ASIAN LETTUCE CUPS WITH SPICY GROUND TURKEY FILLING
Having two teenage boys and trying to stay on a diet can be impossible. I am really trying to reduce my carbs and I found this recipe on kalyn's kitchen blog. They loved it! Good for a phase 1 South Beach diet too.

Steps:
- Heat the oil in a large non-stick frying pan and add the onion and saute for about 2 minutes. Add garlic and ginger root and saute about 1 minute more.
- Add ground turkey and break apart, then add soy sauce, chili garlic and fish sauce if using. Cook until the turkey is brown and crumbling apart and the sauce is slightly reduce, about 5 minutes.
- When turkey is done, add chopped cilantro and cook 1-2 minutes more. Serve filling and lettuce leaves in separate bowl, with chopped peanuts in another. Fill lettuce leaves with filling and add chopped nuts if desired.

SWEET AND SPICY GROUND TURKEY STIR-FRY
I put this together for a light meal when I noticed that we had too big a collection of half-bags of frozen vegetables and little containers of leftover cooked veggies. The kind and quantity of the vegetables can vary according to what you have -- you just need to end up with between 2 and 3 lbs. Some people prefer a more generous amount of thickened sauce on their stir-fry dishes. With a diabetic in the house, I skip that part but I've included the directions if you want it.

Steps:
- Brown ground turkey in a little oil over medium-high heat. Drain any excess grease leaving just enough to accomplish the stir-frying process.
- Add garlic, onion, coriander, and a tbs of the soy sauce. Stir well.
- Begin adding the vegetables starting with long-cooking veggies like carrots and broccoli (especially if broccoli is still frozen), and working towards the quick-cooking greens but not adding those just yet.
- Just before adding the greens -- right after adding the beans or snap peas -- add the remaining soy sauce, the sugar, the sherry, and the red pepper flakes. Stir well so that sugar dissolves and pepper flakes are well distributed.
- Add the greens and complete the cooking.
- Make the optional sauce if desired by whisking the cornstarch into the chicken stock. Pour into pan just before the greens are done and cook, stirring constantly, until the sauce has simmered for about one minute.
- Serve over rice, ramen noodle, or other preferred, Asian starch.
GROUND TURKEY WITH CREAMY SQUASH SAUCE OVER NOODLES
Low fat made with a puree of winter squash be it pumpkin, acorn or butternut any hard squash. You can use canned pumpkin or roast and puree your own. Very nicely seasoned with sage, parsley, turmeric, cumin a bit of heat from pepper flakes and of course onions and GARLIC!

- Heat oil in a large pan. Add onions and garlic cook till translucent about 3 minutes.
- Add ground turkey and cook for 5 more minutes stirring to break up. Sprinkle ingredients 1/2 the sage through the curry over the turkey mixture and mix inches Add pureed squash and milk. Stir to mix and thicken. Add peas and remaining sage toss to mix.
- Serve over noodles.
- If need be, you can butter or oil the noodles. I did avoid to keep the fat down! Garnish with sage.

GROUND TURKEY & RICE
My family was tired of the usual Chicken & Rice dish that I make so I came up with this one dish meal that's easy to throw together. They like this more than the Chicken & Rice. If you like more rice you can increase it by another 1/2 cup. You could even experiment using other vegetables i.e., frozen corn niblets, peas, green beans, etc.

Steps:
- Sprinkle the seasoned salt and (if using) fennel seed over the ground turkey. Mix well.
- Spray large skillet with vegetable spray and place turkey mixture in pan. Over medium-high heat cook and stir Turkey until browned; drain well. While the Turkey is draining add the vegetables to the hot pan and saute for about 5 minutes. Add the Turkey back into the pan and mix. Sprinkle rice over mixture and pour in Chicken broth. When broth comes to a boil reduce heat, cover and simmer for approx 20-30 minutes, stirring occasionally until liquid is absorbed. When the rice is cooked if there is still too much liquid in the pan remove cover, increase the heat and continue cooking until all liquid is absorbed.

ONE-DISH SPICY GROUND TURKEY AND SQUASH
This spicy dish is quick and easy to prepare and stores well in the fridge--it should also freeze and can well. I recommend serving this over rice for a super healthy meal, but it would be equally great over white rice or pasta. This is an excellent use for fresh squash or zucchini in season.

- Brown ground turkey in a large skillet or wok, adding cumin, chili powder, black pepper (to taste), and diced chipotles while cooking. Add chopped squash and saute on medium heat for approximately 5 minutes, until squash is slightly tender. Add mushrooms and diced tomatoes/chilies, stir, and continue to cook for 2-3 minutes. Add crushed tomatoes, stir, and simmer until flavors are blended and squash is tender. Serve over 1 Celsius rice, preferably brown, or pasta.
