OLD FASHIONED POTATO SALAD

Old Fashioned Potato Salad image

This family favorite has been passed down for several generations. My daughter told me she'd tried all kinds of recipes and had never found one to top this one. I guestimate on quantify, but here are the ingredients. This is not a German potato salad that is largely vinegar. You don't want to detect that the vinegar is even there, yet without it you will not have a superior salad.

BEST OLD-FASHIONED MASHED POTATOES FOR A CROWD

Best Old-Fashioned Mashed Potatoes for a Crowd image

This is the country mash of your dreams. You don't even have to peel the potatoes before you start. Cooking them in their skins makes them more flavorful, and the skins slip off in a food mill.

Time 1h15m

Yield 8 to 10 servings

Number Of Ingredients 5

4 pounds russet potatoes, scrubbed
Kosher salt
1 1/2 cups buttermilk
1 pound (4 sticks) unsalted butter, diced
Freshly ground black pepper

Steps:

  • Put the potatoes in a large saucepan, cover with cold water by about 1 inch and add 2 tablespoons salt. Bring to a boil, uncovered, over high heat, and then reduce the heat to medium-high and simmer briskly until fork tender, about 45 minutes. Drain the potatoes, reserving 1/2 cup of the water. Quarter the potatoes and pass them through a food mill or ricer back into the pan. (Peel them first if you are using a ricer). When the potatoes are almost done, heat the buttermilk in a small saucepan over medium-high heat to just under a simmer. Set aside; it will separate and look curdled but don't worry, it will mix in fine. Fold the buttermilk and reserved cooking water into the potatoes over low heat. Then fold in the butter a handful of pieces at a time until fully incorporated. Season with salt and pepper. Serve hot.

OLD-FASHIONED POTATO SALAD

Old-Fashioned Potato Salad image

This classic potato salad is a family favorite. It is made with plain, honest, good old-fashioned ingredients...Yukon Golds (which hold up well after cooking), hard-boiled eggs, celery, and onions...a dressing made with purchased mayonnaise, ballpark-style mustard, a few splashes of cider vinegar and lemon juice, and the enhanced richness of mashed hard-boiled eggs. I guarantee that everyone will want seconds (I was told that one of my nephews ate a whole bowl at one sitting...WOW!!). This salad can easily be doubled or tripled for those larger crowds.

Categories     Salad Dressings

Time 45m

Yield 6 serving(s)

Number Of Ingredients 11

2 lbs yukon gold potatoes
4 large hard-boiled eggs, divided
1 1/2 cups chopped celery
1/2 cup chopped yellow onion
1/2 cup mayonnaise (Hellmann's is my favorite. And, please, NOT reduced-fat or nonfat)
2 1/2 teaspoons fresh lemon juice (plus more, if needed)
1 1/2 teaspoons cider vinegar
1 1/2 teaspoons ballpark-style yellow mustard (I like French's, NOT Dijon)
1 teaspoon kosher salt (plus more, if needed)
1/8 teaspoon cayenne pepper (ground red pepper)
1/4 cup chopped fresh flat-leaf parsley (Italian parsley)

Steps:

  • Bring a large pot with 3 quarts of water to a boil. While water is coming to a boil, peel and cut potatoes into 1-inch dice. Add diced potatoes to boiling water and cook about 10 minutes, or until tender (NOT mushy) when pierced with a knife. Remove and drain well in a colander.
  • Place potatoes in a large non-reactive bowl (a glass bowl is best), and cool to room temperature. Chop 3 of the hard-boiled eggs and add to the bowl with the chopped celery and onion. Mix well to blend.
  • Mash the remaining egg in a small bowl, then add the mayonnaise, 2 1/2 teaspoons of lemon juice, vinegar, mustard, 1 teaspoon of salt, and cayenne. Whisk well to blend. Add to the bowl with the potatoes and mix well to combine. Taste and season with a little more salt and lemon juice, if needed. Cover with plastic wrap and refrigerate until needed (Salad can be made 6 hours ahead, bring to room temperature for 30 minutes before serving).
  • When ready to serve, sprinkle with the chopped parsley.

MOM'S OLD FASHIONED POTATO SALAD

Mom's Old Fashioned Potato Salad image

This is the way my mom made potato salad. She would put all the dressing ingredients in a mason jar and make one of the kids shake it to mix everything. It's the best - imho.

Time 1h10m

Yield 3 qts, 20 serving(s)

Number Of Ingredients 12

8 lbs potatoes
2 cups Miracle Whip
1 cup milk
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons sugar
1 tablespoon apple cider vinegar
2 tablespoons yellow mustard
2 tablespoons relish
1 cup onion
1 cup celery
6 hard-boiled eggs

Steps:

  • Fill a 5 quart pan with potatoes, cover with water and boil until potatoes are done. The type of potato you use depends on how you like your potato salad - we like the potatoes to be very well done and cut up fairly small. I usually use russet potatoes. If you use red potatoes, you will get firmer, more indiviualized pieces of potatoes in your salad.
  • After potatoes are cooked, let them cool. Peel and cut up in bite-sized cubes.
  • Make at least 6 hard-boiled eggs. Let them cool and cut them up.
  • Dice up onions and celery.
  • Dressing: Whisk together Miracle Whip, milk, salt, pepper, sugar, vinegar, mustard and relish.
  • , Mix all ingredients together and fold in dressing.

Time 1h5m

Yield 50 serving(s)

Number Of Ingredients 19

10 lbs waxy potatoes
1 cup chopped onion
1 cup chopped green pepper
4 cups finely slivered celery
2 cups diced cucumbers
salt
pepper
cayenne pepper
12 hard-boiled eggs
1/2 cup flour
1/4 cup sugar
1 tablespoon dry mustard
1 tablespoon salt
1/2 teaspoon pepper
cayenne
1 quart milk
4 eggs
1 cup distilled white vinegar
1/4 cup butter

Steps:

  • FOR THE POTATO SALAD: Cook 10 pounds waxy new crop potatoes in salted boiling water to cover. Peel and dice. Spread in 3 serving pans, 9 by 15 inches. Sprinkle with 1 cup finely chopped onion. Cover evenly with Hot Salad Dressing. With wide spatula turn potatoes carefully in the dressing to coat completely. Let stand in a warm place, covered, for half an hour. At serving time, sprinkle with 1 cup chopped green pepper, 4 cups finely slivered celery, and 2 cups diced cucumber. Carefully toss to mix ingredients. Adjust seasoning, if necessary, with salt, pepper, and cayenne. Separately grate the yolks and whites of 12 hard cooked eggs and sprinkle on the salad in patterns through a paper doily, keeping the colors separate. Makes about 50 servings, 2/3 cup each.
  • FOR THE HOT SALAD DRESSING:.
  • Put a 2 quart pan into a roasting pan with hot water in it. In the pan, mix together 1/2 cup flour, 1/4 cup sugar, 1 Tablespoon each dry mustard and salt, 1/2 teaspoon pepper, and a generous dash of cayenne. Gradually add 1 quart hot milk, stirring until smooth. Cook, stirring, until the sauce bubbles and thickens. Cook 10 minutes, stirring often. Beat 4 eggs lightly, warm them with a little hot sauce, and stir them into the pan. Cook for a minute or two. Remove the pan from the hot water and add 1 cup full strength distilled vinegar (not the mild seasoned type). Swirl in 1/4 cup butter. If the sauce seems too thick, add a few tablespoons of water to thin it as desired. Taste and adjust the seasoning with more salt and pepper to taste. Makes 1 1/2 quarts.
