- Dissolve JELL-O in 2 cups boiling water. Whisk in softened cream cheese until thoroughly blended. Then add crushed pineapple, pineapple juice and 1/2 cup cold water. Pour into 6-cup mold and refrigerate until set.
- Turn out mold onto serving plate. Spoon COOL WHIP into center of mold.
- Arrange your choice of fresh or frozen fruit on top as desired. (I'm not entirely happy about the color of the kiwi in combination with the color of the JELL-O, but since it tastes great, I live with it. Ha!)
- Serve immediately, and be sure to add a big spoonful of the fruit and COOL WHIP to your JELL-O for a cool, creamy and refreshing fruit dessert!

PHILADELPHIA CREAM CHEESE SALAD
Steps:
- Cream cheese needs to be soft. Add Miracle Whip, stir till well blended.
- Add pineapple & cherries, blend well. Add juice from pineapple, enough to make it easy to stir.
- Add Cool Whip and fold in. Add marshmallows and fold in. A little cherry juice is also good to give extra color and flavor.

PINEAPPLE CREAM CHEESE SALAD
My first taste of this was at a covered dish. Ohhh, how I remember that surprisingly delicious taste! I am thankful that the lady shared her recipe with me. It has become a family favorite. Whenever I carry it to a covered dish everyone asks for this recipe. Sometimes I use it as a gelatin salad and other times, as a desert. It is great served with angel food cake. I hope you try this quick easy dish and enjoy it.

Steps:
- In a small saucepan, over medium heat, warm the pineapple, cream cheese, and Splenda or sugar until smooth. Stir gently. This does not take long.
- Remove from heat.
- In a small dish, add the water. Then add the unflavored gelatin to it. Allow a few seconds for it to dissolve.
- Add Knox and water mixture to the pineapple mixture. Stir well to blend.
- Pour pineapple mixture in a pretty glass bowl. Gently place a few cherries on top, if desired.
- Place in refrigerator to set. Chill at least 3 hours before serving.
- Note: The 3 hours is your cook tiime. Also note that the small package of Knox unflavored gelatin wasn't labeled with number of ounces. Since I had removed them from the box, I guess at the number of ounces.

- Add boiling water to gelatin mix in large bowl; stir 3 min. until completely dissolved. Stir in pineapple. Refrigerate 1-1/4 hours or until slightly thickened.
- Mix cream cheese and cottage cheese in medium bowl until blended. Gently stir in COOL WHIP with whisk. Gradually add to gelatin, mixing well after each addition. Stir in nuts and cherries. Pour into 6-cup mold sprayed with cooking spray.
- Refrigerate 4 hours or until firm. Unmold before serving.

APRICOT CREAM CHEESE SALAD
Oh my, this is a delicious jelled salad. It's almost celestial, you can hear the angels sing. Growing up, this was one of the fruit salads served at our big Sunday meal after church.

- GELATIN BASE.
- Mix jello and water and chill until syrupy (30 minutes est.).
- Slice bananas 1/8" thick, half or quarter each slice to your preference in salads.
- Combine bananas, drained pineapple and marshmallows into syrupy jello, mixing well.
- Pour into 9x9 or 9x12 dish and chill until firm (several hours).
- TOPPING.
- In a sauce pan, mix together 1/2 Cup Pineapple Juice, 1/2 Cup Sugar, 2 T Butter, 2 T Flour, and 1 well beaten egg.
- Cook on medium to medium-high heat until thick. Remove from burner.
- Add 3 oz cream cheese from refrigerator stirring until dissolved in sauce pan.
- Spread Topping evenly over congealed salad.
- Chill some more for topping to set (1-2 hours).
- Serve in squares.

This recipe is made with imitation crab salad and is great on croissants. It is different from the usual crab salad as it is made with cream cheese. Very easy, we take crackers and eat it while boating all the time!

- Add cream cheese, mix until well combined.

- In a small saucepan, add 1 cup of pear juice and bring to a boil.
- Remove from heat.
- In a large bowl combine dry lime gelatin with pear juice and stir until gelatin is dissolved.
- Chill until partially set.
- In a medium bowl, cream the cream cheese with milk until blended and smooth.
- In a small bowl, mash pears until smooth. Mix with the cream cheese mixture and mix until smooth.
