Salted butter, for greasing the mug
3 large eggs
2 tablespoons milk
2 tablespoons shredded Monterey Jack cheese
2 tablespoons finely diced ham
1 tablespoon finely diced green bell pepper
Pinch kosher salt
Pinch freshly ground black pepper

Steps:

  • Grease the inside of a microwave-safe 12-ounce mug with the butter. Add the eggs and milk, then beat with a fork until well combined.
  • Stir in the cheese, ham, bell pepper, salt and pepper.
  • Microwave on a medium-high setting for 1 1/2 minutes, then stir and microwave until the eggs are set, an additional 1 to 1 1/2 minutes.
  • Let cool slightly before serving.

1/4 cup all-purpose flour
1/4 teaspoon dried oregano
1/8 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon kosher salt
1/8 teaspoon garlic powder
1 tablespoon extra-virgin olive oil
1 tablespoon pizza sauce
2 tablespoons shredded whole milk mozzarella
6 mini pepperoni slices

Steps:

  • Combine the flour, oregano, baking powder, baking soda, salt and garlic powder in a microwave-safe mug. Add the olive oil and 3 tablespoons water and stir until a lumpy batter comes together.
  • Pour the pizza sauce on top of the batter. Sprinkle the cheese on top, followed by the pepperoni slices.
  • Cook in the microwave until the cheese is melted and the dough is crispy around the edges, about 1 minute and 30 seconds. Allow to cool slightly before serving.

1 oz fat free ham, about 2 slices, chopped
2 Tbsp fat free shredded cheddar cheese

Steps:

  • 1. Spray a large microwave safe coffee mug with non-stick cooking spray.
  • 2. Add vegetables and microwave 1 to 2 minutes until softened.
  • 3. Blot excess liquid from vegetables, return to cup. Add egg substitute, stir and microwave for 1 minute.
  • 4. Add ham and cheese and lightly stir. Microwave an additional 45 to 60 seconds until scramble is just set. Let cool and enjoy!

3 large eggs
1 tablespoon butter
¼ cup diced smoked ham
2 tablespoons diced onion
2 tablespoons diced green bell pepper
salt and freshly ground black pepper to taste
⅓ cup shredded Cheddar cheese
1 pinch cayenne pepper

Steps:

  • Beat eggs until just combined; do not over-beat.
  • Melt butter in a skillet over high heat. Add ham, onion, and bell pepper. Sprinkle in a nice pinch of salt and a touch of pepper. Cook and stir over medium-high heat until onions start to soften and ham begins to caramelize, about 5 minutes.
  • Reduce heat to medium-low and pour in the eggs. Mix briefly with a spatula while shaking the pan to ensure ingredients are evenly distributed. Quickly run the spatula along the edges of the omelet.
  • Sprinkle Cheddar cheese and cayenne pepper over the omelet. Cook, shaking the pan occasionally, until the top is still wet but not runny, about 5 minutes. Fold omelet in half with your spatula and transfer to a plate.

1 tsp salted butter
1 tsp shallot
2 eggs
1 tbsp parsley, finely chopped
1 tbsp sweet red pointed pepper, finely diced
1 tbsp chives, chopped
1 tbsp mature cheddar, grated

Steps:

  • Put the butter and chopped shallot into a microwavable mug. Cook for 30 seconds, remove from the microwave and stir. Let the mug cool down a little, then swish the butter and shallot around the mug to coat the sides lightly.
  • In a bowl or jug, beat the eggs with a fork, then add the parsley, peppers, chives, cheese and a small pinch each of salt and black pepper.
  • Pour the egg mixture into the mug and return it to the microwave, cook for 20 seconds. Next, open the microwave and stir the egg, repeat the cooking for 20 seconds and stir again. Finally, cook for another 20 seconds, during which time the egg will start to set.
  • Remove the mug from the microwave and let it stand for 1 min. If the omelette is not set enough for you, put it back in on 50% power for no more than 20 seconds.
