SPAGHETTI WITH GARLIC, OLIVE OIL AND RED PEPPER FLAKES
Steps:
- Bring 6 quarts of salted water to a boil in a large pot. Add the pasta and cook until al dente, 6 to 8 minutes. Drain the pasta in a colander, reserving 2 tablespoons of the pasta water. The reserved pasta water will help create the sauce. Do not rinse pasta with water -- you want to retain the pasta's natural starches so that the sauce will stick.
- Heat the olive oil in a large saute pan over medium heat. Add the garlic and saute until light brown and fragrant. It's important not to burn the garlic or else it will become bitter. Remove and discard the browned garlic. Add the red pepper flakes and saute for 1 minute. Carefully add the pasta and toss to coat in the flavored oil. Add the reserved pasta water and cook, stirring, to create a sauce, 1 minute.
- Remove the pan from the heat and top with the fresh herbs.

If you like it a little hot, then you'll love this dish. I get requests for this a lot. You can eliminate the crushed pepper if you'd like, still makes a great tasty dish. You need not worry about extact measures. Add more or less of any of these ingredients .. it won't hurt the recipe at all.

In large fry pan add oil .. when oil is hot, reduce heat to low/med, add crushed garlic and crushed pepper flakes , saute for about 2 minutes...add parsley flakes , saute another minute or 2 (no longer, avoid garlic from browning)... add reserved pasta water, stir ...add cooked pasta using tongs, toss / blend pasta well with other ingredients just before removing pasta from pan add parmesan cheese , toss and blend . For pasta from Real Simple magazine, May, 2007. Haven't made this yet. You can upgrade this dish with sausage and red bell pepper. Just heat 1 tbsp. olive oil over medium-high heat. Add l lb. Italian sausage with the back of a wooden spoon, until it's browned and cooked through, about 10 minutes. Add 1 large bell pepper (cut into 1/2 pieces) and cook, stirring occasionally, until tender, 3-4 minutes. Add to the pasta with olive oil, garlic, and crushed red pepper and toss to combine.

- In a large skillet, heat the oil on high and add the garlic. Reduce to medium high and cook until the garlic begins to turn golden, then add the peppers. Cook until the peppers are soft and turning brown around the edges. Add the olives and crushed red pepper and stir. Pour in the wine and cook for 2 minutes.

CHILI OIL
Steps:
- Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
- Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.
ROASTED RED PEPPER TOMATO SAUCE
Steps:
- Preheat oven to 375°F.
- Cut off and discard top quarter of garlic head and wrap remainder in foil. Arrange tomatoes, cut sides up, in a foil-lined 13- by 9- by 2-inch baking pan and sprinkle lightly with salt. Add whole bell pepper and garlic (in foil) to pan and roast vegetables in middle of oven 1 hour.
- Transfer bell pepper to a bowl and cover bowl with plastic wrap, then let stand about 20 minutes. When cool enough to handle, peel pepper, discarding stem and seeds, and transfer to a food processor or blender along with tomatoes.
- Unwrap garlic and squeeze roasted cloves from skin into food processor. Add remaining ingredients and salt and pepper to taste, then purée sauce until smooth.

- Boil a large pot of water for the pasta. Salt generously and cook pasta until al dente.
- Meanwhile, heat olive oil in a skillet over medium-high heat. Add garlic and red pepper flakes and cook, stirring, until garlic is tender and fragrant. Remove the skillet from the heat and add the lemon juice. Stir to combine and set aside until the pasta is ready. (*Note: you can also cook the garlic longer, until it just starts to colour, for a more roasted garlic flavour to the dish).

JOHNNY CARINO'S OLIVE OIL DIP RECIPE
Steps:
- Preheat oven to 375°F.
- Lay chopped garlic on a baking sheet line with parchment paper.
- Place sheet in preheated oven. Roast garlic for 10 minutes and stir. Roast for another 10 minutes until garlic is golden and crispy, but not burned.
- Remove from oven. Set aside to cool.
- Place rosemary, parsley, oregano, red pepper, salt, pepper and Parmesan cheese in a food processor. Pulse until finely chopped.
- Add spice mixture to olive oil.
- Place a teaspoon or more of the roasted garlic in a shallow bowl.
- Using a long teaspoon, spoon out some of the spices and cheese mixture from the oil. Add to bowl.
- Pour in oil as desired when ready to eat.
