BASIC OLD-FASHIONED GRITS

Kosher salt
1 cup old-fashioned grits (not instant or quick-cooking)
2 tablespoons unsalted butter, cut into pieces
Freshly ground pepper

Steps:

  • Combine 4 cups water and 1 teaspoon salt in a medium saucepan and bring to a simmer over medium heat. Gradually add the grits, whisking constantly. Reduce the heat to medium low and cook, stirring occasionally with a wooden spoon, until tender, about 20 minutes. If the grits seem too thick, thin with water, 1 to 2 tablespoons at a time.
  • Stir in the butter and season with pepper. Remove from the heat and cover to keep warm.

3 cups milk (2% or whole)
2 cups water
1 ¼ cups old fashioned corn grits ((coarse white cornmeal_)
2 teaspoons salt
1 teaspoon garlic powder
¼ teaspoon cayenne pepper
¼ teaspoon smoked paprika
6 tablespoons butter
1 ½ cups shredded sharp cheddar cheese ((or I like half cheddar and half pepper jack))

Steps:

  • Mix the milk, water, salt, garlic powder, cayenne pepper, and paprika in a large 6 quart sauce pot. Set over medium-high heat and bring to a boil.
  • Once boiling, whisk in the grits, until there are no clumps. Lower the heat to medium-low. Cover and simmer for 12-20 minutes, (depending on the package instructions) stirring occasionally.
  • Once the grits seem soft and thick, stir in the butter and shredded cheese. Taste, then season as needed.
  • If the grits are thicker than desired, stir in another ¼ - ¾ cup water. They will continue to thicken as they cool.

1 cup quick-cooking grits
1/2 cup butter
8 ounces sharp cheddar cheese
2 eggs
1 cup milk
3 tablespoons garlic powder
1 tablespoon paprika

Steps:

  • Cook grits according to package directions.
  • Stir in butter and cheddar cheese, cut into cubes.
  • Crack 2 eggs into measuring cup, and fill measuring cup up to the 1 cup line with milk (scant). Stir. Add generous amounts of garlic powder.
  • Add milk/egg mixture to grits/cheese/butter mixture. Stir well.
  • Pour prepared mixture into 8x8 (brownie size) pan.
  • Bake at 350 F for 60 minutes.
  • ENJOY! They taste even better the next day. Refrigerate leftovers.

This is a recipe from her magazine "Cooking With Paula Deen" Grits is the one breakfast food I will eat that is more like a cooked cereal (Which I normally call gruel" I grew up sneaking my daddys grits from his breakfast plate, and now have learned to eat them with the help of Paula Deen any time of the day. Try these wonderful grits as a side to your dinner dish instead of potatoes.

1 garlic clove, minced
1/2 cup grits, old fashioned
3/4 cup cheddar cheese, shredded
2 tablespoons butter
1 teaspoon ground red pepper (I like to use red pepper flakes instead)

Steps:

  • In a medium saucepan, combine broth and garlic. Bring to a boil over medium-high heat.
  • Slowly stir in grits; reduce heat to low, and cook until grits are tender, stirring constantly, about 15 minutes. Remove from heat and stir in cheese, butter, and pepper.
