KNUCKLE OF PORK WITH MASHED SWEDES (FLASKLAGG MED ROTMOS)
A traditional Swedish dish. I couldn't resist posting it for the fun of its name when translated into English. Typical autumn or winter food. In Sweden we use slightly salted meat (a kind of preservation), but it's OK to use fresh meat.

Steps:
- Rinse the knuckle.
- (If using salted, soak in cold water for 12 hours).
- Cover with water in a pot, add the bouquet, pepper and salt.
- Bring to a boil and let simmer for 2-3 hours, or until done.
- One hour before serving, peel and cut the roots into chunks.
- Take some of the broth and boil the swedes for 30 minutes.
- Then add the potatoes and the carrot and some more broth if necessary.
- Boil until soft (abt. 20 minutes).
- Now there should not be much liquid left.
- Mash the roots, add salt and pepper to taste, and eventually stir in the butter.
- Serve with the knuckle and mustard.

Steps:
- In a bowl, combine all the ingredients. Roll lamb mixture to the size of a golf ball then flatten them down to about ½-inch thick. Place patties on a baking sheet greased with oil. Brush oil on patties, loosely cover and refrigerate for 30 minutes.
- Heat a griddle pan on medium-high heat and when hot, cook koftas for 3 minutes per side.
- To make yogurt sauce:.
- 1/2 cup plain yogurt - 1 tablespoons tahini - 1/2 tablespoons fresh squeezed lemon juice - 1 teaspoons mint leaves, finely chopped - freshly ground black pepper - 1/2 teaspoons cumin.
- In a small bowl, combine all the ingredients, stir, taste & adjust. Cover and refrigerate until ready to serve, about 30 minutes.
- This can be served with flatbread and yogurt sauce or on sliders with yogurt sauce and muhammara.

This is THE LAMB SOUP for a quiet, intimate evening on a rainy day. My family uses white burgundy wine which blends wonderfully with the vegetables and ends up tasting a bit sweet. Children wont even know there's wine in the soup. Celery gives a rustic, fresh taste. TRULY, WONDERFUL RUSTIC TASTING SOUP. Steps:
- Chop finely the celery, carrot and onion and sauté in 3 tablespoons of olive oil. As soon as the onion begins to change colour, add the lamb and continue to cook. After a few minutes, add the wine and allow to evaporate completely, then add the tomatoes. Continue to cook over a low heat for about one hour, then add the broth.
- Finally add the noodles and cook for a few minutes.
- Serve with freshly ground pepper.

Steps:
- Trim and cut meat into 2 cm (3/4 inch) cubes.
- Heat 1/2 the olive oil in a heavy pan and brown meat quickly on each side.
- Transfer to a plate.
- Add remaining olive oil, onion, garlic and sweet pepper.
- Fry gently until onion is transparent.
- Add tomato and water.
- Stir well, and add bahrat or allspice, salt and pepper to taste and most of the parsley.
- Return lamb to pan, cover and simmer gently for 1 1/2 hours or until lamb is tender and sauce is thickened.
- Very good on a bed of Turkish Wedding Pilaf (Dugun Pilav).
- Sprinkle hot meat with reserved chopped parsly before serving.

Steps:
- Pick over lentils and wash in several changes of cold water. Drain.
- Put lentils in a large pot with 8 cups water, spring onion, garlic if used, olive oil and parsley.
- Bing to a boil, cover pan and simmer on low heat for 1 hour or until lentils are soft.
- Put 1/4 cup water and flour in a screw top jar, seal and shake until thoroughly combined. This prevents lumps forming. pour this gradually into the boiling soup, stirring constantly until thickened slightly.
- Add vinegar, sea salt and pepper to taste. Return to the boil and boil gently for 5 minutes. Serve with wedges of fresh lemon to squeeze onto individual portions and a fresh salad if wished.
