Steps:
- Prepare the ribs (see below). Combine the brown sugar, chili powder, paprika, cumin, mustard powder and 2 tablespoons salt in a small bowl. Rub the ribs all over with the cut sides of the lemon and then the spice mixture and place in a large roasting pan or resealable plastic bag. Cover and refrigerate at least 2 hours or overnight.
- Meanwhile, soak the wood chips in water 1 hour, then prepare your grill for smoking, filling the smoker box with one-quarter each of the wood chips and apple.
- About 30 minutes before smoking, remove the ribs from the refrigerator and let stand at room temperature. Meanwhile, combine the apple juice, Worcestershire sauce and vinegar in a small spray bottle. Shake to mix.
- Once the grill reaches 250 degrees F, lightly brush the grates with vegetable oil and place the ribs on the cooler side of the grill, meat-side up. Spray with the apple juice mixture. Close the grill and let smoke 1 hour.
- Replenish the smoker box with another one-quarter each of the wood chips and apple. Flip the ribs so they're meat-side down with the opposite edge of the racks closer to the smoker box. Spray with the apple juice mixture; close the grill and let smoke 1 more hour. Repeat this process every hour until the ribs are dark brown and tender and the meat starts to shrink away from the bones, about 2 more hours. Remove the ribs from the grill and let rest 5 minutes before slicing.
- How to prep your ribs:
- Position the ribs meat-side down. Insert a paring knife under the membrane that covers the back of the rack. Loosen the membrane with the knife. Grab the membrane with your fingers and peel off completely.
BABY BACK RIBS, SMOKED TO PERFECTION
I like smoked ribs that are buttery and crisp on the outside, moist and tender on the inside, and stay on the bone. This is a variation of the popular 2-2-1 technique for smoking baby back ribs.

Steps:
- Place 3 fist-sized chunks of wood in a smoker and heat to 250 degrees F (121 degrees C).
- While the wood burns down, mix salt, pepper, garlic powder, onion powder, chili powder, and cumin together. Apply the rub to both sides of the ribs.
- Add ribs to the smoker, bone-side down, once a thin blue smoke appears. Smoke for 2 hours. Wrap ribs lightly in aluminum foil to retain juices. Continue smoking for 1 1/2 hours at 225 to 250 degrees F (107 to 121 degrees C).
- Remove foil and continue to smoke until meat is tender but still stays on the bone, about 1 hour more, brushing lightly with barbeque sauce in the last 15 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

SWEET AND SMOKY BABY BACK RIBS
Steps:
- Remove the thin papery skin on the back of each rack of the ribs or ask your butcher to do it. (Pull it off in a sheet with your fingers, using a corner of a dish towel to gain a secure grip.) Place the ribs in a roasting pan and pour the bourbon over them. Let marinate in the refrigerator for 1/2 hour, turning the ribs several times.
- Meanwhile, combine the ingredients for the rub in a bowl and stir to mix. Pour off and discard the bourbon. Sprinkle the ribs on both sides with 2/3 of the rub, patting it in with your fingers. Let the ribs marinate for 30 minutes, while you light your grill.
- Set up your grill for indirect grilling and smoking, using wood chips and adjust the heat to 350 degrees. Arrange the ribs on a rack in the center of the grill away from the heat and cook until very tender and the meat has pulled away from the ends of the bones, 1 1/4 to 1 1/2 hours. The last 15 minutes, brush the ribs with 1/3 cup sauce. Sprinkle with the remaining rub. Serve the remaining barbecue sauce on the side.
SMOKY BABY BACK OVEN RIBS RECIPE BY TASTY

- Preheat the oven to 300˚F (150°C). Arrange a rack in the center of the oven.
- Using a paring knife, cut a small slit in the membrane of the ribs. Slide the blade underneath the membrane and over the bone. Lift the membrane with the knife until it tears away from the bone. Grip the released membrane with a paper towel or kitchen towel and pull away to remove.
- Line a baking sheet with aluminum foil and arrange the ribs in the center. Season the ribs on both sides with the smoky spice blend and salt. Tightly wrap the ribs in foil.
- Transfer the ribs to the oven and cook for 2 hours and 40 minutes to 3 hours, until the meat is tender and falling off the bone.
- While the ribs are cooking, make the smoky barbecue sauce: In the bowl of a food processor, combine the ketchup, honey, Dijon, Worcestershire sauce, apple cider vinegar, onion, and smoky spice blend. Process on high speed for 45-60 seconds, until the onion is completely broken down. Transfer the sauce to a bowl and refrigerate until ready to use.
- Remove the ribs from the oven and turn the broiler on high.
- Unwrap the ribs and generously baste the tops with the barbecue sauce. Return the ribs to the oven and broil for 1-2 minutes, until the sauce is beginning to caramelize.
- Remove the ribs from the oven and baste again with more barbecue sauce.
- Serve the ribs with more barbecue sauce on the side.

BABY (GOT) BACK RIBS
An oven cooking method for ribs where the meat literally jumps off the bones. This recipe simply gives a cooking method for ribs and allows you to season and sauce them however you want.

Steps:
- Rinse off ribs and pat dry.
- I recommend cutting the rack in half or into thirds to make moving from pan to plate when cooked easier. You may also remove the membrane if desired.
- Season ribs with desired dry rub. At this point you can allow ribs to sit overnight for the rub to be absorbed better, however this isn't necessary.
- Preheat oven to 250 degrees.
- Use a deep pan with a cooking rack in it and pour water into pan. Do not allow water to reach the rack.
- Put ribs on the rack so they sit above the water.
- Cover the pan with two layers of aluminum foil and make a tight seal around the edges.
- Put the pan in the oven and cook for 6 to 8 hours for ribs that will fall apart and need to be eaten with a fork. Cook 4 to 5 hours for ribs that will be very tender but remain on the bone.
- When done cooking for desired length of time remove from oven and remove foil. CAREFUL the pan will have lots of very hot steam built up and it can easily burn you. I recommend using tongs to pull the foil back.
- Turn your broiler on to high and have your oven rack in the upper half of the oven.
- Leave ribs in the pan and brush with your favorite barbeque sauce.
- Place the pan of ribs under the broiler and broil until the sauce starts to caramelize. Keep an eye on it to make sure it doesn't burn.
- When the sauce has fully caramelized remove from the oven and serve.

This recipe won the GRAND PRIZE in the Just A Pinch Grill & WIN! Recipe Contest! This rub is flat out one of the most delicious rubs I've ever had. The cumin added a wonderful smokiness, and the ribs were perfectly tender. A real winner!

- Rub a generous amount of rub on ribs. Make sure they are evenly coated. Wrap ribs with plastic wrap and refrigerate over night.
- Prepare Grill: I use a propane powered smoker. Soak wood chips for at least 30 minutes. I use a mixture of hickory and oak chips. Fill the water pan with apple cider, beer or liquid of choice. Smoker temperature should be between 250-275 degrees. (If using a charcoal grill, place charcoal and/or wood chunks on one side of the grill and place the water pan underneath the the ribs on the grill rack. Maintain the grill temperature by changing out charcoal and wood as needed.)
- Baste ribs after the first hour as needed, to keep the ribs nice and moist. Change wood chips every 1 1/2 hours. Smoke for 4 hours until ribs are tender. Remove from smoker and cover with foil.

- RIBS: Using a sharp knife, diamond score the membrane on the back side of the ribs.
- Rub both sides with BBQ seasoning, pressing the seasoning into the meat.
- Preheat the oven to 325F.
- Lay the ribs, meat side down, in a roasting pan.
- Lay 3- 4 orange slices on the back of each rib.
- Pour in beer& cover with lid or aluminum foil.
- Braise ribs in the oven for 2- 2 1/2 hours or until tender.
- Remove from oven& allow to cool.
- SAUCE: Fry diced bacon in a medium saucepan over medium heat until its half cooked.
- Add garlic, onion& jalapenos and continue to cook, stirring occasionally, until onions are tender.
- Pour beer into pan, stirring to loosen flavourful bits on the bottom.
- Bring mixture to a rolling boil; reduce heat to medium low& continue to boil until reduced by half.
- Add remaining ingredients& return to a boil; reduce heat to low& simmer, stirring occasionally, for 15 minutes.
- Seasonwith salt& set aside.
- GRILLING: Preheat grill to medium high.
- Remove ribs from pan, discarding orange slices& braising liquid.
- Grill ribs for 6- 8 minutes per side, until lightly charred.
- Baste both sides with reserved sauce.
- Turn grill heat down to medium low, close lid& allow ribs to slow roast for 10- 15 minutes until sauce is sticky& bubbling.
- Cut between every 3rd rib& toss with remaining sauce before serving with LOTS of damp finger towels.
SMOKED BABY BACK RIBS
Using the generic "pork ribs" because baby backs are so enormous and meaty these days that there's really no difference in cooking them and spareribs. Never gotten less than rave reviews for these smoked ribs, and neither will you.

- Remove silver skin from the back of each rack. Rub each rack with 1 teaspoon salt and let sit for 20 minutes.
- Slather 3 tablespoons mustard on 1 rack, then shake 1/3 cup BBQ rub on top; rub in on all sides until evenly coated. Repeat on the second rack and refrigerate both racks, covered, 8 hours to overnight. Set aside remaining BBQ rub.
- Remove ribs from the refrigerator and bring to room temperature, 20 to 30 minutes. Spread the remaining 1/3 cup rub over the ribs.
- Meanwhile, mix dry wood chips with charcoal in a smoker and preheat, according to manufacturer's instructions, until temperature is a steady 225 degrees F (107 degrees F).
- Place a water pan on the smoker (or use the smoker's water tray, if it has one) and add water to the depth of the fill line. Place ribs in the smoker and close the lid.
- Combine apple juice and beer in a spray bottle. Spritz ribs every hour, rotating each time you spray. Cook for 3 hours, then remove ribs and check temperature. Wrap ribs in aluminum foil, and return to the smoker.
- Smoke until meat pulls away easily from the bone, 1 3/4 to 2 hours. Remove from the grill and check temperature; an instant-read thermometer inserted into the center should read 170 to 180 degrees F (77 to 82 degrees C). The ribs will be very juicy but the outside will not be crispy.
- Remove the foil and return ribs to the smoker. Cook until crispy, 15 to 30 minutes; an instant-read thermometer inserted into the center should read 190 to 195 degrees F (88 to 91 degrees C). Remove from the grill and tent with foil to allow juices to resettle into the meat before slicing and serving.
