3 (8-ounce) cans of pitted black olives, drained
3/4 cup sun-dried tomatoes packed in olive oil
Extra-virgin olive oil
3 heads endive (about 1/2 pound)

Steps:

  • In the bowl of a food processor, add the olives, sun-dried tomatoes and the olive oil it was packed in. Pulse until smooth, but still chunky. Add more extra-virgin olive oil if mixture is too dry. Spoon into a serving bowl. If not serving immediately, cover tightly with plastic wrap and refrigerate up to 2 days. Be sure to bring it to room temperature and to mix it thoroughly before serving.
  • Gently pull off the leaves from the endive, being carefully not to tear the leaves. Wash thoroughly with cold water and dry completely.
  • Place the bowl of tapenade in the center of a large platter. Decoratively circle the tapenade bowl with the endive leaves working your way to the rim of the platter.

5 oil-packed sun-dried tomatoes, drained and finely chopped
2 tablespoons halved pitted small black olives, such as kalamata
2 tablespoons halved pitted green olives
1/4 teaspoon dried thyme
Salt and freshly ground black pepper
3 shallots, thinly sliced
1 zucchini, ends trimmed, cut into 1/2-inch rounds
1 yellow summer squash, ends trimmed, cut into 1/2-inch rounds
1 small red bell pepper, cored, seeded, and cut into 1/4-inch strips

Steps:

  • In a medium bowl, whisk together the 1/3 cup olive oil, the sun-dried tomatoes, black and green olives, and thyme. Season with salt and pepper.
  • In a medium skillet, heat the remaining 3 tablespoons oil over medium-high heat. Add the shallots and cook until translucent and tender, 2 to 3 minutes. Add the zucchini, yellow squash, bell pepper, and 1/2 teaspoon salt. Cook, stirring frequently, for 6 to 8 minutes, until the vegetables are tender.
  • Add the warm vegetables to the olive and sun-dried tomato mixture and toss until coated. Transfer to a serving bowl and serve immediately.

SUN-DRIED TOMATO, BLACK OLIVE AND MOZZARELLA ORZO GRATIN

1/2 pound orzo
1 cup minced onion
1/2 cup diced fennel
2 tablespoons unsalted butter
1 16-ounce can plum tomatoes, drained and chopped
1 cup light cream combined with 1 tablespoon flour
1 tablespoon minced fresh rosemary or 1 teaspoon dried, crumbled
2/3 cup sliced sun-dried tomatoes
1/3 cup sliced pitted oil-cured olives
1/2 pound fresh Mozzarella, diced
2 tablespoons minced fresh basil
1/3 cup freshly grated Parmesan

Steps:

  • Preheat oven to 400 degrees. In a pot of boiling salted water cook the orzo until al dente and drain. Transfer to a large bowl. In a large skillet cook the onion and fennel in the butter over moderately low heat, covered, for 5 minutes. Add the tomatoes, cream mixture, rosemary and salt and pepper and simmer the mixture for 5 minutes. Add the vegetables to the bowl containing the orzo and stir in the sun-dried tomatoes, olives, all but 1/4 cup of the mozzarella cheese, basil and salt and pepper to taste. Transfer the mixture to a buttered 1-quart baking dish and sprinkle with the remaining Mozzarella and Parmesan. Bake for 30 minutes, or until golden brown.

6 ounces self-raising flour
2 ounces whole wheat flour
1/4 teaspoon baking powder
1/4 teaspoon cayenne pepper
1/4 teaspoon mustard powder
2 tablespoons olive oil
1 1/2 teaspoons chopped fresh thyme
3 ounces feta, cubed small
10 black olives, pitted and roughly chopped
2 ounces sun-dried tomatoes, drained of oil and chopped (reserve 1 tablespoon oil)
1 large egg
2 tablespoons milk
milk, for brushing
2 ounces feta, crumbled

Steps:

  • First sift the flours and baking powder into a large bowl, tip in any bran left in the sieve, then add the cayenne and mustard powder and, using a knife, work in the 2 tablespoons of olive oil, plus the reserved tablespoon of oil from the sun-dried tomatoes.
  • When the mixture looks like lumpy breadcrumbs stir in the chopped thyme, cubed Feta, olives and sun-dried tomatoes.
  • Now in a separate bowl beat the egg with the 2 tablespoons of milk and add half this mixture to the other ingredients.
  • Using your hands, bring the mixture together to form a dough, adding more of the egg and milk as it needs it – what you should end up with is a dough that is soft but not sticky.
  • On a floured board, roll the dough out to a depth of 1 inch (do not roll it out thinner they might not rise well) stamp out the scones using a 2 inch cutter, plain or fluted.
  • Put the cut-out pieces on a baking tray and brush them with the milk.
  • Finally top each scone with the crumbled Feta, and put the tray on the highest shelf of the oven to bake for 12-15 minutes or until they've turned a golden colour.
  • Then remove them to a wire rack to cool.

This is a truly delicious and easy vegetarian quiche that my family love. Its so simple to whip up on a weeknight and even though it has no meat is substantial enough to satisfy the hungriest of kids or partners. The subtle flavour of basil in this impressive quiche gives it that extra special "something" and you could easily add in spinach or any of your other fave vegies to make it your own.

2 sheets frozen shortcrust pastry, thawed
1/3 cup sun-dried tomato, coarsely chopped
150 g feta cheese, crumbled
1/4 cup basil leaves, chopped
1/2 cup pitted black olives, halved
1/2 cup grated tasty cheese
2 eggs
1 cup light cream

Steps:

  • Preheat oven to 200°C and grease a 23cm diametre flan pan. Use pastry to line the base and sides of the pan.
  • Blind bake the pastry by placing a sheet of baking paper over it and pouring enough uncooked rice or beans over the paper to completely cover the base. Bake for 10 minutes then remove from oven and discard paper and rice. Reduce oven temperature to 180°C.
  • Spread sundried tomatoes, feta, basil, olives, feta and grated cheese evenly over the base of the pastry case.
  • Combine eggs, cream, and salt and pepper in a jug and whisk with a fork to combine. Pour over tomato mixture in the pastry case.
  • Bake quiche for 30 to 35 minutes, or until firm in the centre. Serve.

4 small zucchini, trimmed, cut lengthwise in half
2 red bell peppers, quartered
4 8-ounce yams (red-skinned sweet potatoes), peeled, each cut lengthwise into 6 wedges
1 tablespoon grated orange peel
2 teaspoons chopped fresh rosemary
3 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
1 tablespoon chopped brine-cured black olives (such as Kalamata)
2 oil-packed sun-dried tomato halves, drained, chopped
2 hard-boiled eggs, shelled, halved

Steps:

  • Spray grill with oil spray and prepare barbecue (medium-low heat). Spray all vegetables on all sides with oil spray. Sprinkle with salt and pepper. Grill vegetables until tender, turning often, about 10 minutes for zucchini, 12 minutes for peppers and 30 minutes for yams.
  • Meanwhile, mix orange peel and rosemary in small bowl. Whisk lemon juice and next 3 ingredients in large bowl. Season dressing with salt and pepper. Add grilled vegetables to dressing; toss to coat.

1 cup cherry tomatoes
1/4 cup kalamata olive, pitted and sliced (you can use any brine packed black olive)

1/2 lb pasta, cooked in salted water and drained (bowties, and fuisli work well)
4 ounces montrachet or 4 ounces chevre goat cheese

Steps:

  • Add the sundried tomatoes and the broth and cook until broth is reduced by 1/3.
  • Add the cherry tomatoes and heat till skins begin to pop.
  • Stir in olives, basil and parsley.
  • Toss with hot pasta and crumble goat cheese through. Save a little to scatter on top.
