Not all cake mix gets made into a cake! We used one to jump-start these crowd-pleasing Strawberry & Cream Bars. Dee-licious.

1/2 cup butter, softened
1 pkg. (2-layer size) white cake mix
2 eggs, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/3 cup granulated sugar
1 tsp. vanilla
3 cups sliced fresh strawberries
1 tsp. powdered sugar

Steps:

  • Heat oven to 350ºF.
  • Beat butter, cake mix and 1 egg in large bowl with mixer until crumbly. Reserve 3/4 cup crumb mixture; press remaining crumb mixture onto bottom of 13x9-inch pan sprayed with cooking spray. Bake 10 min.
  • Meanwhile, beat cream cheese, granulated sugar and vanilla until blended. Add remaining egg; mix well.
  • Spread cream cheese mixture over crust; top with strawberries, then reserved crumb mixture.
  • Bake 45 min. or until center is set and crumb topping is lightly browned. Cool completely. Refrigerate 30 min. before cutting into bars.
  • Garnish with sifted powdered sugar just before serving.

2 sticks (1 cup) salted butter, cut into pieces, plus more for greasing pan
1 1/2 cups all-purpose flour
1 1/2 cup oats
1 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
One 10 to 12-ounce jar strawberry preserves

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch rectangular pan.
  • Mix together the butter, flour, oats, brown sugar, baking powder and salt. Press half the oat mixture into the prepared pan. Spread with the strawberry preserves. Sprinkle the other half of the oat mixture over the top and pat lightly. Bake until light brown, 30 to 40 minutes. Let cool completely, and then cut into squares.

I saw this on taste.com.au and just had to post it. Sound semi-naughty, semi-healthy and also uses brekky cereal so great for the stale bits at the end of the box.

cooking spray
1 1/2 cups muesli with strawberry and yogurt
1 1/2 cups rice bubbles or 1 1/2 cups Rice Krispies
1 cup shredded coconut
3/4 cup slivered almonds
1/2 cup dried strawberries, chopped
395 g sweetened condensed milk
180 g white chocolate, broken

Steps:

  • Lightly spray a 27mm x 17mm pan with oil and line with baking paper.
  • Combine muesli, rice bubbles, coconut, almonds and strawberries in a large bowl.
  • Place milk and chocolate in a heatproof bowl over a saucepan of simmering water. Stir over low heat until chocolate has melted.
  • Pour chocolate into dry ingredients, mix until then press into prepared pan. Chill for 2 hours until firm. Cut into bars.

1 cup old-fashioned oats
1 tablespoon flax seeds
1 tablespoon chia seeds
1/2 cup shredded coconut
1 cup diced strawberries
1 cup diced apples
3/4 cup whole milk
1/2 cup half-and-half or heavy cream
1/4 cup coconut milk
2 tablespoons heavy cream
1/4 cup brown sugar
1 tablespoon vanilla extract
Pinch of kosher salt

Steps:

  • Layer the oats, flax seeds, chia seeds, coconut, strawberries and apples into two 1-pint jars.
  • In a pitcher, mix up the milk, half-and-half, coconut milk, heavy cream, sugar, vanilla and salt. Pour over the seeds and fruit in the jars. Put the lids on the jars, shake them and place them in the fridge for at least 5 hours, but preferably overnight.

1 1/2 cups chopped dried fruit, any combination you like
1/2 cup cocoa
1 cup chocolate chips
60 g butter
2/3 cup honey
2 tablespoons light corn syrup

  • Combine first 6 ingredients.
  • Place butter, honey and corn syrup in small pan.
  • Heat slowly till butter melts.
  • Add to dry ingredients and mix well.
  • Press mixture into lined tray - 18cm x 28cm.
  • Put in fridge till firm and then slice.

This is a collaboration of two recipes I found here on recipezaar, Strawberries & Cream Bread (Strawberry or Blueberry) and Strawberry Coffee Cake. My Fiance LOVES just about anything with Strawberries in it, so I went off tying to find some new things to make for him and came across those two recipes. Both are VERY delicious. :) So, after trying both, my Fiance and I found different things that we really liked about both and brought them together, creating a SUPER Strawberries & Cream Bread. We're silly people. :) Anyhow... I measured out everything, except the strawberries, walnuts and pecans. Some people may want to add more or less, I just listed the amount from the original recipe. You, too, might want to try various things to see what works for you. I, personally, think it tastes best when served hot or warm, as it is more flavorful. No matter how you have yours, I hope you like it! I haven't tried it with blueberries, yet, but I'm sure it would be SCRUMTRULESCENT!

1 3/4 cups flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/2 cup butter, softened (1 stick of butter = 1/2 cup)
3/4 cup sugar
1/4 cup light brown sugar
2 eggs, room temperature
1/2 cup sour cream, room temperature
1 teaspoon vanilla
1 1/4 cups strawberries, fresh & coarsely chopped (do NOT use frozen) or 1 1/4 cups fresh blueberries
3/4 cup walnuts (optional)
1 1/2 cups fresh strawberries, sliced (amount may vary depending on size of your baking pan. thickness of slices is up to you, I cut them a)
1/2 cup all-purpose flour
1/2 cup sugar
1/2 cup butter, cold
1/4 cup pecans, chopped

Steps:

  • Combine flour, baking powder, baking soda, salt and cinnamon; set aside.
  • In small bowl, beat butter until creamy; Gradually add sugar, beat 1 minute or until light and airy; Add brown sugar; Beat in eggs, one at a time; Beat in sour cream and vanilla.
  • Stir into flour mixture only until dry ingredients are moistened.
  • Fold in chopped strawberries and nuts.
  • Pour into a greased and floured baking pan. Just about any pan could probably be used (a loaf pan, springform pan, etc.), just keep in mind that the bread will rise, so you want to make sure your pan is deep enough to avoid overflowing. I used roughly a 10.5 inch, round pan, about 2 inches deep.
  • Place sliced strawberries, evenly, over the top of batter.
  • To make the topping: Combine the flour and sugar in a bowl.
  • With a fork or a mixer, cut in and mix butter until consistency of cookie dough (the best way I can think to describe it).
  • Tear topping into little chunks and spread evenly over top of sliced strawberries. I had just enough to cover them completely, however, as stated above, the amount you need will vary depending on the size of your pan. If you use a bigger pan, you will need to make about a batch and a half of what is stated above for the topping. If you use a considerably smaller pan, like a loaf pan, you might want to cut the topping recipe in half. It's hard to mess it up, so do what you think will work. :).
  • Bake at 350°F for 60 to 65 minutes or until toothpick comes out clean (cooking time may vary; it took about 90 minutes in my oven).
  • Remove from oven and let cool for about 10 to 15 minutes.
  • DIG IN!

2 cups sour cream
1 cup white sugar

Steps:

  • Combine the strawberries and sugar in a bowl; mash until the strawberries are completely crushed and the sugar is incorporated. Add the sour cream to the strawberries and stir until the mixture is pink in color. Serve immediately.
