OH MY GOODNESS! COOKIES (OATMEAL COOKIES)
Infused with the flavours of California, this is not your traditional oatmeal cookie. We've cut the butter with nutritious avocado and added diced pear for moisture and flavour, making this cookie a wholesome treat for the whole family.

Steps:
- Preheat oven to 375°F (190°C). Beat avocado with butter and sugars until fluffy; beat in egg. Meanwhile, stir oats with flour, cinnamon, nutmeg, salt, baking soda and baking powder; add to avocado mixture, stirring until well combined. Stir in pear and raisins.
- Arrange oven racks in the upper and lower thirds of the oven. Drop heaping spoonfuls of the dough onto parchment paper-lined baking sheets. Bake batches, rotating pans once, for 20 to 22 minutes or until lightly browned all over. Transfer cookies directly to a rack to cool completely. Makes about 30 cookies.
- Tip: Cookies can be stored in an airtight container for up to two days or in the freezer for up to one month.

ALL-IN-ONE CHOCOLATE CHIP COOKIES
This is my all time favorite chocolate chip cookie recipe. I found it originally on the back of a package of Hershey Baking Pieces, which I don't think they even make anymore. I thought I lost the recipe there for a while but finally found it and was very happy. I'm posting the recipe on Zaar so I won't have to worry about losing it again. Oh, be sure to use real butter in this recipe.

Steps:
- Preheat oven to 375°F.
- In large bowl, beat butter, granulated sugar, brown sugar, vanilla and salt with electric mixer until creamy.
- Add eggs; beat well.
- Stir together flour and baking soda; gradually add to butter mixture, beating until well mixed.
- Stir in chocolate chips.
- Drop by rounded teaspoons onto ungreased cookie sheet.
- Bake 8-10 minutes or until set.
- Cool slightly; remove from cookie sheet to wire rack.
OATMEAL COOKIES FOR ONE OR TWO

- With a fork, whip together egg, butter, brown sugar, and vanilla. It will look lumpy. Don't worry about it! Just get the major lumps out. Stir in baking soda and flour. Stir in oats.
- Drop by scant tablespoonful onto lightly greased cookie sheet. Press to desired thickness. Bake at 350° for approximately 10 - 11 minutes. (Time depends on thickness).
- OPTIONAL ADD-IN IDEAS: 2 T mini chocolate chips; 2 T raisins; 2 T dried cranberries; 2 T finely chopped nuts.

- In a large saucepan, mix sugar and corn syrup and bring to a boil, stirring frequently. Boil for 1 minute.
- Remove from heat and blend in peanut butter.
- Add cornflakes, stirring gently to coat.
- Working quickly, drop mixture in 1/4 cup lumps, 2" apart onto countertop lined with waxed paper.
- Using fingers, shape each cookie into rounded mound as necessary.
- Let stand at room temp for 20-30 minutes to set.
- Store in airtight container at room temperature.

ONE COOKIE
Simple recipe for when you just want a cookie or two, (and don't want a whole batch waiting to get eaten!) It is easily adaptable to most any flavor; and also great to eat as dough (no eggs). I leave out the baking soda and salt because I don't care if my cookie rises, as long as it tastes good.

- Preheat toaster oven to 350.
- In a small bowl stir together butter, sugar, vanilla, and 1 tbsp of water with a fork till blended.
- Stir in flour (and salt and baking soda if desired.) You may need to stir in a little more water to get the correct consitency.
- Stir in additonal flavor: chocolate chips, oatmeal and cinnamon, peanut butter (reduce water,) maple flavor and white chocolate chips- the possibilities are endless!
- Drop onto a small pan and bake in your toaster for 10-15 minutes (you have to watch it carefully) till golden around the edges. If you want it chewy, eat it warm, if you want it crunchy, wait till it cools.
- Enjoy!
