This is a tried-and-true, old-fashioned coconut cream pie. Took many years of searching and baking to find the right one and this is it! Enjoy!

1 cup sweetened flaked coconut
3 cups half-and-half
2 eggs, beaten
¾ cup white sugar
½ cup all-purpose flour
¼ teaspoon salt
1 teaspoon vanilla extract
1 (9 inch) pie shell, baked
1 cup frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread the coconut on a baking sheet and bake it, stirring occasionally, until golden brown, about 5 minutes.
  • In a medium saucepan, combine the half-and-half, eggs, sugar, flour and salt and mix well. Bring to a boil over low heat, stirring constantly. Cook, stirring constantly, for 2 minutes more. Remove the pan from the heat, and stir in 3/4 cup of the toasted coconut and the vanilla extract. Reserve the remaining coconut to top the pie.
  • Pour the filling into the pie shell and chill until firm, about 4 hours.
  • Top with whipped topping and with the reserved coconut.

1 cup sugar
5 tablespoons flour
1 dash salt
2 cups whipping cream
1 cup half-and-half
2 egg yolks
1 teaspoon vanilla
9 inches pie shells
2 tablespoons butter, cold and chopped
1/2 teaspoon ground cinnamon

Steps:

  • Preheat home oven to 350 degrees.
  • Mix the sugar with the flour until completely blended. Add the salt and whipping cream.
  • Blend the half-and-half with the yolks and stir into the sugar mixture, then add the vanilla.
  • Just blend the mixture; do not beat it.
  • Pour into an unbaked pie shell, distribute the cold, chopped butter evenly on top of the pie filling and sprinkle cinnamon on the top.
  • Bake the pie until the filling is completely set when the pie is jiggled. Bake "until it bubbles through for 10 minutes." In a convection oven that takes and hour and 15 minutes. In the home oven start checking the pie after an hour.

Before Cool Whip and instant pudding, this was how a cream pie was made. If you leave out the bananas, you have vanilla cream pie. If you add 1 cup shredded coconut to milk as it's being heated, you have coconut cream pie.

1 (9 inch) pie crusts, baked
3 cups whole milk
3/4 cup white sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
3 egg yolks, slightly beaten
2 tablespoons butter
1 teaspoon vanilla
3 bananas

Steps:

  • Have baked 9-inch pie shell ready.
  • In a large saucepan, scald the milk.
  • In another saucepan, combine the sugar, flour and salt; gradually stir in the scalded milk.
  • Over medium heat, stirring constantly, cook until thickened.
  • Cover and, stirring occasionally, cook for two minutes longer.
  • In a small bowl, have the 3 egg yolks, slightly beaten, ready; stir a small amount of the hot mixture into beaten yolks; when thoroughly combined, stir yolks into hot mixture.
  • Cook for one minute longer, stirring constantly.
  • Remove from heat and blend in the butter and vanilla.
  • Let sit until lukewarm.
  • When ready to pour, slice bananas and scatter in pie shell; pour warm mixture over bananas.
  • If desired, make a meringue (you'll have 3 leftover egg whites) to top the pie, or just let the pie cool until serving.

1/2 cup brown sugar
1 1/3 cups milk (mix with cream or half and half for a richer pie)

  • spread softened butter in bottom of pie pan.
  • Mix flour and sugars in bowl.
  • Add milk gradually while stirring.
  • Pour into pie shell and bake @ 390 for 30 minutes.
  • Reduce heat to 325 and continue baking until thickened.

¾ cup white sugar
2 tablespoons all-purpose flour
¼ teaspoon salt
1 cup sour cream
1 egg, lightly beaten
½ teaspoon vanilla extract
2 cups sliced peaches
1 unbaked pie crust
⅓ cup all-purpose flour
⅓ cup white sugar
1 teaspoon ground cinnamon
¼ cup butter, softened

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk together the 3/4 cup sugar, the 2 tablespoons flour, and salt. Beat in the sour cream, egg, and vanilla. Stir in the sliced peaches. Pour the mixture into the pie crust.
  • Bake in the preheated oven for 12 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C), and continue baking until the filling is set, about 30 minutes. Remove from oven.
  • Raise oven temperature to 400 degrees F (200 degrees C).
  • Whisk together the 1/3 cup flour, 1/3 cup sugar, and cinnamon in a small bowl. Mix in the butter with a fork until mixture resembles coarse crumbs. Sprinkle the crumb topping evenly over the pie.

I think my mom told me that it originated with her grandmother who was a farmer which makes sense since all the ingredients are basic staple items. For the faster times, we have made it in the microwave and its actually easier because we don't have to worry about scorching... ENJOY!

1/2 cup butter
1 cup sugar
2 cups half-and-half (cannot use 2% milk)
1/4 cup cornstarch
1 pie crust, prepared (baked)
nutmeg

Steps:

  • Melt butter in double boiler. Mix in sugar into butter.
  • Mix 1/4 cup of half and half with cornstarch.
  • Add remaining half and half to double boiler butter/sugar mix.
  • Stir in half and half/cornstarch into the butter/sugar/half and half combination.
  • Heat over med-low heat, stirring constantly until thickens.
  • Pour into baked pie shell, lightly sprinkle with nutmeg (for garnish).
  • Bake at 400 degrees for 5 minutes.
  • Refrigerate.
  • FOR MICROWAVE - mix ingredients together in safe bowl, microwave for 10 minutes, stirring at 2 minute intervals until thick. Pour into prepared shell, sprinkle with nutmeg and bake at 400 degrees for 5 minutes.
