until beef is tender, 4 1/2 to 5 hours on High or 7 to 8 hours on Low. In Step 5, pour the liquid into a medium saucepan and continue as directed.

  • Preheat oven to 325°F.

2-3 lb chuck roast (as marbled as you can find)
6 medium carrots, peeled and sliced
2 yellow onions, sliced thinly
5 clove garlic, crushed
2 c celery, chopped
5 red bliss potatoes, cubed
3 c beef stock
1 c cream of mushroom soup, undiluted
2 Tbsp olive oil
1 1/2 Tbsp balsamic vinegar
1/2 c red wine, (use whatever you drink )
3 Tbsp worcestershire sauce
3 bay leaves
2 1/2 Tbsp instant brown gravy mix (about one 0.7 oz pack)
1 Tbsp garlic salt
2 c fresh parsley, chopped
salt and pepper to taste

Steps:

  • 1. Preheat oven to 350'F (Let chuck roast sit on counter for at least one hour if it was previously chilled in the fridge. )
  • 2. With your stove burner set to medium-high heat, in a dutch oven or heavy roasting pan add your olive oil.
  • 3. While your olive oil is reaching smoking temperature, liberally rub the chuck roast with salt, pepper and garlic salt.
  • 4. Once oil has reached smoking temperature, sear your chuck roast off in the pan on all sides. Don't move the roast around while searing or you won't get good browning. (Pan should be hot enough to quickly sear the meat if it is on medium-heat and oil is just smoking.)
  • 5. Remove roast from pan and set aside once it is seared. (Meat should still be completely raw on the inside.)
  • 6. Turn burner heat down to medium heat.
  • 7. Deglaze pan with balsamic vinegar.
  • 8. Add your garlic and onions to pan. Caramelize them gently. DO NOT over brown or burn.
  • 9. Add celery and carrots to the pan, along with the red wine, bay leaves, parsley and Worcestershire sauce. Stir, then sweat covered with a lid in the pan for about 10 minutes.
  • 10. Meanwhile, in a mixing bowl, combine beef stock, mushroom soup and gravy mix. Stir until completely incorporated. Set aside.
  • 11. Once veggies are done sweating, remove lid from pan and add the roast back to the pan.
  • 12. Pour beef stock mixture over the roast.
  • 13. Salt and pepper pan to your preference.
  • 14. Cover pan and leave it on the burner, set at medium, for 10-15 minutes. (This will allow the temperature of the liquids to raise before you put the entire pan in the oven. This is important for keeping the meat tender. Ovens cook from outside in making all the surface area of the pot heat first. But heating on a burner heats from the bottom up, heating only the liquid and not the entire pan and all the interior surfaces. Keeps the meat from seizing up.)
  • 15. With the pan still covered, place in the oven for 3 hours.
  • 16. Remove lid carefully, and cook for an additional 20-30 minutes uncovered.
  • 17. Let meat rest 10-15 minutes before serving. (Reserve any excess juices from cooking, it makes a great soup stock, or gravy later.)
