OLIVE OIL POACHED COD WITH TOMATO SAUCE, PINE NUTS AND HERBS
This is definitely the most Christmas-looking dish I've ever made! When arranged on a platter, it just looks so beautiful and inviting - with all the vibrant colors of the tomatoes, olives, crispy caramelized shallots and fresh herb topping.

Steps:
- For the sauce: Add 1/4 cup olive oil and the garlic to a large Dutch oven over medium heat and cook until the garlic is aromatic, about 2 minutes. (Make sure not to overcook the garlic, as there should be no color.) Add the red pepper flakes, then the crushed tomatoes and the remaining 1/4 cup olive oil and bring to a simmer. Add the olives and capers and cook, stirring occasionally, until the sauce thickens and the water reduces from the top, about 12 minutes. Season with salt and pepper, then add the rosemary sprigs and allow to steep.
- For the caramelized shallots: Meanwhile, heat the butter and oil in a 12-inch saute pan over medium-low heat. Add the shallots, sugar and salt and cook, stirring occasionally, until the shallots are caramelized, 8 to 10 minutes. Set aside.
- For the cod: Heat the oil, garlic and basil in a 14-inch saute pan to 120 degrees F and cook until the garlic is golden brown and the basil has started to wilt. Discard the garlic and basil (they have done their job and seasoned the oil).
- Season both sides of the cod with salt. Gently place the cod fillets in the pan, making sure they are submerged, and poach until the fillets turn cloudy white and are firm to the touch with a slight bounce, about 8 to 9 minutes. Remove from the oil with a slotted spatula and drain on a paper towel-lined plate.
- For serving: Lightly toast the pine nuts in a small saucepan over medium-low heat, stirring occasionally, until golden brown, about 5 minutes. Toss together with the basil, parsley, oil and a pinch of salt in a small bowl.
- Spoon the sauce onto a large platter and nestle the fish on top. Top each filet with a spoonful of caramelized shallots, then sprinkle the pine nut mixture over the fish.
EGGS POACHED IN TOMATO-OLIVE SAUCE
A briny tomato sauce with sliced olives and thyme simmers away, effortlessly poaching eggs to runny-yolk perfection.

Steps:
- Smash 3 of the cloves of garlic. Heat the oil in a large skillet over medium-high heat until hot. Add the onion, thyme and smashed garlic and cook until golden, about 6 minutes. Add the gin and cook until the liquid has reduced by half. Stir in the tomatoes with their juice, the olives and brine and bring to a simmer. Cook, stirring occasionally while breaking up the tomatoes, until the sauce is slightly thickened, 10 to 15 minutes. Season with 1/2 teaspoon salt and a couple turns of pepper.
- Make 8 shallow wells in the sauce. Crack an egg into each and sprinkle with salt and pepper. Cover the skillet and simmer until the egg whites are set but the yolks are still runny, about 8 minutes.
- Rub the toasted bread slices with the remaining 1 clove of garlic and serve with the eggs.
HALIBUT POACHED IN OLIVE OIL
Steps:
- Heat the oven to 250 degrees F/120 degrees C.
- Lay the fish fillets in a baking dish just large enough to hold them. Pour over enough oil to cover. Add the orange zest, fennel seed, thyme sprigs, garlic and some pepper. Bake until just tender, about 10 minutes. Remove the fish from the oil. Garnish with the fleur de sel. Serve with a little of the cooking oil dribbled over.
RED SNAPPER AND HEIRLOOM TOMATOES POACHED IN OLIVE OIL
Steps:
- Warm a large pot of olive oil to 200 degrees F. Season fish with salt and pepper. Submerge in oil. Add tomatoes and submerge. Cook slowly until fish is done, about 15 minutes. Remove fish.
- In a saute pan over medium-high heat, cook the lardons until crispy. Remove and pour out most oil. Add garlic and cook until slightly brown. Add spinach and cook until wilted. Remove and keep warm. Add fish and turn, to quickly crisp skin on all sides. Serve fish with tomatoes atop spinach and sprinkle with lardons.
BRANZINO WITH ROASTED TOMATOES, OLIVE OIL POACHED MUSHROOMS

- For the mushrooms: In a saucepan over medium-high heat, add the olive oil to the pan and allow to heat until the verge of smoking. Then reduce the heat to medium and add the mushrooms. Allow the mushrooms to cook for 5 to 6 minutes, and then remove.
- For the fish: In a nonstick saute pan, add the grapeseed oil over medium heat for 1 minute. Sprinkle the fish with salt and pepper, and then add the fish to the pan, flesh-side down. Cook for 2 minutes, flip the fish and turn the heat off. Allow the fish to finish with the residual heat for 2 minutes. Then remove the fish and allow to rest until serving.
- For the sauce: In the same pan, return to medium-high heat. Sprinkle the tomatoes with salt and pepper, add to the pan and cook for 1 minute. Then flip the tomatoes and add the wine to deglaze the pan. Next, add the lemon juice, parsley and garlic. Remove the tomatoes and arrange flat on a serving plate, end to end. Allow the sauce to reduce by half, yielding 1/2 cup. Once reduced, turn the heat off and stir in the butter to finish the sauce. Then place the fish over the tomatoes, arrange the mushrooms and spoon the sauce over the fish. Serve.
OLIVE OIL POACHED TUNA WITH ROASTED TOMATO SAUCE
The tuna is delicately poached with bay leaf infused olive oil, then placed on a bed of pickled onions covered by a roasted tomato sauce. This recipe comes from "One Big Table," by Molly O'Neill. She calls the recipe "Uncle Rocco's Tuna" and it was originated by Cara Mia Constantine.

- Preheat the oven to 300 degrees.
- Place tomatoes on a baking sheet and sprinkle with half the garlic; season with thyme, sugar, about 1/4 teaspoon salt and 1/8 teaspoon pepper.
- Bake until the tomtoes are shriveled, about 3 to 3 1/2 hours; let cool.
- Coarsely chop the tomatoes.
- Then heat the teaspoon of olive oil in a skillet over medium heat; add remaining garlic and cook until softenend, about 2 minutes.
- Stir in the tomatoes and tarragon, cook for 2 minutes more; taste and add salt and pepper as desired.
- Meanwhile, in a medium saucepan, over medium high heat, bring the water, vinegar, sugar, 1/2 teaspoon salt and 1/4 teaspoon pepper to a boil; add onion and cook until it just begins to soften, but is still crisp, about 5 minutes.
- Drain and let cool, then toss with olive oil and set aside.
- Heat about a quart of olive oil (for poaching the fish) to 140 degrees F (use an instant read thermometer), in a medium saucepan.
- Pat the fish dry with paper towels and season with salt and pepper.
- Slide fish into the oil and cook until it is pale grayish on the outside, but still pink inside, about 5 minutes.
- To serve, divide the pickled onions among 4 plates; top with tomato sauce, then tuna seasoned with additional salt and pepper, if desired.

If you're looking for a great appetizer this is it! It is a wonderful infused olive oil that has so much flavor that people will keep going back for more. The shrimp add a sensational sweetness to the oil, plus they are extremely tasty. If you want you can jazz it up more by adding cherry tomatoes, olives, peppers, or anything else you can imagine. I made this on Father's day and everybody gobbled it up right away. It is quick and simple to make, making it perfect for all occasions. Enjoy!

- Combine the shrimp, garlic, extra virgin olive oil, red pepper flakes, and salt/pepper in a bowl. Set aside.
- Preheat oven to 400 degrees.
- Slice the baguette into crostinis and line onto sheet tray.
- Bake until the crostinis are golden brown. Remove from oven and set aside.
- Heat a sauté pan over medium high heat, once hot add the shrimp mixture.
- If garlic starts to burn turn the heat down.
- Cook until the shrimp are cooked through, turn pink, about 8 minutes.
- Toss parsley into the shrimp mixture.

- Preheat the oven to 175 degrees. Place the tomatoes, cut side up, in a roasting pan just large enough to fit them snugly in a layer (use two pans if necessary). Season with salt and pepper.
