CREOLE HONEY MUSTARD DRESSING
This is a wonderful salad dressing that works great as a dipping sauce for bread, raw veggies or fried chicken tenders. It is very spicy, but the spiciness can be adjusted by altering the ratio of creole mustard to Dijon mustard. While it isn't low calorie (it DOES contain a half cup of honey!), it can be made nonfat by using nonfat mayo. However, the amount of mayo called for is relatively small. I guarantee you that the nonfat version does NOT taste nonfat!

- Refrigerate for 1-2 hours before serving.
- Nonfat mayo tends to cause clumps so you may have to use a blender or an electric mixer. A little extra elbow grease or a whisk will work just as well, however.
HONEY MUSTARD LIME DRESSING
My favorite salad dressing is Caribbean Garlic by Island Grove. It's a honey mustard dressing with lime and garlic. Due to an allergy to vegetable gums that I have, all commercially made salad dressings are a no no for me. I created this to fulfill that need. This recipe makes a small amount, but you could easily double it. I prefer to make small amounts since I eats a lot of salad and like to vary my choices. Hope you enjoy this dressing as much as I do.

- In a large saucepan, combine the oil, 1/2 cup sugar, vinegar, honey, lemon juice and seasonings; cook and stir until sugar is dissolved. Remove from the heat; set aside to cool. , In a small skillet over low heat, cook almonds and remaining sugar until nuts are glazed; cool., In a salad bowl, toss the romaine, cheese and almonds.
