Classic tomato salsa image

This simple tomato salsa is a great accompaniment to grilled fish and meat, or fajitas.

6 ripe tomatoes
1 big bunch of fresh coriander
1 onion
2 fresh jalapeño or green chillies
1 large clove of garlic
1-2 limes
extra virgin olive oil

Steps:

  • Finely chop the tomatoes and coriander (stalks and all) and place into a large bowl.
  • Peel and finely chop the onion, deseed and finely chop the chillies, then scrape into the bowl. Peel and finely grate in the garlic.
  • Squeeze in the juice from 1 lime, add 2 tablespoons of extra virgin olive oil, and mix well. Season to taste with sea salt, black pepper and more lime juice, if needed.
  • Serve straightaway or cover and set aside for a few hours to let all those flavours develop.

5 cups green peppers (yellow, red or orange, chopped)
2 1/2 cups jalapeno (chopped, or any hot pepper of your choice)

1/2 cup garlic (minced)
1 1/4 cup pure apple cider vinegar

Steps:

  • Put all in a heavy bottom Dutch oven and heat until simmering, let simmer for about one hour. Pour hot into sterilized jars and seal.

Serve my garden fresh cherry tomato salsa as a zesty dip with tortilla chips or as a topping for your favorite Mexican tacos, burritos, or enchiladas.

1/2 medium white onion
1 jalapeño pepper (seeded)
1 - 2 cloves garlic
3 cups cherry tomatoes
1/2 cup loosely packed fresh Cilantro leaves (optional)
1/2 large lime
1/2 teaspoon sea salt
1/4 teaspoon coarse ground black pepper

Steps:

  • Roughly chop the onion and add to the bowl of a food processor or mini chopper along with the jalapeño pepper, and garlic cloves. Pulse until the contents are finely diced.
  • Add the cherry tomatoes and pulse until the salsa is the consistency you desire - I like mine a bit chunky.
  • If using, add the cilantro and pulse one or two more times.
  • Strain the salsa through a mesh strainer to remove the excess juices.
  • Add the salsa to a bowl and add the lime, salt, and black pepper. Taste and adjust the amount of lime and salt to your liking.
  • Serve immediately (or chill first if you prefer) with tortilla chips.

1 x 400g (14oz can chopped tomatoes (drain the tomatoes if you want a thicker salsa))
1 red onion (finely chopped)
small handful fresh coriander/cilantro (to taste)
2 fresh Jalapeños (seeds removed (optional))
2 garlic cloves (sliced)
1 teaspoon dried oregano
½ teaspoon ground cumin
pinch of sugar (optional)
salt & pepper to taste
lemon/lime juice (to taste)

Steps:

  • Place all the ingredients in the bowl of a food processor and pulse until the ingredients have just been broken down. Take care not to blend too much as the salsa will lose all its texture.
  • Transfer to a serving bowl and serve.
  • This salsa will keep for up to 10 days in a sealed container in the fridge.

1 garlic clove or use 1/4 tsp garlic powder
1/2 cup cilantro
1/2 tsp salt (less or more depending on salt content of the diced tomato)
1/4 tsp ground cumin
generous dash of black pepper
juice of 1/2 or 1 lime
Optional add ins: dash of cayenne, chili blend, or chipotle pepper, (1/4 tsp sugar or sweetener)

Steps:

  • Add all the ingredients to a blender or food processor. Pulse a few times (less or more depending on preferred texture).
  • Taste and adust, salt and flavor and mix in. Add some sweetener if needed
  • Transfer to a bowl. Chill for atleast 15 mins to help the flavors meld. Garnish with cilantro, chopped jalapeno, pepper flakes. Serve with warm tortilla chips. Can be stored in an airtight container in the refrigerator for upto 5 days.
