Eating Suburbia's 5 Minutes 3 Bananas Banana Bread image

While looking for something entirely different, I found this recipe, entitled "5 Minutes/3 Bananas/1 Loaf of Goodness" Banana Bread. As I'd been looking for a good, simple banana bread recipe for some time, I decided to add this one to my recipes here, because it definately fits the bill. Personally, I add nuts, as they're a must in banana bread in this house, but add whatever you like best in yours.

Number Of Ingredients 9

1 3/4 cups all-purpose flour (can substitute part whole wheat flour)
2/3 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup margarine or 1/2 cup butter
3 bananas, mashed (about 1+ cup)
2 eggs, slightly beaten
1/2-1 cup chocolate chips (or whatever your heart, or taste buds, desire!) or 1/2-1 cup coconut (or whatever your heart, or taste buds, desire!)

Steps:

  • Preheat oven to 350 degrees. Grease and flour 9x5" loaf pan.
  • In large bowl, mix first 5 ingredients, then cut in the margerine or butter with a pastry blender until mixture resembles course crumbs (a potato masher works well for this, too)/ With fork stir in mashed bananas and beaten eggs, just until blended. Spread batter into a pan.
  • Bake 55 minutes to 1 hour until toothpick comes out clea. Cool for 10 minutes on a rack, then remove from pan.

50g margarine
125g light or dark brown sugar (I use 50/50)
1 large egg
2 ripe bananas, mashed (I sometimes bake them in the preheating oven in their skins to soften and deepen the flavour)
200g self rasing flour
1tsp cinnamon or mixed spice (optional)
1 tsp vanilla extract (optional)
Splash of milk

Steps:

  • Preheat oven to 180C/fan 160C/gas 4.
  • Grease and line a loaf tin
  • In a large bowl beat the sugar and butter together using a wooden spoon until combined and smooth.
  • Add the egg, vanilla and mashed banana and beat again for 1 minute.
  • Fold in the sifted flour and cinnamon (or mixed spice if using.) Beat mixture with your wooden spoon until combined. Add a splash of milk if the mixture is too stiff, you want a dropping consistency.
  • Spoon mixture in to a loaf tin and bake for 45min - 1 hour or until a knife pushed in to the centre comes out clean.
  • Dust with icing sugar then eat warm or cold... store in an airtight container. Best eaten within 3-4 days.

1½ cups all-purpose flour
½ cup whole wheat or whole wheat pastry flour
¾ teaspoon baking soda
½ teaspoon sea salt
1 cup organic cane sugar or coconut sugar*
¼ cup butter (softened or melted coconut oil)
2 large eggs
3 ripe bananas (mashed (1 1/2 cups))
⅓ cup plain Greek yogurt
1 teaspoon vanilla extract
½ teaspoon cinnamon

Steps:

  • Preheat oven to 350° F.
  • Combine the flour, baking soda, salt and cinnamon in a large mixing bowl.
  • Place sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute).
  • Add the eggs, 1 at a time, beating well after each addition.
  • Add banana, yogurt, and vanilla; beat until blended.
  • Add flour mixture to the wet mixture and beat at low speed just until moist.
  • Spoon batter into an 8 ½ x 4 ½-inch loaf pan coated with cooking spray.
  • Bake at 350°F for 1 hour or until a wooden tooth pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.

2 cups all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon cream of tartar
1/2 teaspoon salt
1 1/4 cups old-fashioned oatmeal (1 minute oats can be used)
1/2 cup margarine or 1/2 cup butter, melted
1/3 cup soya milk, vanilla or 1/3 cup milk
1 banana, ripe & mashed
1/4-1/2 cup pecans or 1 tablespoon crystalyzed ginger

Steps:

  • Combine dry ingredients; set aside.
  • Blend mashed banana, melted margarine, and soy milk until fairly smooth. Add in dry ingredients and optional item and mix just until moistened. Pour out onto floured board. Incorporate more flour if dough is too sticky. Cut dough in half and roll or pat each half into a circle, about 7-8 inches around. Cut into 8 wedges. Place on silpat or oiled baking sheet.
  • Bake 425 for about 10 minutes, until light golden brown.
