7 pounds cut up chicken pieces
4 cups chicken stock
2 onions, chopped
3 stalks celery, chopped
3 teaspoons salt
1 egg
¼ cup milk
1 ½ cups all-purpose flour, divided
1 ½ teaspoons baking powder
2 tablespoons unsalted butter
2 tablespoons chopped fresh parsley
1 cup water
½ teaspoon ground black pepper

Steps:

  • In a large pot place chicken pieces and add the chicken stock, onion, celery and 2 teaspoons of the salt. Put heat on medium low and simmer, partially covered, 15 to 20 minutes or until chicken is tender.
  • To Prepare Dumplings: In a large mixing bowl beat together the egg and milk. Add 1 cup flour, remaining salt and baking powder and mix all together. Cut the butter into the flour mixture until the mixture is crumbly. Add 1 tablespoon of the parsley and mix. In 6 large spoonfuls, drop dumpling mixture onto the top of the simmering chicken. Cover the pot and let all simmer for 10 minutes more.
  • To Make Gravy: Remove chicken and dumplings to a large serving bowl. Cover and set aside, keeping warm. Strain the stock left in the pot, pressing out any 'veggie liquid'. Return stock to pot. Combine water with remaining flour, then stir into the strained stock. Bring all to a boil, stirring constantly, to thicken. Return chicken and dumplings to pot, combing all gently. Serve with remaining parsley.

For Dumplings:
2 tablespoons olive oil
6 large skinless boneless chicken thighs, trimmed and cut into 2-inch pieces
1/2 teaspoon salt
1 onion, chopped
2 carrots, chopped
2 celery ribs, chopped
3 tablespoons all-purpose flour
5 cups chicken broth
1 1/2 cups frozen peas
1 tablespoon chopped fresh thyme
1 cup all-purpose baking mix (like Bisquick)
1/2 cup cornmeal
2/3 cup buttermilk

Steps:

  • In a Dutch oven or large sauce pot, heat 1 tablespoon oil over medium-high heat. Sprinkle the chicken with the salt. Add the chicken to the Dutch oven and cook, turning occasionally until browned, about 7 minutes. With a slotted spoon, transfer the chicken to a plate. Add the onion, carrots, celery and remaining oil to the Dutch oven. Reduce the heat to medium-low. Cover and cook, stirring occasionally until the vegetables are very tender, about 8 minutes. Stir in the flour and cook 1 minute. Return the chicken to the Dutch oven. Add the broth, peas and thyme; bring to a boil. Reduce the heat and simmer, uncovered, stirring occasionally until the stew begins to thicken slightly, about 5 minutes. Meanwhile, to make the dumplings, stir together the baking mix, cornmeal and buttermilk in a medium bowl until a soft dough forms. Drop the dough by rounded tablespoons onto the simmering stew, making about 10 dumplings. Simmer uncovered, 10 minutes. Cover and simmer until the dumplings have doubled in size and are cooked through, about 10 minutes longer.

1 whole chicken, cut into pieces (cut-up fryer)
Salt and freshly ground black pepper
1/2 cup finely diced carrots
1/2 cup finely diced celery
1 medium onion, finely diced
1/2 teaspoon ground thyme
1/4 teaspoon turmeric
6 cups low-sodium chicken broth
1 1/2 cups all-purpose flour
1/2 cup yellow cornmeal
1 heaping tablespoon baking powder
1 teaspoon kosher salt
2 cups half-and-half
2 tablespoons all-purpose flour
2 tablespoons minced fresh parsley, optional
Salt, as needed

Steps:

  • For the chicken: Melt the butter in a pot over medium-high heat and add the olive oil. Sprinkle the chicken with salt and pepper. In 2 batches, brown the chicken on both sides and remove to a clean plate.
  • In the same pot, add the diced carrots, celery and onions. Stir and cook for 3 to 4 minutes over medium-low heat. Stir in the ground thyme and turmeric, then pour in the chicken broth. Stir to combine, then add the browned chicken. Cover the pot and simmer for 20 minutes.
  • For the dumplings: While the chicken is simmering, make the dough for the dumplings. Sift together the flour, cornmeal, baking powder and salt in a bowl, then add 1 1/2 cups of the half-and-half, stirring gently to combine. Set aside.
  • Remove the chicken from the pot and set aside on a plate. Use 2 forks to remove the chicken from the bones. Shred the chicken, then add it back to the pot. Mix together the remaining 1/2 cup half-and-half and flour, then add it to the pot and stir to combine.
  • Drop tablespoons of dumpling dough into the simmering pot. Add the minced parsley if using. Cover the pot and continue to simmer for 15 minutes. Check the seasoning; add salt if needed. Allow to sit for 10 minutes before serving.

1 cup boiling water
1 teaspoon salt
1/2 cup flour
2 teaspoons baking powder
1/2 cup sour milk
1/4 teaspoon baking soda
1 egg, beaten

Steps:

  • Prepare dumplings while turnip greens are cooking.
  • Slowly stir cornmeal and salt into boiling water.
  • Cook and stir for 2 minutes, remove from heat and let cool.
  • Sift together the flour and baking powder.
  • Dissolve baking soda into sour milk.
  • Alternately add flour and milk to cornmeal.
  • Then add the egg and beat the mixture for 1 minute.
  • Drop by spoonfuls on top of turnip greens. Cover and cook for about 15 to 20 minutes.
  • To serve remove dumplings with slotted spoon to a deep serving platter. Drain the greens and arrange on serving platter. Pour the pot likker over the dumplings. Enjoy.

Grandma would always make these for us when we were under the weather. She would cook a chicken in a pot with water, carrots, onions, and celery until it was done. Then she would pull all the chicken meat of the bone, and put it back into the broth (she would taste it after the meat was added and then add salt, pepper, and a little parsley). I always sat on the counter and watched her throw everything in a pan without measuring, and they were AMAZING. Finally, I asked her to write it down for me, and I'm glad I did. Posting on here so I never lose this recipe! She always rolled them out thin and used a knife to cut them into pieces. They were never the same shape, but that's how we knew when Grandma made them :) NOTE: Grandma learned how to make these from her mother, so this is the OLD school recipe for dumplings. I am writing it like she gave it to me. Scant teaspoon means a little under the measurement: not quite to the top but not 1/4 less.

Steps:

  • Mix the first 6 ingredients together until combined. Slowly add the water until you form a dough. You may have to add more or less water to form the ball.
  • Roll out the dumpling dough on a floured surface thin and cut into bite size pieces.
  • Drop them one at a time into simmering chicken/broth. She would always drop a few then wait a bit, then drop a few more. She said this kept them from sticking together in the end. After they are all added, give a gentle stir (once or twice around the pot, then leave it alone).
  • Let the dumplings simmer in the chicken/broth mixture until they float to the top (about 15 minutes or so). I have let them simmer a longer, and that's fine. She would taste the broth one last time after the dumplings were done for seasoning before we got to eat them!

2 cups all-purpose flour
½ cup shortening
1 egg
½ cup milk
1 whole chicken
2 cubes chicken bouillon
2 cups chopped celery
2 cups chopped carrots
1 small onion, chopped
salt and ground black pepper to taste

Steps:

  • Mix flour and shortening together in a bowl until it resembles cornmeal.
  • Slightly beat egg and milk together in a separate bowl. Add to flour mixture and stir to form a ball of dough. Place onto a floured surface; knead and roll as thin as possible using a floured rolling pin. Let dough stand for 2 hours.
  • Place chicken into a large pot and add water to just cover. Bring to a boil over high heat and continue to boil until chicken is no longer pink in the center and meat falls off of the bone, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).
  • Remove chicken from the pot; strain broth and return to the pot. Add 2 cups water and bouillon. Remove meat from bones and return to broth. Add celery, carrots, and onion. Bring to a boil; continue to boil for 15 minutes.
  • Meanwhile, cut dough into strips, approximately 1-inch wide. Tear strips and drop into boiling broth. Continue to boil for 10 minutes more. Season with salt and pepper and serve.

1 chicken, cut into pieces (during the holidays you can get a fresh hen)
2 quarts cold water (always put your raw chicken in cold water &ndash, you&rsquo,ll get a much richer broth)
1 tablespoon salt
1 white onion
1 carrot
1 stalk celery
1 teaspoon black pepper
1/2 cup butter
12 ounces evaporated milk
2 cups all-purpose flour, sifted
1 teaspoon salt
1/3 cup shortening
5 -7 tablespoons cold water

Steps:

  • Add the chicken to the stew pot.
  • Add salt, onion, carrot, celery, and black pepper.
  • Cover with cold water and bring to a low boil.
  • Foam will form on the water as it begins to boil.
  • Skim the foam from the water.
  • Stew chicken until tender with the salt, onion, carrot and celery ribs, about 40 - 60 minutes after liquid gets to a low boil. Cooking time depends on the size of your chicken or hen.
  • Remove the chicken from the broth and discard the vegetables.
  • While the chicken cools, make the dumplings. Mix 2 cups sifted all-purpose flour.
  • 1 teaspoon salt.
  • 1/3 cup shortening.
  • 5-7 tablespoons cold water.
  • Work the dough and roll out on a floured surface.
  • Roll out the dough very thin about ⅛".
  • Cut into 1″ wide strips and let dry for about 30 minutes.

  • Cut or pull the chicken into desired-size pieces.
  • Add pepper and butter to broth and heat to simmering. Broth should look peppery and taste great.
  • Add 1 can evaporated milk to broth.
  • Before adding your dumplings to the milk broth, add a touch of grated nutmeg to the broth.
  • Add the chicken pieces and heat. (Broth needs to be several inches above the chicken for the dumplings to have enough room to cook.).
  • Add the dumplings to the low boiling broth a few at a time to keep the broth at a boil.
  • Cook 10 minutes in the low boiling broth. (If you boil your broth too high, your dumplings will disappear or clump together.).
  • Remove from heat and let rest 10 minutes and serve.

1/2 cup onion, coarsely chopped
1 medium carrot, peeled and thinly sliced

3 cups water
1 teaspoon cornstarch
1 teaspoon dried basil
1 (10 ounce) package frozen peas

Steps:

  • Place chicken, onion, carrot, celery, salt, pepper, cloves, bay leaf, and water in a large saucepan. Heat to boiling; cover and reduce heat to simmer. Cook about 1/2 hour or until chicken is tender.
  • Remove chicken and vegetables from broth. Strain broth.
  • Skim fat from broth; measure and, if necessary, add water to make 3 cups liquid.

1/2 cup unsalted butter
1/2 cup all-purpose flour
3 (14 1/2 ounce) cans chicken broth (5 1/4 cups)
1 dash black pepper
1 dash parsley flakes or 1 dash dried chives
1 dash poultry seasoning
1 pinch nutmeg
1/4 teaspoon snipped fresh rosemary (optional)
1 1/8 cups Bisquick
1/3 cup milk
1 dash parsley flakes or 1 dash dried chives
1 dash ground black pepper
snipped fresh parsley (or dried parsley or dried chives) or chives (or dried parsley or dried chives)

Steps:

  • NOTE: IF USING SALTED BUTTER, USE TWO 14.5 OUNCE CANS CHICKEN BROTH PLUS TWO CUPS WATER. (STEP ONE): Chop deboned skinless chicken into bite-sized pieces; set aside.
  • MELT 1/2 cup (1 stick) unsalted butter in a large saucepan over medium-low heat. Add 1/2 cup all-purpose flour and cook until bubbly and light golden, stirring often for 2 minutes. Stir in the broth and seasonings. Bring mixture to boiling then reduce heat to medium. Add chunked or diced chicken; stir.
  • COMBINE the dumpling dough ingredients, stirring only until soft dough forms (do not overmix). Drop dough quickly by teaspoons in a single layer over surface of bubbling gravy on one half of large saucepan (do not roll or press dough, or submerge beneath the gravy). Simmer mixture UNCOVERED for 10 minutes.
  • GARNISH tops of dumplings with parsley or chives.
  • COVER then reduce heat to medium-low.
  • SIMMER covered for 10 additional minutes; UNCOVER and remove from heat.
  • LIFT out dumplings individually using a small slotted spoon, placing them onto a plate, leaving dumplings garnished side-up.
  • STIR chicken and gravy using a wooden spoon (gently scraping bottom of saucepan while stirring).
  • LADLE the chicken/gravy mixture into bowls, then arrange dumplings over the top.
