SUSSEX PUDDING (A LITTLE DIFFERENT THAN YORKSHIRE PUDDING)

Sussex Pudding (A Little Different Than Yorkshire Pudding) image

This is just another version of Yorkshire pudding. It goes well with any meal. Especially with a roast, potatoes, fresh veggies and gravy. When done right they are light and puffy and very GOOD

Provided by Bergy

Categories     Poultry

Time 35m

Yield 8 serving(s)

Number Of Ingredients 5

1 cup all-purpose flour
1 (1 1/4 ounce) package onion soup mix or 1 (1 1/4 ounce) package onion and mushroom soup mix
1 cup milk (at room temperature)
4 eggs (at room temperature)
3 tablespoons hot melted margarine or 3 tablespoons hot melted butter

Steps:

  • Preheat oven to 425°F; rack at mid level.
  • In a bowl whisk flour, soup mix, eggs, milk and margarine.
  • Generously grease 8 large muffin tins and place on a cookie sheet. Pour 1/3 cup of batter in each tin.
  • Bake 25-30 minutes or until puffy and golden brown.
  • Remove from cups and serve warm.
  • I find that it sometimes helps to make the batter well in advance of cooking and refrigerate it right up until you want to cook them.
  • Have muffin tins hot and then proceed as directed. Either way it works!

  • Preheat the oven to 400°F. Place foil or a sheet pan below the rack you’re using for the Yorkies to catch any overflow. Place the eggs, milk, flour, salt, and pepper in a blender and blend on high until the mixture is combined and resembles heavy cream. (This can be done several hours in advance.)
  • Pour 1 teaspoon pan drippings into each popover cup (half that amount if using a muffin tin). Heat in the oven for 2 minutes.
  • Quickly and carefully pour the batter into the cups, filling each about halfway. Put directly in the oven and do not open the door; keep the light on to watch what’s going on in there! Bake until puffed and golden brown, about 30 minutes (the Yorkies will puff to the highest height, but not until the last 10 minutes of cooking time). Serve immediately.

  • Mix in enough of the milk and water to the flour and suet mixture to make a dough that is soft, but not too soft to roll.
  • Roll the dough out on a floured surface, to make a large circle. Cut out a quarter of the circle (to be used later as the lid of the pudding).
  • Grease a 1.5 litre/2¾ pint heatproof basin or bowl. Place the larger circle of pastry into the bowl and join the cut sides together, pressing well.
  • Prick the lemons all over with a larding needle or skewer, so the juices can escape, then place the lemons on top of the butter and sugar.
  • Roll out the reserved pastry quarter into a round and place on top of the basin filling. Press the edges together to seal the pudding.
  • Place a piece of foil over the basin, creating a pleat in the middle. Tie the foil in place with string and tie around carefully to create a string handle over the top, so the pudding can be easily moved when hot.

Yorkshire pudding is a popular British side dish that is traditionally served during Sunday roasts. It is made from a creamy batter consisting of flour, eggs, and milk or water. While some might think of it as a dessert, in Britain, pudding was typically a meat-based dish, whereas today puddings exist in a number of different variations.

ENGLAND: YORKSHIRE PUDDING - EUROPEAN CUISINES
The Yorkshire pudding is a member of the larger class of batter puddings. Originally these were usually boiled in a pudding cloth (the traditional English Christmas pudding is a distant relative). But later on, as home roasting of meats became more popular, batter puddings began to be baked underneath the vertical rotating spit or "jack" on which the beef was roasted.
