From Marcia Adams' Cooking From Quilt Country. This is an excellent oven baked fried chicken; nicely seasoned, easy and takes you back to when you didn't care about fat content, calories or protein counts. The drippings make for very yummy gravy, too!

Steps:
- Place the oil and butter in a shallow cooking pan (I use a sided cookie sheet or the broiler pan) and put in preheated 375 degree oven to melt. Set aside.
- In large bowl or plastic bag, combine flour and seasonings. Mix well.
- Roll the chicken pieces, a few at a time, in the oil/butter mixture and then drudge in flour mixture.
- Place coated chicken pieces into pan, skin side down.
- Bake at 375 for 45 minutes. Turn over the chicken pieces and bake for another 5-10 minutes or until top crust is bubbly.
- Serve hot or cold.
OVEN FRIED CHICKEN

- Place the chicken in a large resealable plastic bag set in a baking dish. Pour the pickle juice into the bag. Seal the bag and massage gently. Refrigerate 1 to 2 hours.
- Meanwhile, whisk the eggs and mustard in a medium bowl; set aside. Pulse the rice cereal in a food processor to make fine crumbs. Heat 1/4 cup vegetable oil in a medium skillet over medium heat. Add the cereal crumbs, panko, 3/4 teaspoon salt and a few grinds of pepper. Cook, stirring frequently, until the crumb mixture is a deep golden brown, 6 to 8 minutes. Transfer to a medium bowl and stir in the garlic powder, celery seeds and dill. Let cool to room temperature.
- Place a rimmed baking sheet on the lowest oven rack and preheat to 425 degrees F. Remove the chicken from the pickle juice and pat dry with paper towels. One piece at a time, dip the chicken in the egg mixture, letting any excess drip off, then coat in the crumb mixture, pressing with your hands to adhere.
- Remove the hot baking sheet from the oven and brush with the remaining 1/4 cup vegetable oil. Place the chicken on the baking sheet and bake until golden and a thermometer inserted into the breasts registers 160 degrees F and the thighs 170 degrees F, 30 to 35 minutes. Serve with ranch dressing.

- Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
- Preheat the oven to 350 degrees F.
- Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
- Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.

- Preheat oven to 350.
- In a shallow bowl, blend together bread crumbs, Parmesan cheese, parsley, salt, and pepper.
- In a small saucepan, heat butter and garlic over very low heat until butter melts.
- Remove from heat.
- Brush chicken pieces with garlic butter, then roll in bread crumb mixture to coat.
- Place chicken skin side up on a large foil-lined baking sheet.

- Preheat oven to 350 degrees F (175 degrees C).
- Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
- Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish. This is the OMG oven "fried" chicken, because every time you make it someone will say OMG this is delicious.......Seriously, the ingredients sound a little strange, but it is an awesome taste. This recipe can be modified to your personal tastes by simply changing the type of coating you use, I've used several and they all work...

- 2. 2.In a large resealable ziplock bag, mix together all dry ingredients including spices.
- 3. Coat the chicken pieces with mayonnaise. Place chicken pieces in bag with bread crumb or cracker mixture and shake until well coated.
- 4. Place chicken pieces in a lightly greased 9x13 inch baking dish and bake for 40-45 minutes or until juices run clear. I personally don't place them on a baking pan, I place mine ona large cookie cooling rack that's placed on the baking pan....This allows the chicken to be cooked evenly all the way around, without the chance of the bottoms getting "soggy".
- 5. ***NOTE*** Depending on my mood and what flavor I'm looking for, I tend to change this up periodically to match what I'm looking for that day. I love the flavor that the Ritz crackers or Club crackers give to this dish, but I've also used crushed garlic croutons, italian bread crumbs, Panko, and normal bread crumbs with this. They all work great, and each give it it's own different flavor and personality. I've also been known to add in ranch dressing to the mayo to thin it rather than milk, and added into the bread crumbs some crushed "real" bacon bits to give it the bacon ranch flavor that I love. It's a very versitile recipe, so I fully support playing with it!

- 1. Position oven racks in center and lower third of oven. Heat oven to 400. Place frito chips in food processor and pulse until finely crushed.
- 2. Line 2 baking sheets w/ foil. Place an oven rack on each of the baking sheets and lightly spray racks w/ cooking spray. In lg bowl, combine crushed chips, bread crumbs and dry dressing mix. Set aside. In another lg bowl, whisk together mayonnaise, sour cream,, zest, salt and pepper.
- 3. Add chicken to mayonnaise mix and stir to coat well. Remove chicken pieces, one at a time. Let excess drip off the chicken. Coat chicken completely in reserved coating mix. OVEN FRIED CHICKEN WITH SPICY HONEY AND SLAW
Steps:
- For the chicken: Preheat the oven to 425 degrees F (220 degrees C) and line a baking sheet with a baking rack. Lay out the chicken and pat each piece dry with a piece of paper towel. Season with 1 teaspoon kosher salt.
- In a large bowl, combine the flour, garlic powder, paprika, onion powder, cayenne pepper, remaining 1/2 teaspoon kosher salt and pepper and stir well. Add the chicken pieces into the bowl and toss to coat each piece. Set aside.
- In a smaller bowl, whisk the egg with the mayonnaise, buttermilk and hot sauce. Scatter the crushed cornflakes into a shallow dish.
- Remove the chicken from the flour mixture one piece at a time and tap off any excess flour. Dunk and thoroughly coat the chicken in the buttermilk mixture, allow excess to drip off, then roll and press into the cornflake crumbs. Place the chicken onto the rack-lined baking sheet and continue until all of the chicken is coated, making sure to leave space between each piece.
- Bake the chicken until the internal temperature reaches 165 degrees F (75 degrees C) and the coating is golden brown, about 20 to 25 minutes for chicken breasts or thighs and 30 to 40 minutes for drumsticks. Season the chicken immediately with kosher salt and allow it to rest for about 5 minutes.
- For the spicy honey: Combine the honey, hot sauce and red pepper flakes in a small bowl. Transfer to an airtight container to store at room temperature for up to 1 month.
- For the slaw: Whisk together the vinegar, lemon juice, mustard, honey, celery salt and oil in a large bowl. Stir in the onion.
- Thinly slice the cabbage and shred the carrot on the large side of a box grater. Then add to the bowl. Season with salt and pepper and mix very well to combine.
- Serve the chicken with the spicy honey and slaw.
