Beef Summer Sausage is really easy to make and once you try it you'll never want to buy it from the store again! You don't need any special equipment to make it. It's a perfect healthy party appetizer, snack, or lunch. It's also gluten free, keto, sugar free, and no carb.

4 pounds lean ground beef
1/4 cup Morten's Tender Quick Home Meat Cure
2 Tbsp Liquid Smoke
2 tsp Black Pepper (course)
1 tsp Garlic Salt

Steps:

  • Mix 4 pounds of ground beef with Morten's Tender Quick Home Meat Cure. Cover and refrigerate overnight. If you don't have one, set a cooling rack in a baking sheet.
  • Add garlic salt, cracked black pepper, and liquid smoke. Mix together until combined.
  • Divide the meat mixture into four equal parts. Shape meat into four sticks, or logs.
  • Line a roasting pan with aluminum foil for easier cleanup. Set sausages on a roasting pan with a wire rack.
  • Preheat oven to 225 degrees. Bake sausage for 4 hours.
  • Remove from the oven and cool. Refrigerate summer sausage for up to three weeks, or freeze for up to three months.
  • Slice and serve with sliced cheese and crackers.

Come holiday time these were a staple at our house for pre dinner snacking. Goes well with cheese and crackers or by itself, with cheese and/or crackers. Serves ten but as a snack by itself serves 5. *NOTE* this is not a brand new pan kind of recipe - for your pans sake, please use the butter or a cooking spray before putting the syrup in and try and dump out remaining syrup into coffee can or another non plastic disposable container as soon as possible, rest will come off with hot water if not let sit for too long *another note* the Liquid in the pictures is not grease, its extra syrup i didnt shake off lol

20 ounces beef summer sausage ("beefstick")
1 cup maple syrup
2 tablespoons butter

Steps:

  • Slice summer sausage into 1/4" rounds - remove plastic coating from around sausage after you slice as it is easier that way.
  • Heat butter into large skillet completely coating bottom.
  • Add syrup, slightly stir and let sit on medium heat until bubbling slightly.
  • Place rounds into pan and let cook 3-4 minutes until bubbled up (like bologna) and a rich red color on bottom, turn and cook other side, they may not bubble back the other way but 3-4 minutes should be good.
  • Remove from pan onto plate, twisting them over the pan to get rid of any excess syrup.
  • Enjoy!

A great but easy recipe to use up extra ground venison, elk, moose or beef. It can be multiplied easily and freezes very well. Serve on crackers with cheese and a great mustard sauce.

2 pounds ground beef
¾ cup water
½ teaspoon garlic powder
2 tablespoons sugar-based curing mixture (such as Morton® Tender Quick®)
1 tablespoon liquid smoke flavoring
1 tablespoon mustard seed

Steps:

  • In a large bowl, mix together the ground beef and water until well blended. Season with garlic powder, curing mixture, liquid smoke and mustard seed, and mix thoroughly. It is best to use your hands for this - like meatloaf. Form the mixture into two rolls, and wrap with aluminum foil. Refrigerate for 24 hours.
  • Preheat the oven to 350 degrees F (175 degrees C). Remove foil from the beef, and poke holes in the bottom of the rolls. Place them on a roasting rack in a shallow roasting pan to catch the drippings.
  • Bake for 1 hour in the preheated oven. Cool, then wrap in plastic or foil, and refrigerate until cold before slicing.

3 lbs ground beef
1 1/2 teaspoons liquid smoke
1/4 teaspoon garlic powder
1/2 teaspoon onion salt
1 tablespoon mustard seeds or 1 tablespoon fresh coarse ground black pepper
2 1/2 tablespoons meat tenderizer (such as Morton's Tender Quick)
1 cup water
1/2 teaspoon pepper

Steps:

  • Mix all of the ingredients together and knead well with hands to mix.
  • Shape into 3 rolls and wrap in foil. Refrigerate overnight.
  • Prick bottoms of rolls and bake at 350 on rack over a pan to catch the grease for 1 1/2 hours.

5 pounds ground beef
5 teaspoons sugar-based curing mixture (such as Morton® Tender Quick®)
¼ cup mustard seed
3 tablespoons garlic powder
1 teaspoon cayenne pepper
1 tablespoon red pepper flakes
1 tablespoon salt
½ teaspoon hickory-flavored liquid smoke

Steps:

  • In a large bowl, mix beef, curing mixture, mustard seed, garlic powder, cayenne, red pepper flakes, salt, and liquid smoke. Cover with plastic, and refrigerate for three days, mixing well once a day.
  • On the fourth day, preheat oven to 200 degrees F (100 degrees C).
  • Shape the mixture into five logs, and place on a wire rack over a large drip pan. Bake for eight hours, then remove to cool on paper towels. Let cool, then wrap logs individually in plastic wrap. Chill completely before slicing. They also freeze well.
