6 strips bacon, chopped
2 chicken breasts, sliced
5 oz spinach
4 cloves garlic
2 teaspoons salt
1 teaspoon pepper
5 cups milk
1 lb penne pasta, dry
1 cup parmesan cheese, grated

Steps:

  • Cook the bacon in a large pot over medium-high heat until crispy.
  • Add the chicken and cook until no pink is showing. Remove the chicken.
  • Cook the spinach, garlic, salt, and pepper with the bacon until the spinach has wilted.
  • Put the chicken back in, add the milk, then stir.
  • Bring the milk to a boil, then add the pasta.
  • Stir constantly for about 10 minutes until the pasta is cooked.
  • Add the parmesan, then mix until the cheese has melted. Serve!

2 cups milk
1 cup chicken stock
8 oz dried Fettuccine
3 tbsp unsalted butter
2 garlic cloves (minced)
1 tsp salt
¼ tsp cracked black pepper
⅓ cup grated parmesan cheese (plus more for garnish )

Steps:

  • Place all ingredients, except Parmesan, into a Dutch oven or large skillet.
  • Place pot over medium-high heat and bring mixture to a boil. Should take about 4 to 5 minutes to reach a boil.
  • Once liquid is boiling, reduce heat to medium and simmer for 15 to 20 minutes, stirring frequently, until most of the liquid has been absorbed and the pasta is al dente.
  • Remove from heat and stir in Parmesan until sauce is thick and creamy. Season with more salt and pepper as needed.
  • Top pasta with more Parmesan and serve.

1 lb shrimp, peeled and deveined
1 teaspoon salt
½ teaspoon black pepper
½ medium yellow onion, diced
1 medium tomato, diced
3 cloves garlic, minced
2 cups heavy cream
1 lb fettuccine, cooked
1 cup grated parmesan cheese
½ cup fresh parlsey, chopped

Steps:

  • In a large pot, cook the bacon over medium heat until crispy.
  • Add the shrimp, salt, and pepper and cook until the shrimp is pink and opaque. Remove the shrimp and bacon from the pot, leaving any fat from cooking the bacon behind.
  • Add the onions, tomatoes, and garlic to the pot and cook until the garlic is starting to brown.
  • Add the cream and bring to a boil.
  • Once the cream is boiling, add the fettuccine. Return the shrimp and bacon to the pan, along with the Parmesan cheese and parsley. Stir until the cheese melts and the sauce coats the shrimp and pasta nicely.

5 slices thick cut bacon
½ cup finely chopped onion
2 large cloves garlic, minced
8 ounces penne, rotini or rigatoni pasta
2 cups chicken broth
salt and pepper to taste
½ cup heavy cream
1 cup finely grated Parmesan cheese
1-2 teaspoons cornstarch
2 tablespoons chopped fresh parsley

Steps:

  • In a large skillet cook bacon until crisp. Set on paper towel to drain. Drain grease, reserving 1-2 tablespoons in pan. Cook onion over medium heat until soft and light brown (about 2 min) stir in garlic.
  • Add in pasta and broth and stir well. Bring to a boil, cover and reduce heat to a simmer. Cook for 13-15 minutes or until pasta is tender, stirring twice during cooking.
  • In a small bowl combine cornstarch with a very small amount of water and stir into pasta. Remove from heat and stir in cream and cheese until cheese has melted. Garnish with chopped bacon and parsley. Taste for salt and pepper and add accordingly.

90g bacon lardons
½ tbsp olive oil
1 medium courgette, coarsely grated
1 garlic clove, crushed
150g tagliatelle
1 tbsp drained capers
½ lemon, zested and juiced
20g pecorino, grated
2 handfuls of rocket

Steps:

  • Put the lardons in a pan and fry over a medium heat for 5 mins until crisp and golden. Remove from the pan and pour off any fat.
  • Heat the oil in the same pan and fry the courgette and garlic for 6-8 mins until lightly golden and most of the water has evaporated. Add the tagliatelle and pour in 400ml water. Stir until the pasta nests unravel, then cook uncovered for 7-9 mins, stirring frequently, until the pasta is al dente. Stir in the capers, lemon zest and juice, pecorino and lardons, adding a splash more water if it looks a little dry. Stir for a few seconds until the cheese starts to melt. Fold in the rocket until just starting to wilt, then serve.
