Beef and Barley Soup is an easy one-pot dinner perfect for the fall and winter. Full of flavorful and tender beef, healthy veggies, and fiber-rich barley.

1 tablespoon vegetable oil
2 pounds beef stew meat (, or cut up chuck roast)
2 teaspoons kosher salt
1 teaspoon coarse ground black pepper
1 yellow onion (, chopped)
8 cups beef broth
2/3 cup pearl barley
2 teaspoons dried thyme
3 stalks celery (, sliced)
2 carrots (, sliced)

Steps:

  • Add oil to a large pot or dutch oven on high heat.
  • Season beef with salt and pepper.
  • Add to the pot and sear on all sides, about 8-10 minutes.
  • Add in the onions and cook for 4-5 minutes, until translucent.
  • Add in beef broth, barley, and thyme and bring to a boil, then reduce to low heat.
  • Cook, uncovered, for 1 hour.
  • Add in the celery and carrots and cook for 15 minutes, then serve.

This is a really easy and good soup. Add more beef broth if looking for a very beefy taste and thicken up with cornstarch & beef broth. My family just loves this dish and ask for it frequently. The main thing to remember is to NOT STIR the soup until close to the end of cooking time.

1 lb cubed beef stew meat
2 cups carrots, sliced thin
1 cup celery, thin sliced
3/4 cup chopped green pepper
1 large onion, diced
1/2 cup barley
1/4 chopped parsley
4 beef bouillon cubes
1 (10 ounce) can beef broth
2 teaspoons salt
3/4 teaspoon dried basil
2 tablespoons catsup
5 cups water

Steps:

  • Layer in crock pot.
  • Vegetables and meat.
  • Barley, beef broth, and spices.
  • Cover with water.
  • DO NOT STIR.
  • Cook on low 10 hours; high 6 hours, or combination of above.

1 pound beef stew meat, cut into bite-sized pieces
salt and pepper to taste
3 tablespoons avocado oil, divided, or as needed
8 ounces sliced cremini mushrooms
1 ½ cups roughly chopped carrots
1 ½ cups roughly chopped onions
1 cup roughly chopped celery
2 cloves garlic, minced
½ cup dry red wine
⅔ cup pearl barley, rinsed
1 tablespoon tomato paste
2 bay leaves
½ teaspoon ground thyme
½ teaspoon beef bouillon base
1 pinch red pepper flakes, or more to taste
6 cups no-salt-added beef broth

Steps:

  • Generously season beef with salt and pepper.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat 1 tablespoon avocado oil and tilt the pot to distribute the oil evenly. Once oil shimmers, add 1/2 the beef and cook until browned, about 5 minutes. Transfer browned beef to a bowl and repeat with remaining beef.
  • Heat another tablespoon oil in the Instant Pot®; when oil shimmers, add mushrooms. Cook mushrooms, stirring occasionally, until slightly brown, 4 to 5 minutes. Add mushrooms to the bowl with the beef. Add 1 tablespoon avocado oil to the pot and cook carrots, onions, and celery until onions begin to soften, about 5 minutes. Add garlic and cook until just fragrant, about 1 minute. Pour in wine to deglaze the pot, scraping up any browned bits, and cook until wine has almost evaporated, 3 to 5 minutes. Return browned beef and mushrooms to the pot. Stir in barley, tomato paste, bay leaves, thyme, bouillon base, red pepper flakes, and beef broth. Stir until well combined.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 15 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Remove and discard bay leaves. Taste and adjust seasoning with salt.

Very hearty, vegetable filled beef barley soup recipe. Tons of flavor. I ran a cafe and this soup was always gone right away. Low in fat, was actually a recipe for a nursing home. Sure doesn't taste like it! Please note that all the seasoning are dried as our local grocery store does not carry fresh herbs.

4 lbs ground beef
1 gallon water
4 ounces beef base
1 cup celery, chopped
1 cup carrot, chopped
3/4 cup onion, diced
2 1/2 lbs tomatoes, diced (I pureed)
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon marjoram
1/2 teaspoon dried thyme
1/4 cup Worcestershire sauce
0.667 (1 lb) bag pearl barley
1/8 teaspoon nutmeg
2 bay leaves
2 whole cloves

Steps:

  • Brown beef with onion.
  • Drain any excess fat & could rinse off if want to really get fat out.
  • Add to large pot with the water and beef base and seasonings.
  • Start heating it up while chopping all the veggies.
  • Add veggies as you go.
  • Rinse off the barley and put in the soup.
  • Let simmer very low for 2-3 hours for best results.
  • Will want to stir often as it will stick.
  • I often keep adding water and more beef base as needed to keep it to the right consistency because it will thicken up as the water evaporates while simmering.

I like to actually rinse the ground beef after it's browned. It is extra lean, but I always think if you can lower the fat and it still tastes great, then why not? Enjoy!

2 cups water
1/2 cup pot barley or 1/2 cup pearl barley
1 bay leaf
1 teaspoon dried thyme
