BACON CHEDDAR CHEESE BALL
Bacon cheddar cheese ball is an easy to make appetizer and delicious showstopper at holiday parties or game day. It's creamy, cheesy, and nutty.

- In a large mixing bowl, combine cream cheese, sour cream, garlic powder, and black pepper with a hand mixer until smooth and well combined. Stir in half of the cheddar cheese, green onions, bacon, and pecans. Set the other half aside on a plate. Mix with a spatula until evenly distributed.
- Add the cheese mixture onto a clean cutting board and use your hands to shape it into a ball. To prevent the cheese from sticking too much, apply some oil to your hands or wear disposable gloves.
- Cover the cheese ball with plastic cling wrap and refrigerate for at least 30 minutes, allowing it to firm up a bit if needed. I placed the cheese ball wrapped in plastic wrap in the freezer for 15 minutes to save time.
- In a medium bowl, whisk together the remaining half of the cheddar cheese, green onion, bacon, pecans and poppy seeds until evenly mixed. Roll the chilled cheese ball in the mixture until all sides are coated. Gently press it into the cheese ball to stick if needed.
- Serve immediately with crackers or store (wrapped in plastic wrap) in the refrigerator for up to a week.

Steps:
- Mix all items together except the additional 1 cup of cheddar cheese that you will use to roll the ball inches.
- With a spoon pull mixture toward middle of the bowl and try to form a ball.
- Then cover and place in refrigerator until chilled and firm.
- After it has chilled, it will be easier to work with.
- Roll the cheese mixture into a ball and roll in additional cup of grated cheddar cheese.
- Roll until all sides are coated and press the cheese into the ball.

Steps:
- Take 2 packages of cream cheese (softened) and mix till slightly whipped.
- Add packet of ranch dressing and mix till incorporated.
- Fold in 1 cup shredded cheese.
- Pour bacon bits in a plate or pie tin.
- Form cream cheese mixture into a ball with your hands.
- Roll ball in bacon bits till covered. Wrap cheese ball in plastic wrap and place in the fridge.
- When cheese ball feels firm, remove and serve with crackers.
OLD SCHOOL CHEESE BALL
Gotta love this recipe. . .totally from a past generation, but not forgotten. I make this frequently and got the recipe from a co-worker named Karen about 8 years ago. Simple, yet a crowd-pleaser; the kids will even eat it! I have frozen this cheese ball with great results, so feel free to make 1 for now and 1 for later - just don't roll it in nuts until it has been thawed out.

Steps:
- Let all three cheeses get to room temperature.
- With a blender, mix together all ingredients EXCEPT the nuts.
- Shape into 1 or 2 balls (I always do 2 so that there are more nuts to go around).
- Roll each cheese ball in nuts, place on a piece of waxed paper and put in the fridge to set up.
- Serve with buttery crackers on the side.
