OLD-FASHIONED SO. GEORGIA CRACKER SALAD (EXTREMELY EASY)
I noticed every cracker salad here at RZ called for fresh tomatoes so I figured ... why not ... I'll put in the recipe I was raised on. The other recipes here look good also ... this just happens to be the one I am used to and we dearly love it. It is great as a side-dish with fried chicken, great as an appy stuffed inside little cherry or grape tomatoes, and perfect as a complete lunch when stuffed inside a tomato. Haha ... DH is sitting here now eating it as a dip on top of more saltines. :)

Steps:
- Pour tomatoes (including juice) in a large boil. Using your hands, squeeze each tomatoe through your fingers (be careful you don't squirt the juice on you -- I poke each one good with my fingers gently before I commence squeezing) until they look crushed but still chunky. Yes, you can buy already crushed tomatoes but I don't like their texture -- almost like a sauce instead of crushed tomatoes.
- To the tomatoes, add remaining ingredients and stir. If appears to dry for you, add a LITTLE more mayo.
- Salt and pepper to taste.
- Tastes just as great either fresh made or after refrigerated.

OLD-FASHIONED SODA CRACKERS
When I was in Mexico, one of the silliest but best things I remember eating, were homemade soda crackers that were served with our meal. They were still warm right out of the oven, and heavenly. We had them in a quaint little restaurant in a village called Taxco. These are just like them! It makes a lot, but you won't believe how quickly you'll go through them!!

Steps:
- In large bowl, combine flour, baking soda and salt.
- Cut in butter til crumbly.
- Add water, stir just until mixed.
- Turn dough out onto lightly floured surface and knead til thoroughly mixed. About 3 minutes.
- Roll out dough, a fourth at a time, on well-floured surface to 1/8" thickness.
- Cut into 2" squares.
- Place 1" apart on ungreased cookie sheets.
- Prick 2 or 3 times with a fork, then sprinkle with salt.
- Bake in preheated 350º oven for 20-25 minutes or til lightly browned.

HOMEMADE SODA CRACKERS

Steps:
- In a small bowl, sprinkle the yeast over the warm water; stir to dissolve and let stand for 5 minutes.
- In a large bowl, mix the flour, salt and baking soda. Add the yeast mixture and stir vigorously with a wooden spoon to blend. If the dough is sticky, add sprinkles of flour until a soft dough forms.
- Knead the dough until it is soft and has an elastic consistency, about 5 minutes. Add sprinkles of flour to control the stickiness. If using a mixer or a food processor, the dough will form a soft ball around the revolving dough hook and clean the sides of the bowl. Add flour, if necessary, to firm up the dough.
- Drop the dough into a buttered bowl, cover with plastic wrap and place in the refrigerator to rest for at least 1 hour and up to 18 hours (the longer the better.).
- Arrange the rack in the middle of the oven and preheat to 425 degrees F. Line a baking sheet with parchment paper.
- With a heavy rolling pin, roll the dough into a rectangle about 18 by 6 inches and no thicker than 1/8-inch. Fold the dough from the short ends, brushing off the excess flour, to make 3 layers for extra flaky crackers. Roll again using the rolling pin.
- Prick the dough with the tines of a fork to help cook evenly. Evenly cut the dough along the edge of a ruler or yardstick with a pizza or cookie cutter into desired shapes.
- Place the crackers close together on the prepared baking sheet. Sprinkle lightly with salt from 12-inches above the crackers to distribute evenly.
- Bake until lightly browned and crisp, 15 to 20 minutes, depending on the thickness of the crackers. Check the crackers several times during the baking period to make certain those on the outer edge of the baking sheet are not getting too brown. If so, switch the ones on the outside with the ones in the middle.
- Remove from the oven and brush the crackers with melted butter. Let cool on a metal rack.

- Sesame-Onion Crackers:.
- Add to the dough, with the dry ingredients, 4 teaspoons each sesame seeds and grated onion.
- Herb Crackers:.
- Add to the dough, with the dry ingredients, 4 teaspoons each chopped fresh parsley and chives and 1/2 teaspoon dried dill weed.
- Poppy Seed Crackers:.
- Add to the dough, with the dry ingredients, 2 teaspoons poppy seeds.

I got this recipe from a friend who lived in Middlesboro, KY. She gave it to me about 15 years ago and said it had been handed down to her from her Great Grandmother.

Steps:
- Combine sugar and evaporated milk in a medium saucepan and bring to a boil. (stir constantly to prevent scorching).
- Remove from heat; add peanut butter and vanilla. Mix well.
- Add crushed crackers and toss lightly to blend. Allow mixture to stand for 15 minutes.
- Drop mixture by small teaspoon onto waxed paper.
- Allow candies to firm before serving.

- Mix flour, baking powder and shortening; add milk an blend well.
- Form a ball of dough and cut into four pieces.
- Roll dough out very thin.
- Cut with a cookie cutter or the top of a glass (wet the glass first).
- Place on cookie sheet. Prick with a fork 4-5 times and sprinkle with salt.
- Bake at 375 degrees 8 to 10 minutes or until golden (watch crackers carefully so they don't burn).
