OMA'S APFELKUCHEN (GRANDMA'S APPLE CAKE)

Oma's Apfelkuchen (Grandma's Apple Cake) image

My husband's German family calls this Oma's apfelkuchen, which translates to "Grandma's apple cake." They've been sharing the recipe for more than 150 years. I use Granny Smith apples, but any variety works. -Amy Kirchen, Loveland, Ohio

Provided by Taste of Home

Categories     Desserts

Time 1h5m

Yield 10 servings.

Number Of Ingredients 11

5 large egg yolks
2 medium tart apples, peeled, cored and halved
1 cup plus 2 tablespoons unsalted butter, softened
1-1/4 cups sugar
2 cups all-purpose flour
2 tablespoons cornstarch
2 teaspoons cream of tartar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup 2% milk
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. Add milk; mix well (batter will be thick)., Spread batter into a greased 9-in. springform pan wrapped in a sheet of heavy-duty foil. Gently press apples, round side up, into batter. Bake until a toothpick inserted in the center comes out with moist crumbs, 45-55 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Remove rim from pan. Dust with confectioners' sugar.

GERMAN MARBLED CAKE (MARMORKUCHEN)

German Marbled Cake (Marmorkuchen) image

This is the classical German marbled cake. There are several recipes for marbled cakes posted here on food.com but none is the authentic one, somewhat similar to a pound cake.

Provided by Mia in Germany

Categories     Dessert

Time 1h30m

Yield 16 pieces, 16 serving(s)

Number Of Ingredients 11

1/2 lb butter, softened
1/2 lb sugar
3 large eggs
1 lb cake flour
2 teaspoons baking powder
1/2 cup milk
1 ounce cocoa
3/4 ounce sugar
2 tablespoons milk
1 dash salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees and grease a bundt cake pan.
  • Beat butter and sugar together, then add vanilla, eggs and salt.
  • Combine flour and baking powder and stir into butter-sugar-egg mixture, alternating with the milk. Only add enough milk for the batter to drop heavily and ripping apart from a spoon.
  • Fill 2/3 of the batter into the greased cake pan.
  • Mix the remaining batter with cocoa, sugar and 2 or 3 tablespoons milk, until batter again drops heavily and ripping apart from a spoon.
  • Pour cocoa batter on top of the light one and move a fork spiralling through the two layers, so that you get a marbled pattern.
  • Bake for about 75 minutes.

Time 1h10m

Yield 8 serving(s)

Number Of Ingredients 7

1 cup butter (Magarine)
1 cup sugar
3 eggs
3 cups flour
1 teaspoon baking powder (originally, 1 teel.)
1 tablespoon lemon juice
200 g chocolate (about 1 cup)

Steps:

  • Beat butter and sugar until fluffy.
  • In a separate bowl, beat eggs until frothy, and gently add to butter and sugar.
  • Add in flour, baking powder and lemon juice.
  • Pour 2/3 of the batter into a greased and floured cake pan (I'm assuming a 9 inch spring form or 13x9 pan would work.)
  • Melt the chocolate, and mix into the remaining batter. (You may need a tablespoon of cream to thin the chocolate as you melt it.) Pour over the batter in the pan, and make a marbled pattern using a fork.
  • Bake for 60 minutes at 350°F.
