BEST EVER OM ALI (EGYPTIAN BREAD PUDDING)
An Egyptian classic as old as time, gets an upgrade with the use of delightfully delicious PALMIERS (lunettes) instead of regular 'ol puff pastry or roaa (Egyptian flat bread). Oodles of crushed palmiers get mixed with nuts, sweetened hot milk, topped with whipped cream and broiled to perfection. The result...crunchy and caramelized on top, deliciously creamy and silky in the bottom.

Steps:
- Adjust the oven rack to medium position and preheat the oven's broiler to 200C/390F.
- In an oven safe baking dish, break in half 3/4 of the amount of palmiers, and arrange in layers. Set aside the remaining 1/4 of the palmiers. Add in the nuts, if using. I prefer to serve it on the side as not everyone likes nuts.
- In a medium saucepan, over medium-hight heat, stir together the milk and sugar, until the sugar dissolves, then bring to a boil.
- Pour the boiling milk mixture over the palmiers.
- Use the reserved 1/4 amount of palmers to top the surface of the milk-soaked palmiers. This will create an extra crunchy topping.
- Dot the surface of the dish with spoons of eshta. No need to spread it. If using whipped cream, evenly spread it all over to cover the entire surface of the dish.
- Place the dish under the oven's broiler until bubbling around the edges and the top turns golden brown; about 10 minutes. Keep a close eye over it as it might brown in less time.
- Serve right away, hot with assorted nuts on the side (if you haven't already added them in the dessert before baking)
OM ALI
This Egyptian dessert contains phyllo dough or puff pastry, milk and nuts. Use any kind of nuts that you would like and eat it with a spoon. Legend has it that Om Ali was the first wife of the sultan Ezz El Din Aybek. When the sultan died, his second wife had a dispute with Om Ali, resulting in the second wife's death. To celebrate, Om Ali made this dessert and distributed it among the people of the land.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
- Place the pastry sheets in the baking dish and place the dish in the oven. Watch it closely. When the top layer turns crunchy and golden, remove it from the oven. Continue until all the sheets are cooked.
- Preheat the oven's broiler.
- In a bowl, combine walnuts, pecans, hazelnuts, raisins, coconut and 1/4 cup sugar. Break cooked pastry into pieces and stir into nut mixture. Spread mixture evenly in 9x13-inch dish.
- Bring milk and 1/2 cup sugar to a boil in a medium saucepan over medium heat. Pour over nut mixture.
- Beat the heavy cream with the remaining 1/2 cup sugar until stiff peaks form. Spread evenly over nut mixture in dish.
- Place dessert under oven broiler until top is golden brown, about 10 minutes. Serve hot.

OM ALI, THE EASIEST RECIPE
Use full fat and rich creamy milk. Use good quality fresh palmiers that are made with real butter.

Steps:
- In a saucepan heat milk with all ingredients for milk. Bring it to boil then let it simmer for 15-20 minutes until the milk is reduced to half.
- Let it cool a bit then add cream and mix well. Set aside.
- In an 8 inch casserole break 10 palmier into large bits. Also, sprinkle raisins.
- Pour milk-cream syrup over broken palmiers.
- Now break the remaining 3 palmiers and sprinkle over the milk.
- Dot the casserole with whipped cream.
- Bake in a pre-heated oven for 15 minutes at 350 F until bubbling hot.
- Then broil for 15 minutes until golden and you see few dark spots on a biscuit.
- Garnish with freshly toasted nuts and serve. (Skip garnish if you don't like nuts.)

- Break the puff pastry into bite-sized pieces.
- Mix pastry with nuts, raisins and coconut and put in a deep serving dish.
- Put the sugar and milk in a pot and bring to a boil.
- Pour over the pastry, nuts and raisins.
- Spread whipped cream evenly over mixture.
- Bake 25 minutes at 400 degrees.
- Serve, and enjoy.
