2 tablespoons butter
1 cup milk
4 cups thinly sliced potatoes
1 medium onion, thinly sliced

Steps:

  • In saucepan, combine package Pasta Prima Alfredo Sauce Mix with butter and milk.
  • Bring to a boil over medium heat whisking frequently.
  • Reduce heat and simmer 3 minutes.
  • In a 2 quart lightly greased casserole dish alternate layers of sliced potatoes and sliced onions with prepared sauce.
  • Cover and microwave on medium high 20-25 minutes or until potatoes are tender, gently stirring 3 times during cooking.
  • Let stand 3 minutes before serving.

50g light soft cheese
squeeze lemon juice
1 hot-smoked salmon fillet
1 heaped tsp capers
a little lemon zest
1 baking potato
oil

Steps:

  • Heat oven to 220C/200C fan/gas 7. Rub a little oil and seasoning over the potatoes, then bake on a baking sheet for 25 mins. Turn down the oven to 190C/170C fan/gas 5 and bake for 1 hr-1 hr 15 mins more until the flesh is tender and the skin crisp and golden. For a quicker option, prick a potato with a fork. Wrap in a sheet of kitchen paper and microwave on High for 8-10 mins until soft inside. For crisp skin, rub with a little oil, then flash under a hot grill, turning often. To serve, slice a cross in the centre, squeeze the base to 'pop' the top, then choose your favourite filling.
  • For the salmon and soft cheese filling, mix 50g light soft cheese with a squeeze lemon juice and seasoning. Pile into a jacket potato and flake 1 hot-smoked salmon fillet on top. Sprinkle with 1 heaped tsp capers and a little lemon zest.

My favorite way to have potatoes. It works the best to do the first step (microwaving the potatoes) earlier in the day.

4 large red potatoes, cooked and cubed
1/2 sweet onion, cut into large pieces
2 -4 tablespoons olive oil
seasoning salt

Steps:

  • Cook potatoes in microwave until tender but firm (about 3-4 minutes).
  • Cool (at least an hour works best) and cube.
  • Microwave onion pieces for about 1-2 minutes so they are slightly soft.
  • Mix with cubed potatoes.
  • Coat thoroughly (but lightly) with olive oil and as much seasoning salt as you like.
  • Place mixture on grill, I recommend using a vegetable/seafood grate, over hot coals. Cover to prevent flair-ups due to the oil.
  • Cook approximately 20 minutes, until golden, turning about every 5 minutes.
  • Serve with sour cream and/or ketchup.
  • This method can be used for squash, broccoli, carrots etc.
  • You can also use garlic salt or other spices like oregano in place of, or in addition to, the seasoning salt.

rock salt
olive oil
2 slices bacon, chopped
1 cup broccoli floret, steamed and chopped
1/3 cup light sour cream
2 tablespoons grated cheese

Steps:

  • Preheat oven to 200°C.
  • Sprinkle a layer of salt onto a small baking tray (the salt on the tray makes the potato skins crispy).
  • Rub the potatoes with olive oil and place on prepared tray.
  • Bake for 1 hour or until skin is crispy and potato is cooked.
  • Allow to cool slightly.
  • Meanwhile, fry or microwave bacon until crisp.
  • Remove the flesh from the potatoes.
  • Place in a bowl along with the bacon, broccoli and sour cream.
  • Season.
  • Return the filling to 2 of the potato shells, piling it high.
  • Sprinkle with cheese and return to the oven.
  • Cook for a further 5-10 minutes or until cheese has melted.

4 medium potatoes
100g strong cheddar, grated, plus extra for topping
100g sweetcorn
100g mixed pepper, diced
small handful fresh herbs, such as oregano, basil, coriander, dill or thyme

Steps:

  • Equipment you will need: medium mixing bowl, small mixing bowl, dessertspoon, fork, baking tray, grater, oven gloves.
  • Get an adult to heat the oven to 200C/180C fan/gas 6 and bake the potatoes for about 1 hr until cooked and the skins are crispy. Leave to cool completely. This can be done up to 2 days ahead.
  • To stuff the jacket potatoes, heat the oven to 200C/180C fan/gas 6. Ask an adult to cut the potatoes in half. Using a spoon, carefully scoop out the middle of the potato, leaving the skin unbroken (like a boat). Place the scooped potato into a mixing bowl.
  • Using the fork, mash the potato until there are no lumps. Add the cheese, sweetcorn and peppers and mix well. Gently pick the leaves from the herbs. You can rip the larger leaves into smaller pieces. Stir the herbs into the cheesy potato mixture.
  • Using the spoon, carefully scoop the mixture back into the potato boats. Make sure that you use all the mixture up. Sprinkle with a little extra grated cheese and place on a baking tray. Using oven gloves, place the tray in the oven and bake for 10-15 mins until golden.

  • Preheat the oven to 350°F or 180°C.
  • Bake the potatoes as per your personal preference- I bake them in the oven for about an hour, until the skins are firm and the centres are soft. You may like to smear with butter, sprinkle with salt and wrap in foil.
  • Towards the end of the potatoes' cooking time, heat the baked beans in a pan on the stove, until hot.

2 (105 g) cans pink salmon, drained

  • Bake for an hour or until tender. (or microwave).
  • Make cheese sauce following the packet instructions, using only 1/2 the recommended quantity of water, so the sauce is fairly thick.

  • Cut a cross in the top of each potato and squeeze to open.
  • Place on serving plates.
