4 large flour tortillas
3 c. shredded Monterey Jack, divided
2 c. chopped spinach
2 tbsp. butter
1 tsp. Old Bay seasoning
1 1/2 lb. medium shrimp, cleaned, deveined, and tails removed
1 c. guacamole
1 medium tomato, chopped
1/4 c. Chopped cilantro
cayenne pepper

Steps:

  • Preheat oven to 400° and prepare two rimmed sheet pans with parchment paper. Place two tortillas on each sheet pan. In a medium bowl, combine 2 cups Monterey Jack and spinach, then set aside.
  • In a large skillet over medium-high heat, melt butter. When butter begins to bubble, stir in Old Bay and toss with shrimp. Sauté until shrimp are cooked through and pink.
  • Add handful of cheese-spinach mixture to half of each tortilla. Divide shrimp evenly and place in a single layer over mixture. Top with remaining cheese-spinach mixture and fold tortilla over. Sprinkle remaining cheese on top of each quesadilla. Bake until melted, about 10 minutes.
  • Top each quesadilla with guacamole, tomato, cilantro, and a dash of cayenne pepper. Serve immediately.

1/2 cup cider vinegar or beer
1/2 cup water
2 tbsps old bay seasoning
1 pound large shrimp peeled and deveined leaving tails on
1 cup old bay cocktail sauce

Steps:

  • In a medium saucepan mix vinegar water and OLD BAY. Bring to boil on medium heat. Gently stir in shrimp then cover.Steam 2 to 3 minutes or just until shrimp turn pink. Drain well.Serve immediately or refrigerate until hungry guests arrive. Best served with punchy cocktail sauce and lively conversation.

1 cup Mexican red sauce
12 large shrimp, peeled and deveined
2 tablespoons olive oil
1 large onion, chopped into chunks
1 green bell pepper, chopped into chunks
1 red bell pepper, chopped into chunks
Butter, for cooking tortillas
6 flour tortillas
2 cups grated cheese (Monterey Jack is best)
Sour cream, for serving
Fresh cilantro leaves, for serving
Lime wedges, for serving

Steps:

  • On a large plate, pour the red sauce over the shrimp and set aside.
  • Heat a skillet over high heat and add the olive oil. Cook the onions and bell peppers over high heat until they start to get nicely browned. Remove from the skillet and set aside.
  • Add the shrimp with the sauce. Cook, stirring only occasionally, until the shrimp are opaque. Add in a little water if the sauce gets dry. Remove from the skillet and chop the shrimp into bite-size pieces.
  • In a clean skillet, heat some butter. Place a tortilla in the skillet, then layer on the ingredients: cheese, vegetables and shrimp. Top with a little more cheese and a second tortilla. Cook on both sides, adding butter before flipping to the other side so the tortilla isn't overly dry. Remove from the skillet and slice into wedges. Repeat with the rest of the tortillas and filling ingredients.
  • Serve with sour cream, cilantro and lime wedges

  • Start with a teaspoon of olive oil or butter in a nonstick pan over medium heat. Saute the pepper and onions until they start to turn translucent. Salt, pepper and add a sprinkle of the taco seasoning.
  • Add the shrimp to the pan and cook for about 2 minutes until the shrimp start to turn opaque. Sprinkle with the rest of the taco seasoning, salt and pepper. Do not overcook the shrimp. They will continue to cook when the quesadilla is coming together. Sqeeze some lime on top.
