STATE FAIR LEMONADE
I'm very excited to be showing you how to make real, authentic, vintage lemonade--the kind you might enjoy on a hot summer day at one of those stands at the state fair. Most of us make lemonade just out of lemon juice, but as you may know, the oils in the lemon peel contain a tremendous amount of flavor, and once you drink this, you won't want to go back to drinking it how you used to.

Steps:
- Wash lemons and peel off all the zest using a vegetable peeler. Set peeled lemons aside. Add the lemon zest to a bowl and cover with sugar. Toss to combine. Cover and let sit for a minimum of 2 hours, or up to overnight.
- Bring water to a boil in a pot over high heat; turn off heat and pour in the lemon-sugar mixture. Stir and let sit until the sugar is completely dissolved, about 5 minutes.
- Pour through a mesh strainer back into the same bowl and discard the zest. Let cool to room temperature, 20 to 30 minutes.
- Cut the lemons in half and squeeze into the bowl. Pour lemonade into a serving pitcher. Wrap in plastic wrap and chill thoroughly before serving over ice, at least 2 hours.

VINTAGE LEMONADE
In the 1800's this is how people made lemonade--you can do it too! It's not that difficult, and tastes wonderful!

Steps:
- Peel the rinds from the 5 lemons and cut them into 1/2 inch slices. Set the lemons aside.
- Place the rinds in a bowl and sprinkle the sugar over them. Let this stand for about one hour, so that the sugar begins to soak up the oils from the lemons.
- Bring water to a boil in a covered saucepan and then pour the hot water over the sugared lemon rinds. Allow this mixture to cool for 20 minutes and then remove the rinds.
- Squeeze the lemons into another bowl. Pour the juice through a strainer into the sugar mixture. Stir well, pour into pitcher and pop it in the fridge! Serve with ice cubes.

OLD FASHIONED HOMEMADE LEMONADE CONCENTRATE
This recipe came from my ex-husbands great-grandmother. It is quite old and tastes great. My whole family absolutely loves it and it makes a LOT of concentrate! If you have troubles finding tartaric acid, I found it at a make your own wine store. The citric acid I find at a pharmacy.

- Juice the lemons to make 1 cup of juice. To make your labor easier, FIRMLY roll the lemons between your hand and counter top before cutting in half and juicing.

- Heat the 2 1/2 c Water and sugar till the sugar dissolves.
- Cool.
- Grate 2 Tbsp of peel from the oranges.
- Squeeze juice from the oranges and lemons.
- Add juices and peel to cool syrup; pour over mint leaves if used.
- Cover and steep for 1 hour.
- Strain into jars; cover and refrigerate.
- To serve, mix equal parts fruit syrup and water.
- Serve over ice.
- Garnish with fruit slices and mint leaves, if desired.

STRAWBERRY LEMONADE CONCENTRATE
I LOVE Strawberry Lemonade from Chili's (or any other restaurant for that matter)! This is a big problem for me because we save about $10 on our restaurant bill by only ordering waters. So I never get to have one of my most favorite drinks. In fact my mouth is watering right now thinking about it. I have tried several times to recreate the perfection that is Strawberry Lemonade on my own without success. It is a great day because I have found this recipe for Strawberry Lemonade Concentrate! It has very few ingredients and sounds super easy to make, and I'll have Strawberry Lemonade on hand anytime I want some at a fraction of the cost!

- Wash and hull strawberries, then place them into a food processor. Blend berries until smooth. Place the pureed strawberries, lemon juice, sugar and 1 1/2 quarts of water into a very large nonreactive pot. Heat over medium heat, stirring occasionally until mixture reaches 165°F. Make sure you do not boil. Skim off any foam from the top and allow concentrate to cool completely before transferring to canning jars. You may want to strain the concentrate through a strainer before putting into jars. There will be a lot of pulp and seeds.
- Before serving concentrate mix 1 part concentrate with 2 parts water, or go by taste. Concentrate can be stored in the refrigerator for about 1 week or place into the freezer for longer storage. Makes about 3 1/2 quarts.
- If you like strawberries and freshly squeezed lemons you will love this!

- Wash the lemons well and cut them into thick slices.
- Put these in a large saucepan with the water and sugar.
- Bring to a boil and let simmer for 10 minutes.
- Remove from heat and let cool.
- Keep covered in the fridge for 24 hours.
- Strain, pour into a clean jar, cover and refrigerate.
- You now have a concentrate that needs to be mixed with water: one part concentrate to three parts water.
- Serve with lots of ice.
