If you have an abundance of summer zucchini, try this zucchini casserole for dinner tonight. It's a cheesy, creamy summer recipe your whole family will love.

Number Of Ingredients 14

2 1/2 lb. zucchini, sliced into ¼-inch thick rounds
1 red bell pepper, seeded and diced
1/2 yellow onion, chopped
3 tbsp. olive oil
1 1/4 tsp. kosher salt
1/2 tsp. ground black pepper
3/4 c. heavy cream
2 large eggs
8 oz. sharp cheddar cheese
3 cloves garlic, chopped
1/2 c. grated parmesan
1/3 c. chopped fresh parsley
1 1/2 c. panko or breadcrumbs
1/4 c. butter, melted, plus more for the pan

Steps:

  • Preheat the oven to 400˚. On a large sheet tray, combine the zucchini, bell pepper and onion. Drizzle with the olive oil and sprinkle with the salt and black pepper. Toss gently to combine. Cook for 30 minutes, until the zucchini is slightly softened and has released its liquid. Drain the mixture through a colander. Once cool enough to touch, press gently with paper towels to press out and soak up any extra moisture.
  • In a large bowl, whisk together the heavy cream and eggs. Mix in the cheddar cheese, garlic, ¼ cup of the parmesan cheese and all but 2 tablespoons of parsley (reserve this for later). Gently mix in the drained zucchini mixture. Transfer to a buttered 9- by- 13-inch, or three-quart, casserole dish.
  • Reduce the oven temperature to 350˚. In a small bowl, combine the panko and melted butter. Mix in the remaining ¼ cup of grated parmesan cheese and 2 tablespoons of parsley. Sprinkle all over the top of the casserole. Bake for 35-40 minutes, until the top is lightly golden brown, the edges are bubbly and the center is set. (If the topping is browning to quickly, cover loosely with a piece of foil.) Let rest for 10 minutes, then serve.

¼ cup melted butter
2 cups cubed zucchini
1 large onion, chopped
1 teaspoon garlic salt
1 egg, beaten
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bread cubes in a medium bowl and pour melted butter over the bread. Add the zucchini, onion, garlic salt and egg; mix well. Transfer the mixture into a 9x13 inch baking dish and top with the cheese.
  • Bake, covered, in preheated oven for 30 minutes. Then uncover the dish and bake for another 30 minutes.

8 cups diced fresh zucchini, peel on
1 large green pepper, chopped
1 large onion, minced
1 cup dry breadcrumbs
1 cup sharp cheddar cheese, grated
1/2 cup lite olive oil or 1/2 cup virgin olive oil
1 teaspoon dried basil
2 eggs, beaten
salt and pepper

Steps:

  • Preheat oven to 350°F degrees.
  • Butter a 13x9-inch oven-proof dish.
  • In a large bowl mix all the ingredients, mix well.
  • Turn into the casserole dish.
  • Bake uncovered for 45 minutes or until veggies are tender and the top is lightly browned.

This is from a wonderful recipe clipping I found in a very old cookbook. I made it this past Christmas and found that it makes a wonderful breakfast dish as well. I only wish there had been more left overs.

5 medium zucchini, cooked crisp tender and diced
2 tablespoons all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/2 cup milk
4 eggs, lightly beaten
1 (4 ounce) can chopped green chilies
4 cups colby-monterey jack cheese, shredded
2 tablespoons butter, melted

Steps:

  • In a large saucepan, cook zucchini in boiling water until crisp-tender; about 3 minutes.
  • Drain.
  • Cool on paper towels about 10 minutes.
  • In a large bowl, combine flour, baking powder and salt; whisk in milk until smooth.
  • Beat in eggs and chilies.
  • Stir in cheese and diced zucchini.
  • Transfer to a greased 9x13" baking dish and drizzle with melted butter.
  • Bake uncovered at 325 degrees for 40-45 minutes or until a knife inserted near center comes out clean and edges are lightly browned.
  • Let stand 5 minutes before cutting.

1 cup uncooked long grain rice
3 medium zucchini, cut into 1/8-inch slices
1 can (4 ounces) chopped green chilies
4 cups shredded Monterey Jack cheese, divided
2 cups sour cream
2 tablespoons chopped green pepper
2 tablespoons chopped onion
1 tablespoon minced fresh parsley
1 teaspoon salt
1 teaspoon dried oregano
1 large tomato, sliced

Steps:

  • Cook rice according to package directions. In a large saucepan, cook zucchini in 1/2 in. of water. Bring to a boil. Reduce heat; cover and simmer for 3-5 minutes or until zucchini is crisp-tender; drain and set aside. , Place rice in a greased shallow 3-qt. baking dish. Layer with chilies and 1-1/2 cups cheese. In a large bowl, combine the sour cream, green pepper, onion, parsley, salt and oregano. Spread over cheese. Layer with zucchini and tomato. Sprinkle with remaining cheese., Cover and bake at 350° for 30 minutes. Uncover; bake 5-10 minutes longer or until heated through and cheese is melted.

3 medium zucchinis, sliced
2 medium onions, sliced
3 tablespoons olive oil
salt and ground black pepper to taste
1 (16 ounce) package penne pasta
1 (28 ounce) jar marinara sauce
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Toss zucchinis and onions in a large bowl with olive oil until evenly coated. Spread vegetables into a large baking dish.
  • Roast vegetables in the preheated oven until golden, about 30 minutes. Season with salt and pepper. Reduce oven heat to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes; drain.
  • Lightly grease a 9x13-inch baking dish.
  • Heat marinara sauce in a saucepan over medium heat until sauce is hot. Spread hot marinara sauce into the prepared baking dish, followed by penne pasta and zucchini mixture. Sprinkle Parmesan cheese atop vegetables.
  • Bake in the preheated oven until sauce is bubbly, 35 to 40 minutes. Allow casserole to rest for 5 minutes before serving.

1 garlic clove, crushed

Steps:

  • Saute zucchini, onion, and garlic in melted butter in a large skillet 5 minutes or until vegetables are crisp-tender; remove from heat.

16 ounces cottage cheese (lowfat is ok)

Steps:

  • Slice the zucchini. Peel and slice the tomatoes. Grease a 2 quart baking dish.
  • Saute the sliced zucchini and onions in the olive oil until soft.
  • In a blender or with a mixer, whip the cottage cheese with the basil, oregano, and pepper.
  • Alternate layers of zucchini, cottage cheese, and tomato slices. Top with Parmesan cheese.

Steps:

  • Preheat oven to 350 degrees.
  • In large pan, boil sliced zucchini for about 8 minutes, until tender, then drain.
  • Spray a 7x11 inch dish with cooking spray.
  • Cover the bottom of the dish with sliced tomatoes.
  • Layer zucchini.

  • Sprinkle with parmesan cheese and feta cheese.
  • Repeat layers.
