ONE PAN MOROCCAN CHICKEN AND COUSCOUS



One Pan Moroccan Chicken and Couscous image

This is one of my favorite one pan dinners to date! It has a delicious blend of flavors and textures, it's a healthy dinner, and it's brimming with those irresistible deliciously spiced Moroccan flavors.

1 lb boneless, skinless chicken breasts, (diced into 3/4-inch pieces)
3 Tbsp olive oil, (divided)
1 tsp ground cumin, (divided)
1/2 tsp ground coriander, (divided)
1/2 tsp ground cinnamon, (divided)
Salt and freshly ground black pepper
1 large red bell pepper, (cored and chopped (1 1/2 cups))
3/4 cup chopped red onion
1 1/2 cups matchstick carrots
1 Tbsp minced garlic ((3 cloves))
1/4 tsp turmeric
1 1/2 cups low-sodium chicken broth
1/3 cup chopped dried apricots or golden raisins
1 cup dry Moroccan couscous
2 Tbsp fresh lemon juice
1/2 cup Fisher Sliced Almonds
2 Tbsp chopped fresh cilantro
2 Tbsp chopped fresh mint

Steps:

  • Heat 1 Tbsp olive oil in a non-stick 12-inch saute pan or deep skillet over medium-high heat.
  • Add chicken to pan season with salt and pepper, 1/2 tsp cumin, 1/4 tsp coriander and 1/4 cinnamon. Cook, turning occasionally, until cooked through, about 7 minutes.
  • Transfer chicken to a sheet of foil and wrap to keep warm. Heat remaining 2 Tbsp oil in skillet.
  • Add in bell pepper and onion and saute 5 minutes.
  • Add in carrots, garlic, remaining 1/2 tsp cumin, 1/4 tsp coriander, 1/4 tsp cinnamon and turmeric and saute 1 minute.
  • Add in chicken broth and apricots, season with salt and pepper to taste and bring to a boil (it shouldn't just simmer on the edges it should boil lightly in the center as well).
  • Stir in couscous then remove from heat and let rest 5 - 6 minutes until tender.
  • Stir in chicken and any accumulated juices, lemon juice, almonds, cilantro and mint (you can also add in little more broth if desired). Serve warm.

2 cups broccoli florets
1 (4 ounce) package sliced fresh mushrooms

Steps:

  • Heat butter and olive oil in a large skillet over medium heat until butter is melted. Add broccoli, mushrooms, onion, garlic, Italian seasoning, and crushed red pepper; saute for 2 to 3 minutes. Add shrimp, chicken, and couscous; stir to coat.
  • Add chicken broth and lemon juice and bring to a boil. Cover, reduce heat to low, and simmer until chicken and shrimp are cooked through and couscous has absorbed all the liquid and is tender yet firm to the bite, about 10 minutes.

Chicken Couscous One Pot image

This delicious Moroccan-inspired recipe is easy enough for a weeknight meal but elegant enough for company.

8 chicken thighs
2 teaspoons turmeric
1 tablespoon garam masala
2 tablespoons vegetable oil
2 onions, thinly sliced
3 garlic cloves, sliced
500 ml chicken stock
1/2 cup green olives
1 lemon
250 g couscous
1 bunch flat leaf parsley, chopped

Steps:

  • Toss the chicken thighs in half the spices and a pinch of salt until completely coated.
  • Heat 1 tablespoon of the oil in a large saute pan with a lid.
  • Fry the chicken, skin side down, for 10 minutes until golden brown, then turn over and cook for 2 more minutes before removing from the pan.
  • Pour the rest of the oil into the pan, then fry the onions and garlic for 8 minutes until golden.
  • Stir in the rest of the spices, then cook for 1 minute longer.
  • Pour over the chicken stock and scatter the olives.
  • Bring everything to a boil, turn down the heat, then sit the chicken, skin side up, in the stock.
  • Cover the pan with a lid, then simmer gently for 35 to 40 minutes, until the chicken is tender.
  • Lift the chicken onto a plate and keep warm.
  • Take the pan off the heat.
  • Stir in the juice of the lemon and couscous into the saucy onions in the pan. Top up with boiling water, if necessary, to cover the couscous.
  • Place the lid back on the pan, then leave to stand for 5 minutes until the couscous is cooked through.
  • Fluff through half of the parsley and lemon zest, then sit the chicken on top.
  • Scatter the remaining parsley and lemon zest on top before serving.

This satisfying yet super-healthy recipe is all cooked in one pan for minimum washing up

1 tbsp olive oil
1 onion, thinly sliced
200g chicken breast, diced
good chunk fresh root ginger
1-2 tbsp harissa paste, plus extra to serve
10 dried apricots
220g can chickpeas, rinsed and drained
200g couscous
200ml hot chicken stock
handful coriander, chopped, to serve

Steps:

  • Heat the olive oil in a large frying pan and cook the onion for 1-2 mins just until softened. Add the chicken and fry for 7-10 mins until cooked through and the onions have turned golden. Grate over the ginger, stir through the harissa to coat everything and cook for 1 min more.
  • Tip in the apricots, chickpeas and couscous, then pour over the stock and stir once. Cover with a lid or tightly cover the pan with foil and leave for about 5 mins until the couscous has soaked up all the stock and is soft. Fluff up the couscous with a fork and scatter over the coriander to serve. Serve with extra harissa, if you like.

4 skin-on chicken leg quarters
1 tablespoon kosher salt, plus more to taste
pepper, to taste
10 cloves garlic, minced, divided
1 tablespoon fresh thyme leaf, chopped
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh oregano, chopped
4 tablespoons olive oil, divided
2 bunches rainbow swiss chard
½ cup sugar
1 cinnamon stick
4 whole cloves
2 teaspoons mustard seed
1 teaspoon whole allspice
2 bay leaves, crushed
1 teaspoon whole black peppercorn
2 teaspoons coriander seed
½ teaspoon red pepper flakes
1 cup white wine vinegar
½ cup water
1 large yellow onion, chopped
¼ cup lemon juice
2 cups israeli couscous
3 cups chicken stock
2 tablespoons caper
4 tablespoons crumbled feta cheese, fresh, for serving
fresh parsley, chopped, for serving

Steps:

  • In a large bowl, season the chicken legs with salt, pepper, 5 cloves of minced garlic, the thyme, rosemary, oregano, and 2 tablespoons of olive oil. Toss to fully coat the chicken, then cover with plastic wrap and marinate in the refrigerator for 30 minutes.
  • Prepare the Swiss chard. Cut out the thick stems. Stack the leaves, roll up, then thinly slice into ribbons. Slice the roll in half. Transfer to a bowl and set aside. Slice the chard stems on the bias. Transfer to a medium glass or nonreactive metal bowl and set aside.
  • In a large skillet, combine the sugar, 1 tablespoon of salt, the cinnamon stick, cloves, mustard seeds, allspice, bay leaves, peppercorns, coriander seeds, and red pepper flakes. Add the white wine vinegar and water, and stir well. Heat the pan over high heat, bring to a boil, and cook for 5 minutes.
  • Place a strainer over the bowl of sliced chard stems. Pour the boiling pickling liquid over the stems and discard the solids. Let the stems pickle until the liquid has cooled and the stems have softened, about 30 minutes.
  • Wipe out the skillet, then heat over medium-high heat with the remaining 2 tablespoons of olive oil until the oil is shimmering. Sear the chicken, skin-side down, until the skin is dark golden brown, 5-7 minutes. Flip and cook on the other side for another 5-7 minutes. Transfer to a plate and set aside.
  • Add the onion, remaining 5 cloves of minced garlic, salt, and pepper. Cook, stirring, until the onion is softened and golden brown, about 10 minutes.
  • Add the lemon juice, Swiss chard leaves, and couscous. Cook until the greens wilt, about 2 minutes.
  • Add the chicken stock and bring to a boil. Sprinkle in the capers and return the chicken to the pan, submerging in the cooking liquid. Cover, reduce the heat to low, and simmer for about 15 minutes, until the couscous has puffed up and become tender. Remove the pan from the heat.
  • Serve with the pickled chard stems, feta cheese, and parsley.
  • Enjoy!

2 tbsp harissa paste
1 tsp each ground cumin and ground coriander
2 red onions , halved and cut into thin wedges
2 skinless chicken breasts , cut into bite-sized chunks
1 small butternut squash , cut into 1cm chunks (no need to peel)
x cans tomatoes
zest and juice 2 lemons
200g cherry tomato , halved
140g couscous
small bunch coriander , roughly chopped

Steps:

  • Heat a large non-stick casserole dish or pan on the hob. Add the harissa, spices and onions, stir and cook gently for 10 mins until soft. Add chicken and brown for 5-10 mins. Add squash, stirring to combine, and a splash of water if it starts to stick. Cook for 5 mins more.
  • Tip canned tomatoes into the pan with ½ can of water, cover and simmer for 20-30 mins. Add the lemon zest and juice, cherry tomatoes, couscous and seasoning. Cover and turn off the heat. Leave on the hob for 10 mins, then stir through the coriander and serve.

1/2 cup soy sauce
6 tablespoons brown sugar
1 1/2 tablespoons sesame oil
1 1/2 inches gingerroot, peeled and grated
1 bunch scallion, half thinly sliced and half cut into 2-inch pieces
3 star anise (optional)
6 boneless skinless chicken thighs, trimmed and halved
salt
1 (10 ounce) box couscous
1 1/4 lbs baby bok choy, halved lengthwise and rinsed

Steps:

  • In a shallow baking dish, whisk together the soy sauce, brown sugar, sesame oil, and ginger; stir in the 2-inch scallion pieces and the star anise, if using. Season the chicken with salt and add to the marinade, turning to coat. Let marinate at room temperature for 30 minutes.
  • Line a footed metal colander with 2 layers of damp cheesecloth, allowing 2 inches of overhang. Place in a pot and add enough water to just reach the colander bottom. Bring to a simmer; have a small pot of boiling water on the side.
  • Pour the couscous into the colander. Place the chicken thighs on top in a single layer, pressing up the sides of the colander, if necessary; reserve the marinade. Cover and steam, adding more hot water as needed until the chicken is cooked through, 25 to 30 minutes.
  • Meanwhile, in a small saucepan, simmer the reserved marinade until thickened, about 4 minutes; strain.
  • When the chicken is almost done, scatter the bok choy on top, season with salt and steam for 3 minutes. Transfer the bok choy and chicken to a platter, drizzle with the marinade and top with half of the sliced scallions. Stir the remaining scallions into the couscous, season with salt and serve with the chicken.

  • Heat the oil in a large frying pan or cast iron pot. Season the chicken pieces with the salt and pepper, then place in the hot pan and brown the meat all over on a high heat (about 6-7 minutes).
  • Turn the heat down to medium and add the onion to the pan with the chicken, cook for 3-4 minutes, stirring occasionally until the onion starts to soften.
  • Add the garlic, cumin, paprika and celery salt and stir into the onions. Pour in the hot stock and bring to the boil, place a lid or some foil on the pan and simmer for 10 minutes.
  • Take the lid off and take out the largest piece of chicken, make a cut into the fattest piece of the meat and check it's no longer pink inside. If it's still pink cook for a further 5 minutes and check again. Once cooked through, pour in half the lemon juice and add the chopped peppers to the pan. Pour the couscous into the stock - making sure it's all submerged and evenly distributed, then place the lid or foil back on and turn the heat down to very low. Cook for 5 minutes, then turn off the heat.
