Greek Omelette Casserole, a fluffy breakfast omelet recipe loaded with the bold flavors of sun dried tomatoes, feta cheese, spinach, garlic, and herbs.

12 large eggs
2 cups whole milk
8 ounces fresh spinach
2 cloves garlic, (minced)
12 ounces artichoke salad ((with olives and peppers) drained and chopped)
5 ounces sun dried tomato feta cheese, (crumbled)
1 tablespoon fresh chopped dill ((1 teaspoon dried dill))
1 teaspoon dried oregano
1 teaspoon lemon pepper
1 teaspoon salt
4 teaspoons olive oil, (divided)

Steps:

  • Preheat oven to 375 degrees F. Chop the fresh herbs and artichoke salad.
  • Set a skillet over medium heat and add 1 tablespoon olive oil. Sauté the spinach and garlic until wilted, about 3 minutes.
  • Oil a 9x13 inch baking dish and layer the spinach and artichoke salad evenly in the dish.
  • In a medium bowl, whisk together the eggs, milk, herbs, salt and lemon pepper.
  • Pour the egg mixture over vegetables and sprinkle with feta cheese. Bake in the center of the oven for 35-40 minutes until firm in the center.

1 (32 ounce) package frozen hash browns
1 lb ham, extra lean, cooked and cubed
1 medium onion, diced
1 medium green bell pepper, diced
1 1/2 cups shredded monterey jack cheese or 1 1/2 cups cheddar cheese
12 eggs
1 cup skim milk
1 teaspoon salt
1 teaspoon black pepper, to taste

Steps:

  • Spray the inside of the crock pot with nonstick spray.
  • Place a layer of frozen potatoes on the bottom of the crock pot.
  • Add layers of ham, onions, green peppers and cheese, in the order listed.
  • Repeat the layering process two or three times, ending with a layer of cheese.
  • Beat the eggs, milk, salt and pepper together.
  • Pour over the layers, cover and turn on low.
  • Cook for 10-12 hours, or overnight.

1 package (30 ounces) frozen shredded hash brown potatoes, thawed
1 pound cubed fully cooked ham or 1 pound bulk pork sausage, cooked and drained
1 medium onion, chopped
1 medium green pepper, chopped
1-1/2 cups shredded cheddar cheese
12 large eggs
1 cup 2% milk
1 teaspoon salt
1 teaspoon pepper

Steps:

  • In a greased 5- or 6-qt. slow cooker, layer half of each of the following: potatoes, ham, onion, green pepper and cheese. Repeat layers., Whisk together remaining ingredients; pour over top. Cook, covered, on low until set, 6-7 hours. Turn off slow cooker. Remove insert; let stand, uncovered, 15-30 minutes before serving.

This is a great breakfast casserole for large groups. I got this from a sweet lady and her cookbook, Betty "Winks" at Cooking. She did cooking demos at a local department store I worked at in Little Rock, AR. I have made it several times and there is never any left. Great for holidays and deer camp. Goes great with hash browns and biscuits! You can also substitute a can of Rotel tomatoes for the stewed tomatoes and bell pepper.

  • Preheat oven to 350.
  • Mix together all ingredeints.
  • Put in a Pam coated 9x13 baking dish.

12 eggs, well beaten
1 teaspoon salt
pepper
1 (16 ounce) container cottage cheese
1 small onion, grated
1/2 large green pepper, diced (optional)
1/2 lb mushroom, thinly sliced
1/2 cup all-purpose flour
1 teaspoon baking powder
1 lb cheddar cheese, grated
1/2 cup margarine or 1/2 cup butter, melted
spinach (optional)
2 tomatoes, thinly sliced
parsley flakes, for garnish

Steps:

  • Grease a 9X13 baking dish.
  • Mix together flour, salt, baking powder, and pepper.
  • Add to the beaten eggs.
  • Mix in the cottage cheese, cheddar cheese, onion, the mushrooms and spinach and melted butter.
  • Pour into the baking dish.
  • Lay sliced tomatoes on top of the egg mixture and gently press with a fork.
  • Sprinkle with parsley flakes.
  • Bake at 350 degrees for 40-50 minutes.
  • Let set for 15 minutes before serving.

1/2 cup half-and-half cream
1 cup shredded cheddar cheese

  • Heat butter and oil in a pan and add ginger and garlic. Saute for a minute or so and add mushrooms. Stir fry the mushrooms on high heat for 3-4 minutes and add both varieties of bell peppers. Stir fry again for 2-3 minutes and add the onions. Cook everything together on high heat for another two minutes. Season with salt and pepper and turn off the flame. Add the ham and mix well.
  • Spray a baking dish or brush it with oil (size of my baking dish: 10X8). Transfer the veggie and ham mixture to the baking dish and pour the egg mixture evenly over it. Sprinkle with grated cheese (if using) and bake for 30-35 minutes or till cooked through and golden brown from the top. Your baked denver omelet casserole is ready. Rest for a few minutes before slicing, or store it for later.
