- In 1 1/2-quart microwavable casserole, cook broccoli as directed on package; drain.
- Stir in macaroni and cheese, and sausage. Microwave on High 6 to 8 minutes or until thoroughly heated, stirring once or twice.
- In small microwavable bowl, microwave butter on High 25 to 30 seconds or until melted. Stir in crushed crackers; sprinkle over top of macaroni mixture.

- Cook macaroni according to package directions; drain and set aside. In a large skillet, cook sausage over medium heat until no longer pink; drain. Add the green pepper, onion, oregano and pepper. MACARONI AND CHEESE WITH SAUSAGE

- Preheat the oven to 425 degrees F.
- Bring a large pot of salted water to a boil. Add the macaroni and cook according to package directions for al dente. Reserve 1 3/4 cups of the pasta cooking water and then drain the pasta; set aside.
- Heat the oil in a large Dutch oven or saucepot over medium-high heat. Add the sausage and cook until lightly browned, breaking up the meat into small pieces, about 5 minutes. Transfer the browned meat to a plate with a slotted spoon. Add the bell pepper, onion and a pinch of salt to the drippings in the pot and cook, stirring occasionally, until softened and lightly browned, 10 to 12 minutes; transfer to the plate with the sausage.
- Carefully wipe out the pot, add the half-and-half and cayenne and bring to a simmer over medium heat. Simmer until reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Gradually whisk in the Cheddar and Gruyere, 1 handful at time, until all the cheese is melted and the sauce is smooth. Remove from the heat.
- Add the cooked pasta and reserved pasta cooking water to the cheese sauce and stir to combine. Stir in the sausage and vegetables; adjust the seasoning with additional salt. Pour into a 9-by-13-inch baking dish and bake until bubbly and lightly browned, about 10 minutes.
MACARONI AND CHEESE WITH SAUSAGE
Steps:
- Gather the ingredients.
- Cook the macaroni in boiling salted water following package directions. Drain and then set aside.
- Heat the oven to 350 F.
- Grease a 2 1/2- to 3-quart casserole.
- Heat the olive oil in a large saucepan or sauté pan over medium heat. Crumble the sausage and add it to the pan along with the bell pepper and onion; cook, stirring and breaking up sausage, until sausage is no longer pink and vegetables are tender. Spoon off any excess grease and add the seasoning, pepper flakes, black pepper, and garlic.
- Add the flour to the sausage mixture and cook for about 2 minutes longer, stirring constantly. Gradually stir in the milk. Continue cooking until thickened, stirring constantly. Stir in the cheeses and add salt, to taste.
- Fold the macaroni and tomatoes into the sausage and sauce mixture. Spoon into the prepared casserole.
- Combine the breadcrumbs with melted butter and sprinkle over the casserole.
- Bake the for 25 minutes.
- Increase heat to 400 F and bake for 5 to 10 minutes longer, until crumb topping is lightly browned.

HALF-TIME SAUSAGE MAC AND CHEESE
This recipe is delicious! Unfortunately, it is loaded with calories, but it is great for when you want to have that occasional splurge for comfort food. I got this recipe from People magazine, I believe, of all places. I didn't even know they published recipes but it was in an edition I happen to be browsing through right before the Super Bowl this year. I made it for a party and it was gone in no time. This cheese sauce would be awesome on it's own I think as well. You can definitely make this without the sausage and it would be great as well but it makes a wonderful one-dish meal if included.

- To prep before, make light roux; melt the 4 ounces butter in heavy bottomed pan, slowly add the flour and stir until combined and smooth.
- Cook over medium heat until just golden brown; set aside.
- Grill sausages or bake in oven and set aside.
- Preheat oven to 350 degrees.
- In large pot, boil water and cook macaroni al dente.
- While pasta cooks, heat oil in a large skillet and add onions.
- Saute onions over low heat, stirring frequently.
- Add the roux to the onions and add the milk gradually, whisking to work out any lumps.
- Bring sauce to a full boil, then reduce heat and add cheese one slice at a time.
- Simmer until smooth and thickened.
- Adjust seasoning to taste with salt, pepper and nutmeg.
- Strain through a fine-mesh colander, if desired.
- Add heavy cream and simmer to a good flavor and consistency.
- Rub an ovenproof casserole dish with the garlic, then add the macaroni, sliced sausage and sauce; mix well.
- In a small bowl, mix melted butter and bread crumbs and sprinkle mixture on top.
- Cover with foil and bake for 35 minutes.
- Then take foil off, add grated cheese and cook uncovered for an additional 5 minutes. Let rest before serving.
ONE-DISH BAKED MACARONI AND CHEESE
I like this recipe because I can mix it together, put it in the oven and not worry about noodles boiling over while taking care of our twins. The timing for stirring the dish while baking isn't critical. This recipe was inspired by some other macaroni and cheese recipes I found on RecipeZaar while looking for something to do with cottage cheese (#251829 and #107973). It's a hit with our kids and my husband enjoys it, too. I use gluten-free noodles, you'll have to adjust the liquid and timing if you use standard wheat noodles. The cottage cheese will liquefy while baking so don't add too much liquid at first. I use a 10" square Corning Ware dish, a slightly larger dish would be better because sometimes it bubbles over a little before I remove the lid.

- Heat oven to 375 degrees F.
- Grease a large covered baking dish.
- Put the milk, dry noodles, cottage cheese, mustard, salt and half the cheddar cheese in the dish and mix well.
- Cover and bake for 30 minutes.
- Remove from oven, reduce heat to 350 degrees F, add rest of cheddar cheese, stir well and return to oven for 15 minutes more.
- Remove from oven, stir well, mix in optional vegetable, and top with shredded Parmesan if desired.
- Return to oven without lid and bake about 15 minutes more, until browned on top.
- Remove from oven and let cool maybe 10 minutes before serving, will be very hot out of the oven.

- Preheat the oven to 350º.
- In a large pot of boiling salted water, cook the pasta until al dente, about 11 minutes (or as directed on package).
- Meanwhile, heat a large, heavy-bottomed saucepan over medium-high heat.
- Add the sausage and cook, stirring and breaking up the meat with a wooden spoon, until no longer pink, 3 to 4 minutes.
- Transfer the sausage to a large bowl and wipe the saucepan clean.
- Add the pasta and 1 cup caramelized onions to the sausage and stir to combine.
- In a medium saucepan or a microwave oven, heat the milk until steaming.
- Return the large saucepan to the stove, add the butter and melt over medium heat.
- Add the flour and cook, whisking constantly, for 3 minutes.
- Whisk in the hot milk, 1/4 cup at a time, and continue whisking until the sauce is smooth and thick and comes to a simmer.
- Add 2 1/2 cups cheese, remove from the heat and whisk until the cheese is melted, about 2 minutes; season to taste with salt and pepper.
- Add the cheese sauce to the pasta mixture and stir to combine.
- Butter a 9-by-13-inch baking dish and add the pasta mixture in an even layer. Sprinkle the remaining 1/2 cup caramelized onions and 1 1/2 cups cheese on top.
- Bake until golden and bubbling, about 40 minutes.
- Remove from the oven and let rest for 10 minutes before serving.

- Preheat the oven to 350 degrees F.
- Butter a large casserole dish with 1 tablespoon of the butter and set aside.
- Bring a large pot of salted water to a boil.
- Add the macaroni and cook until al dente, about 10 minutes.
- Drain in a colander and rinse under cold running water.
- Drain well.
- In a large skillet over medium-high heat, cook the sausage, stirring, until browned and the fat is rendered.
- Remove with a slotted spoon and drain on paper towels.
- Pour off all but 1 tablespoon of fat from the pan.

- In a mixing bowl, combine the remaining 1 cup of cheese with the breadcrumbs and remaining 2 teaspoons of Essence.
- Sprinkle over the macaroni and bake until golden brown and bubbly, about 25 minutes.
- Remove from the oven and let rest for 5 minutes before serving.
