1 (11 1/2 ounce) package flour tortillas, burrito size
2 cups Mexican blend cheese, finely shredded
2 cups chicken, cooked and finely chopped
1 (4 1/2 ounce) can green chilies, chopped
2 tablespoons butter, melted
1 cup salsa, Old El Paso

Steps:

Top one half of each tortilla with cheese, chicken and green chilies. Fold other half over filling; press down with back of pancake turner. Lightly brush melted butter on both sides of each filled tortilla.
Heat 12-inch nonstick skillet over medium heat. Cook 2 filled tortillas at a time 3 to 4 minutes, turning once, until golden brown and hot. Cut into wedges. Serve with salsa.

3 boneless skinless chicken breasts, cut into small pieces (½ inch)
Old El Pasoᵀᴹ Quesadilla Seasoning Mix
Old El Pasoᵀᴹ Large Flour Tortillas
1 tbsp (15 mL) vegetable oil
½ cup (125 mL) water
2 cups (500 mL) shredded cheese (any blend)

Steps:

In a large, non-stick skillet, heat oil over med-high heat until hot. Add chicken and stir-fry 5 to 6 minutes until thoroughly cooked.
Stir in seasoning mix and ½ cup water. Bring to boil; cook and stir 2 to 3 minutes longer until thickened.
Transfer to medium bowl, cool slightly and stir in cheese.
Spoon some chicken mixture onto one half of each flour tortilla and fold other half over to cover.
Heat clean, ungreased, non-stick skillet or bbq grill. Cook or grill filled tortillas about 2 minutes on each side until golden and crispy.
Serve with sour cream and salsa, if desired. Refrigerate leftovers.

8 flour tortillas from 1 package (10 count) Old El Paso™ Flour Tortillas for Soft tacos and Fajitas
Cooking spray
1 cup Old El Paso™ fat-free refried beans (from 16-oz can)
1/2 cup diced bell pepper, any color
1 small tomato, seeded, diced
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 1/2 cups shredded taco-seasoned cheese blend (6 oz)
4 tablespoons sour cream, if desired

Steps:

Heat gas or charcoal grill. Lightly spray one side of each tortilla with cooking spray. On unsprayed side of each of 4 tortillas, spread 1/4 cup beans. Sprinkle each evenly with 1/4 of the bell pepper, tomato, green chiles and cheese. Top each with remaining tortilla, sprayed side up; press down firmly.
Place quesadillas on grill. Cover grill; cook over medium heat 6 to 8 minutes, turning once, until cheese is melted.
To serve, cut each quesadilla into quarters. Serve with sour cream.
